Anyone have great cold lunch ideas? For the first time in 8 years heating my daughter's lunch will be a major poblem.

Sandwiches on Udi's white sandwich bread. It stays soft and keeps well. Fruit, cheese cubes and gluten free crackers.

There's a link on my profile of lunches that we've sent over the years. All served room temp/cold. Many things that we are used to eating warm taste just fine when not warmed up. A few tips-reheat foods in the a.m., cool down and place in containers-if they are still warm when you put the lid on the steam builds up inside and compromises food safety. Same tip goes for foods that are cooked fresh in the a.m. Things that are well seasoned, a bit on the salty side and not overly saucy work best. Lunchinabox.net is a great resource.

I kind of think in terms of "naked sandwich," "naked burrito." I also send Annie's gluten-free mac'n'cheese in a thermos. It sits in my son's thermos for about three hours and we've never had a problem. The naked sandwich works well with cheese rolled up in a thick slice of turkey or chicken, like Columbus. The naked burrito can be brown rice, beans, avocado, tomato, leftover chicken, even a drizzle of ranch. My son used to love lunchables (gross, I know) - the original Glutino crackers are remarkably like a cross of Ritz/saltine and he loves them, so I'm planning to make a "lunchable" - crackers, gluten-free chicken lunchmeat, havarti. Good sides are edamame, grapes, strawberries, and I will probably include a treat so his lunch seems "normal" - he loves the chocolate Glutino wafers and also the lemon ones or a Stretch Island Fruit strip (Costco) or a Fruit Twist (Clif). One last idea - the High Plains Bison (www.highplainsbison.com) hot dogs are the tastiest thing on earth and they are gluten-free, no nitrates, no fillers. You could heat one of those, slice it, and send it in a thermos or tupperware. I realize I sent hot stuff that sits for awhile . . . I've never had a problem and I packed my own lunches for years this way before I even had kids.

We get those little single serve hummus cups from Costco. Daughter eats one of those with some baby carrots and apple slices. She might also take a single serve pack of pepperoni, some salami, Fritos, and Enjoy Life cookies.

My standard cold lunch is lunch meat and cheese wrapped around a pickle. You could wrap this with lettuce, use any type of lunch meat, any cheese including cream cheese (if dairy is tolerated) and even used a cooked veggie instead of a pickle. Bento boxes are another great lunch idea. Any tupperware will work and it does not have to be asia food. There are plenty of internet sites with suggestions.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
