Just got home from a trip to Portland, visiting the fam. Anyway, mom and I went to our favorite restaurant, Newport Bay, and had the above mentioned plate. I absolutely love it! But I don't get out to OR much, and I wanted to recreate the recipe. Anyone ever tried this? The butter is very mild...can't really taste the honey (which is good, cuz I don't much like the flavor)...wanted t know how to put it together.

Here is what the menu says:

HAZELNUT HALIBUT with HONEY-GINGER BUTTER

Crusted with sliced hazelnuts, then flattop grilled and basted

with honey-ginger butter.

How do I make this into a recipe? Any help would be greatly appreciated!

Halibut is not big here in the mid coast east. I could easily see this converted to salmon, trout, flounder.

Give this a try:

Put Halibut into a foil lined broiler pan. Baste with Honey Ginger butter (Powdered ginger or grind your own and blend with softened butter)

Broil for a short time (?) turn carefully, broil other side.

The last minue of broiling time, place hazelnuts on top of fish and baste with honey ginger butter and continue.

Server over hot rice, garnish with chive sprigs.

(Not grilled, but I think broiling would work better)

You'll probably need something to glue the nuts to the fish. I'd look for nut crusted fish recipes on Google and see how it is done. Improvise! I'm sure whatever you get will be delicious.

I had a macadamia, banana chillean sea bass that was sensational. :)

Yes, I would bet that they used egg to adhere the crust.

How about, taking the halibut, dipping it in lightly beaten egg seasoned with salt and pepper, and then crushed hazelnuts. Saute in half butter and half olive oil until nicely browned on both sides.

Remove from the pan and make the sauce right there in the same pan--butter, honey, a little ginger, maybe a touch of white wine or vegetable broth. Whisk till combined and bubbly. Pour over fish.

Could work...

OMG I have frozen halibut and am going to make this THIS WEEK. maybe almonds instead of hazelnuts, though. sounds great, Donna! :)

What would you use instead of eggs ? Flax meal and water ? Will it stick ? Or could you just roll it in honey ?

And how much honey and ginger would you use ? I've never cooked with either. :)

When I looked up nut crusted fish they suggested using coconut milk to dip the fish in.

thanks patti! i'll give it a try! oooh, coconut milk would be good too, i'm sure. i would only use a very little bit of honey and ginger...the flavor was very faint. both can be overwhelming if overused. i'm excited to try it out myself!

      Hello, no I had to have them re done and then used a liner over the top.  Many dentists are not aware of the celiac effects.  Best of luck.   There is other material, yet, very expensive.

      He is not just a psychiatrist.  He is also a neuroscientist.  And yes, I have already read those studies.   I agree with benfotiamine.  This is short term while glutened/inflammation occurs.  As I had already mentioned, these symptoms no longer exist when this phase passes.  And yes, I know that celiac is a disease of malnutrition.  We are working with a naturopath.
