i remember seeing it on here, but i couldn't find it when i searched for it. does anyone have a good stuffing recipe? it doesn't have to be the cornbread one. i'd like to try it out before thanksgiving that way my family doesn't think all of my glutenfree food is different/not good.

thanks!

mine is pretty simple and can be modified for whatever type of bread (white bread or corn bread) you like.

Make a loaf of bread that you want to use (I did corn bread last year and it was heavenly). Bake it, let it cool. Slice it. Then cube it. Lay it out on a sheet to dry up. You can put it in the oven on low for awhile to speed up the process.

I saute a large amount of onions and celery (which are both chopped up) in a lot of butter. Once they are relatively soft, pour it over the corn bread mixture, and mix up (so the bread gets kind of wet from the butter). Cook either in the turkey or in a casserole dish (however you prefer).

I served it to my husband's whole gluten eating family last year at our house---and they LOVED it. It was delish. But there are many, many good recipes that other members have.

There is also a recipe for corn bread stuffing on the Wild Oats website somewhere.

here's my granny's cornbread stuffing recipe, modified to make it gluten-free... granny LOVED it last Thanksgiving when I made it for her!

Southern Corn Bread Stuffing 101

bake a pan of corn bread (or two)

crumble up corn bread

a cup or so of gluten-free crumbs (I use the Lunndberg rice Chip crumbs that I save in the freezer & put them in the blender) This just lightens up the dressing a bit, you could just add a little cooked rice instead...

add diced celery (1/2 the stalk for one pan of cornbread the whole thing for two pans)

1 bunch diced green onions

1 yellow onion diced

mix all up,

add about a cup or two of chicken stock (to moisten but not make soupy)

add one or two raw eggs, beaten

2 teaspoons of sage or to taste (I go by smell)

2 teaspoons or so of poultry seasoning

salt to taste if there was none in the broth

pour all in a greased oblong baking pan, bake at 350 degrees till edges start to brown a bit.

serve with chicken, or ham or turkey, heck it is good with anything, add gravy and or cranberry sauce on the side.

For those of you still putting stuffing in the turkey, they say it is really not a safe way to cook the stuffing or the turkey... You should just stick an onion, carrot, bouquet garni, etc in the bird for flavor then discard it when the turkey is cooked.

My "recipe" is similar to Laura J's, but I use 1 loaf of Ener-G Brown Rice Loaf and 1 batch of homemade cornbread. I cube and dry all the bread (I always make a 22-24 lb turkey, so we use a lot of stuffing). When I'm ready to make the stuffing I simply add chopped onion, chopped apple and raisins, salt, pepper, poultry seasoning, some olive oil and chicken broth - just to make the cubes slightly moist. Then I stuff the turkey. Any that won't fit into the turkey I add more broth to and bake it in a covered casserole for 30-40 minutes.

The apples and raisins might sound strange, but they're really good.

This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers. Apparently, the results were good enough that the company is applying for fast track approval.  Anokion Announces Positive Symptom Data from its Phase 2 Trial Evaluating KAN-101 for the Treatment of Celiac Disease https://www.reddit.com/r/Celiac/comments/1krx2wh/kan_101_trial_put_on_hold/

BTW, we've done other articles on this topic that I wanted to share here (not to condone smoking!):

Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
