Gluten Free Breakfast?

Hi Everyone,

First I want to thank everyone for being so supportive (i've just joined the Forum and i've been on it non-stop)

I'm trying to totally simplify my diet and figure out my gluten and dairy issues with an elimination diet.

What are good gluten free breakfasts? I'm trying not to eat any processed gluten free substitutions like gluten-free bread, waffles etc. And trying not to use dairy substitutions like soy cheese. (however I still eat greek yogurt, on the recommendation of my herbalist)

As of now I eat greek yogurt with fruit and honey for breakfast.

I don't want to eat it every single day, cause i've worried that I will develop a problem with the yogurt. what are other suggestions for things to eat for breakfast?

Also, how do you know what spices are gluten free?

Spices:

Plain spices (rosemary, thyme, oregano, etc.) with one ingredient are required by law to not contain anything else.

If it is a mixture, you have to read the label. However, McCormick will clearly list any gluten in the ingredients, so you don't have to worry about it being "hidden." If you don't see w/r/b/o on the label, its safe to consume.

Breakfast:

There are a few gluten free cereals - including Rice Chex, and some gluten free "rice krispies."

Breakfast is definitely the hardest meal of my day, so I know what you mean. I don't do any of the waffles or anything like that as they always seem to make me feel ill. <_<

In a pinch, I eat a LaraBar. Or some fruit, like an apple with peanut butter. Recently I made a pizza crust out of almond flour and made a breakfast fruit pizza. I covered it with coconut milk yogurt (I don't do dairy) and topped it with cut up strawberries and blueberries. It was seriously YUMMY!!!

I will pretty much eat ANYTHING for breakfast. I've eaten meatballs with salsa, chicken, you name it. What I do know, is that I have to have protein.

Here are my gluten-free/CF breakfasts:

Hash:

par boil potatoes the night before, cool, slice or chop either pan fry that night or the next am, chop onions, peppers and ham or other breakfast meat, put everything in containers if making in the am, panfry in oil with salt and pepper

We eat Bob's Red Mill Mighty Tasty Hot Cereal a lot. Also eggs - scrambled, omelets, quiche (crustless), etc. We just added oatmeal (certified gluten free).

I'm new, so take my answers with a grain of salt. Newly diagnosed (9/25/08), I'm very simplistic in the gluten-free foods I eat. For breakfast, I eat microwave scrambled eggs and microwaveable bacon. (It's nice to eat food I ate before diagnosis. ) This is only to add to what you already have and what has been suggested by others.

I'm kind of a microwave freak as I'm disabled in a wheel chair and can't stand longer than 3 minutes. Also, I'm in a tiny studio (affordability factor) with nothing but a microwave to supplant stove, oven and other accouterments, and have lost all my cookware as they are "gluttened" so I have next to nothing to cook with on top of little energy to use cooking. So this is really simple! ;)

Here's the microwave information I use successfully for making scrambled eggs:

(I use water instead of milk since I'm still new)

Procedure:

Place butter in small casserole and melt. Add eggs and milk (or water), scrambling with fork. Cook as directed in chart below, breaking up and stirring eggs twice. Let stand, covered, before serving.

Eggs------Butter-------Milk or Water------Cooking time on Power 10 (for 700 watt microwave oven)

2----------1 Tbsp----------2 Tbsp-----------------1 1/2 - 2 1/2 minutes

4----------1 Tbsp----------2 Tbsp-----------------2 1/2 - 3 1/2 minutes

6----------2 Tbsp---------4 Tbsp-----------------3 1/2 - 4 1/2 minutes

The eggs actually remind me of good restaurant eggs without anything added. They're fluffy and taste just like they were scrambled on the stove only there isn't any discoloration from burnt edges.

For microwave bacon, just read the back (or side or top) of the package of bacon and follow. Bacon, to the best of my knowledge, is gluten free. If I'm incorrect, feel free to correct me, hopefully with a little more information than just stating that I'm incorrect. Thanks! :)

We eat eggs/bacon/potatoes in one form or another every morning.

I have a problem with most grains so cereal is out.

Typically it's scrambled eggs, slices of bacon, and some breakfast potatoes. I mix it up with omelettes and quiche now and then and a few times a month, I'll add pancakes or waffles.

Yesterday I made a breakfast pizza with scrambled eggs, bacon pieces, and montery jack/mozzarella cheese. Yum!

For breakfast I alternate gorilla munch cereal with fruit and toast with one boiled egg and toast with jam. Susan

I like leftover, baked/fried potatoes with chili or chili beans on top with chopped tomatoes and green onions...with cheese, or leave it off. Very filling.

Or yogurt with fruit and granola or nuts.

We had these homemade waffles today with black raspberries tossed in (I picked them this summer)

I know you said no waffles but these are awesome:

I make them with 1 1/2 cups almond milk, finely chopped almonds and a banana I keep in the freezer, just thaw and mash. Freeze the leftovers to pop in the toaster.

Whole Foods is the only place I have seen it where I am. About $1.89 per container. They're my treat :)

The list Fiddle Faddle posted is helpful, but it shows who's carries their products, it's not product specific. I have found the soy yogurts and such almost anywhere, but the coconut milk products I have only located at Whole Foods. There is also a coconut milk ice cream... YUM!!!!

I feel better if I go with protein early in the day so it is often eggs scrambled, sometimes with onions and greens like arugala or spinach and a glass of plain tomato juice or I might take two eggs, 1/2 cup water and 1/2 cup almond flour, and a little salt, to make a simple pancake that I eat with blueberries, somedays I add a little honey but generally not. I also make a not so sweet lemon raspberry muffin that is great with coffee.

One of my favourite breakfast foods is soup but I am usually too lazy to do that much that early in the day but if I am feeling like I need to really simplify I will take a carrot, some celery and onions, chop them up, cover them with water and simmer. I know it sounds boring and it is but somedays I add green peas for excitement. :lol: Or some fresh ginger, or herbs....s$#&ake mushrooms....

Im really bad n the moning, so once a week, I make a 3-egg omelet loaded with veges ( peppers, red and green, mushrooms, onions, broccoli or cauliflower, ect- anything I have on hand). Then I nuke a third of it in the am and eat it with a small piece of gluten-free cinnomom tst. I also pre-fry enough cornmeal mush to last for three days, then, in the am I throw it into a fry pan just to warm it up, with a couple of pieces of sausage. I add a piece of fruit and Im good to go for 6 days. If I get bored Ill eat leftovers or something like an egg poached in tomatoes and zucchini. Or maybe scrambled eggs, veges and a little cheese in a corn tortilla. But it has to be pretty much stuff that is already prepped and pretty easy to get from the fridge to my mouth! try the precooking stuff.

Somone on this board mentioned Libbys canned pumpkin. I eat this all the time now, I love it. Took me a couple of trys to get used to but good for you.

I mix canned pumpkin with some honey, walnuts and cinnamon.

Weekends I have scrambled eggs with avacado, hot sauce and corn tortilla

Fried egg wrapped in corn tortilla with a tiny bit of manaise.... mmm good maybe I will have that tomorrow.

I cant do a lot of carbs in the morning so I dont eat cereal anymore.

Fruit and pb is always the best!

Pancakes are good too with some type of protein.

I have a new favorite breakfast! Its kinda like a banana buritto. Get a corn tortilla (or rice), warm it up, spread peanut butter/ almond butter on it, put a banana in the center and sprinkle some rasins on it and roll it up!

Its so good, healthy, quick, and easy on to take on the run. I like to heat up the banana too! So its alittle mushy.

muffins made with almond flour,

eggs of some form about three times a week

pancake made with gram flour and vegies left over from the night before and some curry.

toast and cream cheese.

and on the day Bush left office,a mint chocolate chip ice cream sunday, this of course is not recommend more then once a year.

      @Jane02, I hear you about the kale and collard greens.  I don't do dairy and must eat green leafies, too, to get sufficient calcium.  I must be very careful because some calcium supplements are made from ground up crustacean shells.  When I was deficient in Vitamin D, I took high doses of Vitamin D to correct the deficiency quickly.  This is safe and nontoxic.  Vitamin D level should be above 70 nmol/L.  Lifeguards and indigenous Pacific Islanders typically have levels between 80-100 nmol/L.   Levels lower than this are based on amount needed to prevent disease like rickets and osteomalacia. We need more thiamine when we're physically ill, emotionally and mentally stressed, and if we exercise like an athlete or laborer.  We need more thiamine if we eat a diet high in simple carbohydrates.  For every 500 kcal of carbohydrates, we need 500-1000 mg more of thiamine to process the carbs into energy.  If there's insufficient thiamine the carbs get stored as fat.  Again, recommended levels set for thiamine are based on minimum amounts needed to prevent disease.  This is often not adequate for optimum health, nor sufficient for people with absorption problems such as Celiac disease.  Gluten free processed foods are not enriched with vitamins like their gluten containing counterparts.  Adding a B Complex and additional thiamine improves health for Celiacs.  Thiamine is safe and nontoxic even in high doses.  Thiamine helps the mitochondria in cells to function.  Thiamine interacts with each of the other B vitamins.  They are all water soluble and easily excreted if not needed.       Thank you so much @knitty kitty for this insightful information! I would have never considered fractionated coconut oil to be a potential source of GI upset. I will consider all the info you shared. Very interesting about the Thiamine deficiency.  I've tracked daily averages of my intake in a nutrition software. The only nutrient I can't consistently meet from my diet is vitamin D. Calcium is a hit and miss as I rely on vegetables, dark leafy greens as a major source, for my calcium intake. I'm able to meet it when I either eat or juice a bundle of kale or collard greens daily haha. My thiamine intake is roughly 120% of my needs, although I do recognize that I may not be absorbing all of these nutrients consistently with intermittent unintentional exposures to gluten.  My vitamin A intake is roughly 900% (~6400 mcg/d) of my needs as I eat a lot of sweet potato, although since it's plant-derived vitamin A (beta-carotene) apparently it's not likely to cause toxicity.  Thanks again!

      Hello, @Jane02,  I take Naturewise D 3.  It contains olive oil.   Some Vitamin D supplements, like D Drops, are made with fractionated coconut oil which can cause digestive upsets.  Fractionated coconut oil is not the same as coconut oil used for cooking.  Fractionated coconut oil has been treated for longer shelf life, so it won't go bad in the jar, and thus may be irritating to the digestive system. I avoid supplements made with soy because many people with Celiac Disease also react to soy.  Mixed tocopherols, an ingredient in Thornes Vitamin D, may be sourced from soy oil.  Kirkland's has soy on its ingredient list. I avoid things that might contain or be exposed to crustaceans, like Metagenics says on its label.  I have a crustacean/shellfish/fish allergy.  I like Life Extension Bioactive Complete B Complex.  I take additional Thiamine B 1 in the form Benfotiamine which helps the intestines heal, Life Extension MegaBenfotiamine. Thiamine is needed to activate Vitamin D.   Low thiamine can make one feel like they are getting glutened after a meal containing lots of simple carbohydrates like white rice, or processed gluten free foods like cookies and pasta.   It's rare to have a single vitamin deficiency.  The water soluble B Complex vitamins should be supplemented together with additional Thiamine in the form Benfotiamine and Thiamine TTFD (tetrahydrofurfuryl disulfide) to correct subclinical deficiencies that don't show up on blood tests.  These are subclinical deficiencies within organs and tissues.  Blood is a transportation system.  The body will deplete tissues and organs in order to keep a supply of thiamine in the bloodstream going to the brain and heart.   If you're low in Vitamin D, you may well be low in other fat soluble vitamins like Vitamin A and Vitamin K. Have you seen a dietician?

      I do not know this, but since they are labelled gluten-free, and are not really a product that could easily be contaminated when making them (there would be not flour in the air of such a facility, for example), I don't really see contamination as something to be concerned about for this type of product.
