I have looked for gluten-free and Y/F bread baking tips without success. Is there a thread dealing with yeast free gluten-free bread? I'm tired of baking door stops. :angry:

I *highly* recommend Breads by Anna's gluten/yeast-free bread mix. (It's also free of dairy, soy, and several other major allergens.) You can order it from www.glutenevolution.com.

Well, I have found both soy and nut butters to be very helpful in obtaining a lighter texture. The ratio will depend on the other flours you use, and the results you want. There's apparently a difference in texture between guar gum and xanthan gum, but I've only used guar. You may find one preferable over the other. Egg or egg replacer helps noticeably too.

Any tricks for baking this? I've tried this bread twice and I'm still getting door stops. The first time I used almond milk & ground flax seed; the second, rice milk & egg replacer. (I can't eat egg.) What do you use?

Perhaps I'm not mixing it up properly? Or do I need to adjust the baking temperature or time?

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
