Dairy Free Cassava Cake?

I love cassava cake and pick it up at the asian supermarket. The ingredients don't mention milk and the place is generally gluten free so I trusted it. But now I'm starting to think that maybe I should trust them ans just go ahead and start making my own. But al the recipes mention milk and are basically this

I looked at that recipe and my blood sugar shot up....LOL

How are you Pyro? Havnt seen you around in awhile?

I would use more of the coconut cream with coconut milk mixed in until "sweetened condensed milk" consistency. You might need more sweetener though. You could add honey to the coconut cream/milk mixture. Make sure the liquids are equal to what it calls for.

I'm doing fine. Trying to gain about 30-40 pounds of muscle now so I don't look so frail. I'm pretty proud of myself for being able to take the fat gain in stride. Instead of freaking out about it, I simply see it as a temporary side effect which would have been impossible for me to accept in my previous mindstate.

I've gained almost 50 lbs since going gluten-free and I LOVE it. I don't care that I'm a bit squishy now, I hated being model thin. I am out of shape though, and don't like when I can't lift what I need to lift or move what I need to move, so I'm working on that, but Oh! The Joy! The Rapture! I have a bum!!!!!

Alt Cassava Cake Recipe

Ingredients

* 1 tin coconut milk (398ml)

* 2 packets grated cassava (or you can grate one yourself equal to about a pound)

* 2 eggs, beaten (or the equivalent in egg substitution form)

* 1 teaspoon salt

* 1 teaspoon vanilla extract

* 1 cup + 1 tablespoon sugar

* 2 tablespoons melted butter or margarine (you can use coconut oil if you can't have butter)

Preheat the oven to 350F.

Mix all the ingredients except the melted butter/margarine in a bowl.

Pour the mixture into a greased dish. Bake at 350F for 45 minutes. Remove from oven and brush melted butter on top of the cake. Bake the cake for another 15 to 30 minutes until the edges is golden brown.

I love the brown edges as its extra chewy.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
