The Best Double-chocolate Cookies You Will Ever Have

I just made AMAZING cookies... guaranteed to satisfy any chocolate craving (trust me, I know chocolate cravings :P ) I also made them dairy free.

1 cup cocoa powder

1/3 cup canola oil

1/2 cup margarine

1/2 cup baking mix (or flour w/ xanthan gum, I used Arrowhead Mills baking mix)

1/4 tsp baking powder (1/8 if using baking mix that already has it)

3/4 cup brown sugar, packed

2 eggs

1 tsp vanilla

5 oz baking chocoate, coarsely chopped

Mix cocoa powder, Canola oil, sugar, eggs, margarine, and vanilla (I just did this with a wooden spoon, no mixer). Add baking mix/flour and baking powder. Stir in chocolate chunks. Bake for 10-12 minutes in a 350 degree oven.

Seriously, these are AMAZING. guaranteed to please anyone, celiac or otherwise. I adapted the recipe from the back of the baking chocolate box.

just an update...my VERY PICKY celiac (most likely, is getting started on diet) approves of these :D and she hasn't liked any of my other baking lol

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing
