Bloating Has Returned With Consumption Of gluten-free Carbs...help!

Things were going great for me, but since I have started including more carbs in my diet, I am struggling with the massive bloating and some tummy issues again. I am so frustrated.

I don't feel "glutened" with the fatigue and mental fog that I get with gluten, but I am severly bloated and constipated.

Could I possibly have an issue with corn? I have made bobs cornbread (gluten-free) and gluten-free oatmeal cookies- bad night (at first I thought it was the gluten-free oatmeal I was sensitive to). Then I made bobs gluten-free brownies and both nights I've eaten them my tummy's expanded to look 6mo pregnant.

I did get glutened over a week ago...could I just be struggling to get 'normal' again?

I had been eating mainly protien shakes and canned beans, along with chicken or beef for dinner, and cesar salad (I really love beans, lol) for the first 3 weeks off gluten and was doing great- flat tummy and lost nearly 10 lbs! Now since eating more carbs (all gluten-free) I am up 9-15lbs. What is the deal? I feel completely crazy. I told myself yesterday it was back to the previous diet, but those brownies called my name. Sigh. Could it be the cornmeal in all those mixes? Should I have an allergy test done?

One of two things is possible -

1) Something you're eating now is cross-contaminated with gluten

or

2) You have _____ problems in addition to gluten problems

Given that your symptoms don't 100% match those of "being glutened" I would lean toward #2.

For example, if I eat millet or anything with a small amount of millet in it, I can't button my pants the next day - but it doesn't matter because I won't be able to go anywhere because it feels like I ate living glass and it's trying to cut and chew its way out of me!

To discover this I had to do a food diary and elimination diet. Since you were eating very, very plainly and doing fine I'd go back to that for a week, then add things back 1 at a time.

Corn constipates me, makes my life miserable, so I eliminated it from my diet. On the other hand, Bob's Red Mill does have CC issues quite often. I find, for me, if I stay away from all grains, I do much better. The beans may be a problem too. Elimination diet is what you will have to try, you have too many things at once that could be the problems.

Three weeks is was too soon for me to add in those things. I took the advice of my old-timers on this board and stuck to meats, fruits, and vegetables all prepared simply. I avoided dairy, fats and anything made of ANY type of flour. It was six months before I added those things back in. I'm back to avoiding them again because they are so calorie dense that I am gaining too much weight.

Give yourself more time to heal. Then you can have a clearer view of other issues you may have.

Also, learning the ways of gluten-free and clearing one's home takes a bit of practice. I agree that cross contamination could be an issue.

It could very well be CC. The pregnant tummy is my first sign of being glutened and I am very sensitive so it doesn't take much. Your reaction is just like what I might get. I do get the fatigue etc. but I wouldn't rule out gluten just because you didn't seem to get that yet. Sometimes I won't get that unless I eat that CC'd product everyday for a few days in a row, then I'll realize that I have been fatigued and I'll also get emotional really easily. Even if I get it just once, I'll sometimes not realize until a few days later that I have been fatigued. Did you use an old baking pan? Does it have seams in it? your old handheld mixer? Baking powder, baking soda, even spices like cinnamon or other ingredients lefover from pre-gluten-free days could be cross-contaminated and need to be replaced with new ones.

All the dishes I used were glass, and have been washed pretty well. I cleaned up the kitchen a bit ago, before I baked with the bob's mixes. I didn't use a mixer, but I am REALLY glad you mentioned that, because I definately need to get a new one and hadn't thought of that yet.

I have also had issues with Bob's Red Mill products. Before you go through the daunting prospect of checking for other intoelrance you may want to try some other brands. Gluten Free Pantry makes some good bread mixes and a great chocolate cake mix. Pamela's is also good if you can tolerate dairy.

So should I be concerned about the individual Bob's Red Mill gluten-free flours I purchased? Or just their mixes. I haven't opened the flours yet, so I could return them. I did open an Arrowhead Mill gluten-free cornmeal, but all my Bobs are sealed. Did you have a strong reaction with Bobs?

I take Miralax when I get constipated. I have to rotate my diet or else I start getting constipated with things I am usually fine with.

      I don't know if I am getting sufficient Omega Threes. I read about  phosphotidyl choline may cause heart issues. I will have o do further research on heathy Omega 3 supplements or from foods. Is there a blood test that can tell you everything level in your system such as Thiamine, Benfotiamine levels etc? Thanks

      If lectins were my problem, I would react to wheat germ (the highest source of wheat lectins) and beans. I don't. I only react to bread and pasta, which are the highest sources of gluten. Therefore, my issue is wheat-specific (Gluten/ATIs), not a general lectin issue.   I have eaten a supposedly high lectin diet (I say supposedly because lectin content in these foods is greatly reduced by proper cooking and I eat very few of those foods raw, and even then, rarely!!) for years. My health has improved greatly on my whole foods plant forward diet. I have asked all my drs and a registered dietician about my diet, asked if eating such a high amnt of fiber might interfere with the digestion of any other nutrients and the answer has always been NO.     while doing the gluten challenge I did not eat ANY wheat germ (since it doesn't have hardly any gluten, and I was too sick from the bread and pasta to want to eat much anyway) I will NOT put that poison in my body again. That was a horrific experience and if this is what most celiac patients have to deal with, I am very sorry for them I don't care if I have celiac or NCGS I won't intentionally cause myself that much pain and suffering it's not worth it.

      @catnapt,  Wheat germ contains high amounts of lectins which are really hard to digest and can be irritating to the digestive tract.  They can stimulate IgG antibody production as your blood test shows.   Even beans have lectins.  You've simply eaten too many lectins and irritated your digestive tract.   You may want to allow your digestive tract to rest for a week, then start on gluten in "normal" food, not in concentrated vital wheat gluten.       I take Now B-1 (100 mg) Thiamine Hydrochloride, and Amazing Formulas L-Tryptophan (1000 mg).   Both are gluten free and free of other allergens.  I've taken them for a long time and haven't had a problem with them. I take Vitamin A from BioTech called "A-25".  It's gluten and allergen free and made in the USA.  It's a powder form of Vitamin A.  I was having trouble digesting fats at one point, but found I tolerated the powder form much better and have stuck with it since.   Tryptophan and Vitamin A help heal the intestines as well as improves skin health.  I get Dermatitis Herpetiformis and eczema flairs when my stomach is upset.  So I'm healing the outside as well as the inside.   I take one 1000 mg Tryptophan before bedtime.   With the Thiamine HCl, take 100 mg to start.  If you don't notice anything, three hours later take another. You can keep increasing your dose in this manner until you do notice improvement.  Remember not to take it in the evening so it won't keep you too energized to sleep. When I first started Thiamine HCl, taking 500 mg to 1000 mg to start was recommended.  If you've been thiamine insufficient for a while, you do notice a big difference.  It's like the start of a NASCAR race: Zoom, Zoom, turn it up!   This scared or made some people uncomfortable, but it's just your body beginning to function properly, like putting new spark plugs in your engine.  I took 1000 mg all at once without food.  It kicked in beautifully, but I got a tummy ache, so take with food.  I added in Thiamine TTFD and Benfotiamine weeks later and felt like I was Formula One racing.  So cool.  You may feel worse for a couple days as your body adjusts to having sufficient thiamine.  Feels sort of like you haven't cranked your engine for a while and it backfires and sputters, but it will settle down and start purring soon enough.  Adjust your dose to what feels right for you, increasing your dose as long as you feel improvement.  You can reach a plateau, so stay there for several days, then try bumping it up again.  If no more improvements happen, you can stay at the plateau amount and experiment with increasing your Thiamine TTFD.  It's like being your own lab rat.  LoL Yes, take one Benfotiamine at breakfast and one at lunch.  Take the B Complex at breakfast. Take the TTFD at breakfast and lunch as well.  I like to take the vitamins at the beginning of meals and the NeuroMag at the end of meals.   You may want to add in some zinc.  I take Thorne Zinc 30 mg at breakfast at the beginning of the meal.   Are you getting sufficient Omega Threes?  Our brains are made up mostly of fat.  Flaxseed oil supplements, sunflower seed oil supplements (or eat the seeds themselves) can improve that.  Cooking with extra virgin olive oil, avocado oil, or coconut oil is also helpful.   @Wheatwacked likes phosphotidyl choline supplements for his Omega Threes.  He's also had dramatic health improvement by supplementing thiamine.  You're doing great!  Thank you for sharing your journey with us.  This path will smooth out.  Keep going!
