This one met with daughter's approval. No chunks of anything in it and no celery. I did however make about twice what I needed. I suppose I could have frozen half of it. That didn't cross my mind until just now. Oops! And the amounts are approximate. I didn't actually measure anything.

Start with 2 cups of vegetable broth and 1/2 cup plain rice milk. Bring to a boil. Meanwhile mix about 1 cup of plain rice milk and 3/4 cup flour (I used Bette Hagman's 4 flour bean mix) with a whisk to make a thick paste. Then grind some dried mushrooms. I used my Magic Bullet and filled up the container twice. Grind to a powder. When I was done I had about 1/2 a quart. I used those mixed mushrooms from Costco.

When the broth has come to a boil, add the paste and whisk until smooth and thick. To this I added about 2 T. chopped dried onions, 1 T. chopped dried parsley, salt and pepper and the mushrooms. The resulting mix was VERY thick so I added the more rice milk to thin it down. About another cup. I also added about 1 T. of light olive oil for richness.

The end result was probably the equivalent of 3-4 cans of cream of mushroom soup.

Daughter loved the casserole so much she ate too much of it. We have enough left for tomorrow night's dinner. Which is a good thing because I was stressing over what to fix. Tomorrow would normally be another crockpot day and the family is getting sick of the two crockpot meals I keep alternating. I was thinking of opening a can of chili but I know that wouldn't go over well. Except with me! :P

What do you put in yours? I remember making it years ago and using those fried onions, but I think there is something in them that one of us is allergic to now. I can't remember what though.

Oh, I'm so glad you found something that worked well for your daughter :) I like the idea of mushroom powder. I usually use a can of chopped mushrooms, and to hide the pieces from my DH, I'll throw the finished soup in the VitaMix blender :) I might have to give this variation a try though!

I always freeze my extra soup! I like to scoop it out by the cup inot ziploc baggies and freeze them flat so I have an easy way to serve it up again.

As far as chili goes, search this site for "cincinnati chili" - there's a great recipe on here that I've made a couple times, and it's beanless. I bet you could throw in a can of beans at the end for everyone else, but it hits the spot for me, and I don't miss them at all!

I haven't tried to make it yet but plan on using the funyon's that someone else posted as working for the onions. I generally make greenbean casserole during the holidays. I thought I would experiment using your cream base, the Funyons and lea and perrins worchestershire sauce. I will let you know how it works out!

I can't remember what is in those two foods, but I think it is something one of us is allergic to. Will look again though.

I just looked up the Funyuns and they contain buttermilk. So not suitable for a dairy free diet. Also contain soy protein. Yuck!

I was thinking about making a green bean casserole w/ fried onions (like onion rings), or just minus the onions altogether, since I seem to be sensitive to them. I've seen a few recipes that call for bacon. That might be a good topping/sub for onions.

yeah, went to walmart on Sunday night and was disappointed to see the buttermilk in the ingredients :(

For Greenbean Casserole one year my MIL didn't have any of the Fried Onions (before gluten free days for me).... so she just put some shredded cheese on top (what about dairy free cheese?).

Some recipe books say to use Sour Cream and Onion chips.

I haven't tired making Greenbean Casserole since going gluten free. Looked recently for the Progresso Creamy Mushroom Soup but haven't seen it yet.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
