Gluten-free bread does work well with things that need to absorb liquids--bread pudding, stuffing, etc. Yer brekkie sounds good. :)

Heeeeloooooo! Twas lost in a kitchen of sugar yesterday! You can smell my house from outside with the garage door shut!

Saw DH in the lobby of our dorms the 2nd day after I had arrived at college. Hadn't met him yet, but just knew he was the one. That night he told my friends that he was going to marry me (was totally wasted out of his mind :rolleyes: ) and called me the next day to ask if he had actually said it :lol: I was still dating the creep from a few pages ago, so I swiftly ended that-thank God-and the rest is history :D

My ex is almost 10 years younger than I am.....and didn't appear to be interested in learning any skills. This whole thing is quite the adventure for me. BE will start a sentence with "how often do you like..." and I'll answer "Dude! I'm used to 10 minutes twice a month. You're gonna have to help me figure out 'how often'". He seems to think that's a fine idea. :P

Brekky was all on my oddy knocky. BE ditched me last night. He couldn't get his home phone to forward to his Blackberry, and his mom gets too flustered to be able to call his cell when he doesn't answer the home phone. He did invite me back to his place, but I had this fabulous strata in the frig and I wasn't going to let that go to waste. :P

Love the 'first met' stories. :)

For us it depends on how long it's been between. I'm also 11 years older (it was called robbing the cradle when I met him but I guess I'm a cougar now) and have some female issues that can cause me pain. Just want to keep Clark satisfied as it's the least he deserves. We've been together for 22 years. I've had a lot of years of being satisfied so although the journey is still sweet the "rectification" can be painful for me and I'll never let him know that. Use cream, etc.

Glad to know TMI isn't an issue here. Could it also be related to Celiac? I do have a pfunny story about one time when it was impossible to get in .... we did giggle a lot. Perhaps I'm regressing and becoming a virgin again (although I sure don't look like Madonna)!

Can I have the recipe for the strata, please? I'm going dairy free at this point as I try to find my food allergies. I have two friends coming to visit from NJ next week during NEA conference (YAY). I have some meals planned to cook for them. Not sure I can eat them.

In a 9 x13 pan:

butter (I used olive oil) the bottom

put one layer of gluten-free bread (cheap, white. old bread would work well)

spread about a cup of ham, cup of mushrooms, cup of chopped peppers (more or less depending on how much you like these things) Green onions would be good too.

add a layer of cheese, I used Open Original Shared Link It was OK, not great.

add a second layer of everything.

Mix 3 cups of hemp milk with 9 eggs (go a little light on the milk if you have lots of veggies) Add a bit of salt, pepper, garlic to this mix.

Pour over your bread layers. It shouldn't cover the top.

Cover and put in the frig overnight, or up to 48 hours.

Bake 30 minutes covered at 350, then 20 minutes or so uncovered. Let it sit a few minutes before cutting.

The fake cheese didn't melt so it might work better to finish with buttered bread and have a crunchy top instead of a melty top.

The WTF was in reply to the story about the crazy women your dad (or celiac-momma's dad was bringing home).

As for BE- it most definitely sounds like a relationship. You seem to have hit it off immediately AND also have chemistry going on. I knew Klark was "the one" after the second night. Same thing with my deceased first hubby. And a man who cooks for you and has a sister with celiac, too - how lucky can you get. Klark has a lot of super powers but cooking isn't one of them (except for making awesome spanish tortillas). Did you have them in Spain or the empanadas? Sorry - I tend to tangent trip. I also followed the entire story of BE so I read about your trip to Spain and related to it because I was there twice.

Back to BE - it's normal to have insecurities after not dating for a long time and losing a lot of weight. He sounds sincere. Life is about taking chances (said wisely to me before I gave my email out to someone on the forum and now I have a new friend in my new state biggrin.gif ).

He's probably as confused as you are. Klark broke up with me one time (a year into our relationship). He was living an hour away from me. He told me in the morning before he left for work (sweetly but it knocked me for loop) and I had everything I kept in his apartment packed up before he came home. He got really upset and it turned out it was his job that was upsetting him not our relationship. We've been going strong for 22 years since (married 19 years).

BE is lucky to have someone as special as you and I think that he knows it. Embrace it and enjoy every last minute. God knows with this disease we need all the joy we can get!!! And at the very least you got on the horse again!!!!!

Thanks for the quick reply. I'll make it for hubby and guests. Too many things I'm not trying yet (wahhhh). Luckily I love jasmine ice omelets and they agree with me. Also tolerating salads and a few other things. Still trying to stay away from anything that can make the pain from the ulcer worse (2 weeks until biopsy).

I'm a mess!!! The bruise is starting to fade. Still have a major shiner and the stick figure zombie is kind of cute. Thinking of naming him. Any suggestions for a psilly name wood be appreciated.

I don't know his past history with everyone, but so far he seems like an easy pet. Had to set down a few rules:

Don't eat the dog or the neighbors dog

Wipe the mud off those big feet on the rug at the door

No one eats the gluten-free cookies or pretzels without written approval

Shower everyday and use shampoo ( will need to get more for the boys shower)

No friends over if no adult is home

Ka-reighn...you might want to add 'conditioner' to the use of shampoo.

      Hi Katht -  I sympathize with your struggles in following a gluten-free diet and lifestyle. I found out that I had Celiac Disease a few months before I turned 70. I just turned 89 and it has taken me almost 20 years to attain a fairly normal intestinal  function. I also lost a lot of weight, down to 100 lb. down from about 140 lb. What Trents wrote you was very true for me. I am still elimination foods from my diet. One person suggested you keep a food diary and that is a good idea but it is probably best just to do an elimination diet. There are several ne and maybe one for celiacs. I used one for a while and started with plain rice and zucchini and then added back other foods to see if I reacted or not. That helped a great deal but what I did not realise that it would only very small amounts of some foods to cause inflammation in my intestine. Within the last few years I have stopped eating any trace amounts of hot peppers, corn and soy(mostly in supplements) and nuts, (the corn in Tylenol was giving me stomach aches and the nuts were causing foot pains). Starting an elimination diet with white rice is better than brown rice that has some natural toxins. In addition it is very important to drink sufficient plain water. You can find out how much to drink for your height and weight online. I do have difficulty drinking 48 ounces of water but just recently have found an electrolyte supplement that helps me stay well hydrated, Adding the water and electrolytes may reduce muscle cramps and gag spams you wrote about. . Also buy some anti-gluten enzyme capsules to take with meals. I use GliadinX advertised here. These are a lot of things to do at one time as they reflect my 20 years of experience. I hope you do what you can manage to do over time. Good luck and take care.

      Hi Colleen Are you supplementing B12/having injections? I have learned recently that sometimes when you start addressing a B12 deficiency, it can temporarily make your symptoms worse.  But it is important not to stop the treatment.  Regarding your problems with anxiety, again that is another symptom of a B12 deficiency.   I didn't know what anxiety was until it hit me like a train several months before gastrointestinal issues began, so I can certainly relate.   Two books which helped me hugely were At Last A Life by Paul David (there is a website you can look up) and The Depression Cure: The Six-Step Programme to Beat Depression Without Drugs by Dr Steve Llardi.  Although his book is aimed at people who have depression, following the principals he sets out was so helpful in lessening my anxiety.  Llardi suggests we need to focus on getting enough: - physical exercise - omega-3 fatty acids - natural sunlight exposure - restorative sleep - social connectedness - meaningful, engaging activity   ... and we should feel a lot better. That is not to stay you must stop taking medication for depression or anxiety if you have been prescribed it, but adopting the changes Dr Llardi sets out in the book should really help. Can I just ask two more questions:  1) you say that you are B12 deficient, did they test your iron levels too?  If not, you really ought to be checked for deficiency and, 2) did they check your thyroid function, as an overactive thyroid can be cause rapid heartbeat and a lot of coeliacs have thyroid issues?       Hello still dancing around my celiac disease and not getting medically backed up considering Ive been glutenfree since 1994.All my ailments are the core issue of my ghost disease aka celiac disease. Im angery because the "celiac specialist " basically lightly dismissed me.Im extremely angery and fighting for a new primary care physician which is hard to do in Northern Cali.So currently without and looking.Im angery that its lightly taken when its extremely serious to the one who has it.My only evidence is a brochure back in the days when I got news letters when I lived at my parents.It was published in 1998.I was diagnosed before any foods eliminated from my diet. Angery doctors don't take seriously when Im clearly speaking.I did write to the medicine of congress and have case number.
