Guar Gum Versus Xanthan Gum

Has anyone used guar gum instead of xanthan gum? I found one recipe, long ago, that called for guar gum and haven't used it since. Than I read in Living Without magazine that you can use either one.

At my local health food store xanthan gum is $14.45 and guar gum is $5.35. For the same 8oz. I have always been to nervous to try the guar gum, I don't want to have to throw out anything if it doesn't turn out.

I also read somewhere that you can use unflavored gelatin. You just double it. But I have never tried it.

You can also use ground flax seed or coconut flour. Both will exchange on a 1:1 ratio. I've used the flax seed and it gives more of a nutty flavor to your baking. Haven't tried the coconut flour. I've also heard that sweet potato flour will work too. Guar Gum and Xantham gum both give me bathroom issues :(

I ended up buying both and now I am using half and half in every recipe to use them up. I have had no disapointments using this method. My baking is much improved when adding this to the mix, that's for my converted recipes.

I substitute Guar Gum for Xanthan Gum 1-for-1 while baking and it seems to deliver the exact same results the Xanthan did.

Thanks, I am so glad to hear it. Xanthan gum is such a budget killer. I bake a lot and try to make everything homemade for my kids. It starts to really add up.

I bought the Organ gluten substitute online but after shipping I didn't save any money.

      Absolutely my point with Kerrigan, the owner. She stood to secure many years of faithful patronage by simply inviting us in for a pastry or lunch. Or by simply producing another $50 e-card based on trust. We would have been highly satisfied. We are limited to a few restaurants in the area, and that would have been one. It was very disappointing, esp to my wife, to realize we can't patronize the place anymore.

      You would think any business would see the wisdom of honoring a $50 gift certificate on the basis of customer satisfaction alone, apart from any questions about software glitches.

      So there was no physical, plastic card involved, correct?

      When my wife attempted to open the online card in the store with a cashier, it would not work. We then showed the owner the link to the card, the online receipt that I got upon purchase, and even my bank statement confirming the purchase. That did not satisfy her, since she said she needed the link to open to reveal the gift ID num. They even admitted they had a systems problem around that time.
