I have come to the reality that I can no longer handel dairy except yogurt. I see that there are a lot of other people on here that also can no longer to dairy I would be so greatful for you help in subs for like cheese, sour cream, cream cheese and so forth. I drink rice milk so that is not a problem for me but what can I use when I want tacos, pizza and things like that.

Have you ever tried Tofutti's "Better than Cream Cheese" or their sour cream? They're made of soy and I find them pretty tasty.

Pizza without cheese is surprisingly good. I've also seen gluten-free/dairy-free pizzas with soy cheese, but I haven't quite worked up the courage to try a $10 pizza that I'm not sure I'm going to like (!). I don't think you would miss the cheese on tacos if you use Toffuti sour cream. I love dairy, but since I've been off it I've come to realize that most Americans use a LOT more cheese than is really necessary. A lot of times you can leave it off or just add a little more salt and you get the same taste.

I like almond and soy milk better than rice milk :P They're more creamy.

If you can tolerate goat cheese, you can use that. But it has a much stronger taste, so you can't always substitute it and expect it to be the same. You can find goat cheddar, brie, monterey jack style, and crumbles. The crumbles are great on a salad, and the other night we used goat cheese in our pasta. We crumbled it into the sauce and let it melt. It was great!

Soy cream (instead of ice cream) is pretty good. So Delicious has some great flavors, and the soy sour cream is pretty good, too.

For butter (specifically baking) I have tried smart balance, and that has seemed to work really well. I made some cookies tonight and they were fantastic.

I like rice milk, too. Almond milk is good, but I don't like to put it on cereal b/c of it's thickness. And I just don't care for soy milk at all.

You can make bbq chicken pizza and you don't need cheese.

I put cooked and mashed (with a fork) sweet potatoes in enchiladas and didn't use cheese, they were great.

I am making lasagna this week with mashed potatoes.

Actually to find an alternative to cheese could be healthier anyway.

We just tried "Follow Your Heart" cheese, its very pretty on top and you can use it sparingly.

I read recently that a someone pours a beaten egg on top of her pizza to "hold" on the toppings and her family loved it. Try it with breakfast toppings the first time.

Shredded hashbrowns "look" like cheese on pizza.

You can also find recipes for chocolate pudding using tofu and melted choc. chips. Sounds strange but tastes good! Enjoylife make gluten-free dairy-free choc. chips.

I had to try the choc pudding recipe above for my dd.

Here is about what I did:

4 oz. firm tofu

1 T. coconut milk (needed to use it up)

1/2 tsp. vanilla extract

1/4 cup baking cocoa

2 T. agave necter (could use a bit more) (I stirred in the 3rd T. after it chilled and it was just right)

1/4 cup or so rice milk adding 1 T. at a time

Blend well in the blender

It looks like regular choc pudding, dd dosen't like dark choc.

Tastes very creamy and good.

I will make it again

Thank you so so much you have all been so helpful. I can't wait to try some of these suggestions and the pudding sound wonderful.

My tummy is still so bloated from the steriods and other meds and probably the little bit of nachos I had the day after I got home from the hosptial so I will have to wait until it goes down Who know when that will be I feel pregers. ick. (anybody know any tricks to get the bloating to go away got a pin I can pop my tummy with haha).

IMHO substituting just makes quitting it harder. I instead opted to go for a more Asian style of diet that doesn't include dairy at all. Good food too!

If you can handle yoghurt, I don't really understand why you couldn't handle cheese? Is it too fatty or something? If it's a lactose issue, cheese actually has even less lactose than yoghurt generally. If it's a casein issue, you shouldn't have yoghurt either.

I can't explain it either maybe someone else on here can all I know is that I can handle yogurt but not cheese. I wish cheese didn't give me a problem but it does. Our bodies are so complicated. If there is one thing I have learned through having Celiac and MS no matter what the doctors might say I will listen to my body it knows what is best for it and what it doesn't like.

Ok, fair enough!

I'm completely dairy free, I use coconut milk for a lot of things, especially for baking, and for the rest I just cook food that doesn't require dairy. Can't really help with substitutes. :(

Oh, for a creamy salad dressing or taco filling I sometimes do avocados mixed with whatever, variations on guacamole sort of.

      I am doing a gluten challenge right now and I bought vital wheat gluten so I can know exactly how much gluten I am getting. One tablespoon is 7g so 1½ tablespoons of Vital Wheat Gluten per day will get you to 10g You could add it to bean burgers as a binder or add to hot chocolate or apple sauce and stir.

      Raising you vitamin D will increase absorption of calcium automatically without supplementation of calcium.  A high PTH can be caused by low D causing poor calcium absorption; not insuffient calcium intake.  With low D your body is not absorbing calcium from your food so it steals it from your bones.  Heart has priority over bone. I've been taking 10,000 IU D3 a day since 2015.  My doctor says to continue. To fix my lactose intolerance, lots of lactobacillus from yogurts, and brine fermented pickles and saurkraut and olives.  We lose much of our ability to make lactase endogenosly with maturity but a healthy colony of lactobacillus in our gut excretes lactase in exchange for room and board. The milk protein in grass fed milk does not bother me. It tastes like the milk I grew up on.  If I drink commercial milk I get heartburn at night. Some experts estimate that 90% of us do not eat Adequite Intake of choline.  Beef and eggs are the principle source. Iodine deficiency is a growing concern.  I take 600 mcg a day of Liquid Iodine.  It and NAC have accelerated my healing all over.  Virtually blind in my right eye after starting antihypertensive medication and vision is slowly coming back.  I had to cut out starches because they drove my glucose up into the 200+ range.  I replaced them with Red Bull for the glucose intake with the vitamins, minerals and Taurine needed to process through the mitochodria Krebs Cycle to create ATP.  Went from A1c 13 down to 7.9.  Work in progress. Also take B1,B2,B3,B5,B6. Liquid Iodine, Phosphatidyl Choline, Q10, Selenium, D and DHEA.     Choline supplemented as phosphatidylcholine decreases fasting and postmethionine-loading plasma homocysteine concentrations in healthy men +

      @catnapt, Wheat germ has very little gluten in it.  Gluten is  the carbohydrate storage protein, what the flour is made from, the fluffy part.  Just like with beans, there's the baby plant that will germinate  ("germ"-inate) if sprouted, and the bean part is the carbohydrate storage protein.   Wheat germ is the baby plant inside a kernel of wheat, and bran is the protective covering of the kernel.   Little to no gluten there.   Large amounts of lectins are in wheat germ and can cause digestive upsets, but not enough Gluten to provoke antibody production in the small intestines. Luckily you still have time to do a proper gluten challenge (10 grams of gluten per day for a minimum of two weeks) before your next appointment when you can be retested.

      Hello, @asaT, I'm curious to know whether you are taking other B vitamins like Thiamine B1 and Niacin B3.  Malabsorption in Celiac disease affects all the water soluble B vitamins and Vitamin C.  Thiamine and Niacin are required to produce energy for all the homocysteine lowering reactions provided by Folate, Cobalamine and Pyridoxine.   Weight gain with a voracious appetite is something I experienced while malnourished.  It's symptomatic of Thiamine B1 deficiency.   Conversely, some people with thiamine deficiency lose their appetite altogether, and suffer from anorexia.  At different periods on my lifelong journey, I suffered this, too.   When the body doesn't have sufficient thiamine to turn food, especially carbohydrates, into energy (for growth and repair), the body rations what little thiamine it has available, and turns the carbs into fat, and stores it mostly in the abdomen.  Consuming a high carbohydrate diet requires additional thiamine to process the carbs into energy.  Simple carbohydrates (sugar, white rice, etc.) don't contain thiamine, so the body easily depletes its stores of Thiamine processing the carbs into fat.  The digestive system communicates with the brain to keep eating in order to consume more thiamine and other nutrients it's not absorbing.   One can have a subclinical thiamine insufficiency for years.  A twenty percent increase in dietary thiamine causes an eighty percent increase in brain function, so the symptoms can wax and wane mysteriously.  Symptoms of Thiamine insufficiency include stunted growth, chronic fatigue, and Gastrointestinal Beriberi (diarrhea, abdominal pain), heart attack, Alzheimer's, stroke, and cancer.   Thiamine improves bone turnover.  Thiamine insufficiency can also affect the thyroid.  The thyroid is important in bone metabolism.  The thyroid also influences hormones, like estrogen and progesterone, and menopause.  Vitamin D, at optimal levels, can act as a hormone and can influence the thyroid, as well as being important to bone health, and regulating the immune system.  Vitamin A is important to bone health, too, and is necessary for intestinal health, as well.   I don't do dairy because I react to Casein, the protein in dairy that resembles gluten and causes a reaction the same as if I'd been exposed to gluten, including high tTg IgA.  I found adding mineral water containing calcium and other minerals helpful in increasing my calcium intake.   Malabsorption of Celiac affects all the vitamins and minerals.  I do hope you'll talk to your doctor and dietician about supplementing all eight B vitamins and the four fat soluble vitamins because they all work together interconnectedly.

      Hi Jane: You may want to try the D3 I now take. I have reactions to fillers and many additives. Sports Research, it is based in the USA and I have had no bad reactions with this brand. The D3 does have coconut oil but it is non GMO, it is Gluten free, Soy free, Soybean free and Safflower oil free.  I have a cupboard full of supplements that did not agree with me -  I just keep trying and have finally settled on Sports Research. I take NAKA Women's Multi full spectrum, and have not felt sick after taking 2 capsules per day -  it is a Canadian company. I buy both from Amazon. I wish you well in your searching, I know how discouraging it all is. Florence.
