Corn Tortillas Dusted W/ Wheat Flour?

Wouldn't you think that the "authentic" Mexical restaurant would have 100% corn tortillas?? We went to our fav Mexican place last night that's recently been bought up by another owner... and I (LUCKILY) asked the server to please check that the tortillas served w/ the salsa were indeed corn. He came back and told me that they were now using corn tortillas that are dusted w/ wheat flour!

I ate the cheese and chorizo appetizer w/ no chips or tortillas. Too bad... I really liked that place. Maybe I'll ask them if I can bring a few of my own corn tortillas.

Often places that make thier own tortillas will make the corn ones on the same table area as the flour ones, which leaves them covered in flour. They could also dust them to prevent them from sticking.

That's why I worry about corn tortillas from the stores. I"m sure they're made in the same facility that makes the flour tortillas.....right??

Do you make your own? They're so good homemade, but tortillas are one of my grab-it-when-there's-no-time-to-cook staples... now I'm wondering...

Nope! I've never made them from scratch. How hard is it?? You buy masa??

Alton Brown on the Food Network recently made homemade corn tortias. Very interesting show.

I do not have the time to make chips or tortias. I just buy the Mission brand, they are marked gluten-free and produced on corn lines only (I don't even think they use flour in the factory, but I am not sure).

      I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

      I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

      It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.

      Hi Colleen H,   I suffered with the pins and needles/burning feeling in my legs and feet for at least  6 years until my Nephrologist figured out that I had to go on a low salt diet.  He said my kidneys weren't strong enough to remove the salt.  The simple fix was a diuretic, but that med leaves the uric acid behind, so that wasn't an option.  On the bright side the low salt diet lowered my BP over 20 points and and the pins and needles/burning feeling went away.  Good Luck and hope this helps.
