I have now been Gluten Free for one year, officially. It feels like forever and a day. It's gotten a lot more natural but it is still odd to consider that this is a life long committment. This is my post of success, I survived!

Yes, congrats! I'm exactly one month away from my 1 year anniversary--not feeling great in terms of health, but I feel like an expert on the diet, etc. :D

It does feel like a lot longer when 1 year comes around. You've done it this long and now you know you'll make it the rest of your life!

I'm sorry to see that you aren't feeling well yet. I met a man

through a family friend who said that it took him 3years

to heal, he is a lot older than you. Just a thought, have you

given up dairy? Thats what I had to do and I know others

have.

Thanks--no, haven't tried that because the tests said that I didn't have any intolerances/allergies with milk products/dairy/casein/lactose, etc.

Yes--the first year does seem to take forever. It's hard to believe that only a year ago I was eating wheat-filled bagels every morning, pizzas, pastas, etc.

Congrats, it should get a lot easier to be able to resist a lot of things now that you are on your first year but things are still hard to resist. I had a doughnut just yesterday :( and I have been on this diet for 4 years. But it does get a lot easier.

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
