Do you want the recipe?  its really quick and tasty.  But I don't remember what people can and can't eat - it has salsa and potatoes in it.

Last night: chicken and wild rice soup (from a can)

Tonight: cilantro lime chicken soup (from a can)

 

Why? Because what I thought was worse than usual allergies because my husband was hanging out with his cat turned out to be a cold.... that actually turned out to be the flu. And I work like 12 days a year and this is the only time ever I've had to work 3 in a row and magically I choose now to get sick. World's. Best. Timing. I'm being super careful, not breathing on students, using enough hand sanitizer to choke a donkey. They're adult students, not kids, so no one panic.

I still want nothing but soup and frankly don't have money to throw at cans of soup every day. Not that I have a choice, but I don't want to cook either. I'm going to just pick up some already cut up veggies, throw them in a pot with some chicken and stock and boil some rice a bag. Bam! Dinner for the weekend. I'm frankly too sick to give a crap what my husband eats. He's a grown up, he'll figure something out. Or starve. Whichever. Either way, I'll be asleep all weekend so it won't affect me one way or the other.

me too - minus the veggies - i put stewed tomatoes over mine :)  comfort food for me!  after tonight's plan was tacos w/the grand kids but the meat was bad!  it had an expiration of 10/31.....  WHAT?  ground beef!  i bought iton monday, never checked the date until the package started expanding.  how can 'fresh' meat keep until 10/31 :o

 

anyways, hubs and kids had chinese take-out and i had leftover mac & chz.  i love the stuff.  if i was stuck on a desert island, i hope i was shipwrecked on a macaroni boat with a cow and a chicken and a giant tomato...........  i'll be all like:  "look, cow and chicken, another piece of the macaroni boat has washed ashore, but don't tell giant tomato!"

 

pentameter.  whameter....  i have been the voice of persuasion and reason ("because i said so") to 4 grandkids all day, babysitting.  going to sleep with the sick one - immune system, you're up.  let's see what ya got  <_<

Know what's the most insulting? Based on when I started feeling sick, I'm 99% confident I picked it up at the Expo. <_< I am 100% sure there were irresponsible people there who didn't belong there. Someone in line early had a lady join them with her daughter who wasted no time in proudly stating she had pink eye. My immediate thought was "what the holy hell is she doing here?!?!" :blink:

 

Note to self: get flu shot before next year's expo. I guess the bright side is I'm getting this whole being sick thing out of the way early this year. :mellow:

I have posted the Cowboy Steak soup recipe.  I thought it might be nice to make a place we could post soup and chili recipes.  Newbies might like it too.  I put the brand name of the things I used that might have gluten - like broth.  Thought that might make it easier.  I made my recipe with a bit more description that I might usually give.  I know we get people who haven't cooked much so I didn't want to scare them.

The soup my hub wants when he is sick - Noodles cooked in chicken broth.  Youngest son likes some rice in chicken broth.  Sometimes I will sneak a few shredded carrots in while the rice or noodles are cooking.

There are 2 things my dad can cook and wants to cook for himself -  One involves hot dogs and thinly sliced potatoes in a casserole.  the other is a box of mac and cheese, cooked hamburger and a can of stewed tomatoes.

The Atlanta brisket I made (I saw it on Cook's country) was really good and the meat was fork tender.I served it with smashed potatoes and steamed English peas.

Thursday, it made a delicious brisket sammy on the rolls I had made earlier in the week with a horseradish cream sauce and a cup of the escarole and white bean soup I had made Tuesday (in other words, it was "encore night") :D

Friday was homemade pizza.

Tonight could be lobster or some hogfish (which is a delicate, mild white fish that is just awesome) but the hubs is not into fish, so he'll get scallops. We'll see what the fish market is doing today. Probably pair that with some caribbean rice and Karen's favorite--haricots verts.

We all have our taste preferences.

My mom hates cheese (I know,I often wonder if I am adopted) and my dad loved the mac and cheese with toms) so we never even got mac and cheese that much as  kids. We had to go mooch at someone else's house for it.

My MIL made it with tomatoes. I found it ....blech.

i do not believe, in the 25 years i have known her, that i have ever asked her for a recipe.  lolz!!   but she has plenty of mine - she even put my stuffed mushroom recipe in a cookbook her church group made for a fundraiser  :)  because it's freaking awesome :)

if it makes you feel better, that's what happens if I get hit. Not the same as when first  DXed when I'd be sidelined for weeks.

The muscle pain ramps up to 10 and I get burning nerve and skin pain, a bunch of sores on my face and scalp, I feel off balance and awkward (more awkward than usual lol) , the  fatigue is unbeleivable and I want to punch people in the face. People I do not even know. I have to watch a bunch of comedies and stay inside.That's just not right.!... :ph34r: lol

Want mine? I see her 2 or 3 times a week. <_< I'm sure even my husband would be willing to give her away right now. :lol:

 

I'm a horrible person when I'm glutened too. I can't even go to Wal-Mart because if one person looks at me funny I'll start thinking things like "I swear to God if you so much as open your mouth in my direction I'll stab you in the eye with a spork from the deli." And so I stay home and don't even talk to my husband without the disclaimer that I may say something I don't mean.

 

Mmmmm.... stromboli. I think the only thing I'm willing to try to get down this sore throat is honeyed tea and more soup. A stromboli does sound like a fun challenge though.

for the stromboli, i'm gonna hafta find that dough recipe.  technology bites me in the a$$ again - i was so forward-thinking, i copied all my gluten-free favorites to a file on my laptop.  which is currently blue screening...............  i shoulda backed it up onto a stick, but i am stoopit  :huh:

A failed or malfunctioning computer doesn't mean everything is lost. It is possible if you take it to a tech they can retrieve your hard drive information. A blue screen is rarely (if ever) related to your hard drive, so your information is probably all intact. If you have truly valuable information on there, you can probably go to a tech and tell them what you want and see if they can retrieve it for you.

 

Now if isn't something you already do, you need to get yourself a three-ring binder and start printing out recipes so this never happens again. :P

      This is my current exhausting battle with the medical field. As Ive mentioned in past I was diagnosed in 1994 by colonoscopy and endoscopy and was told i was celiac and to stay away from wheat and Ill be just fine.NOPE not at all in fact im worse thanks to being disregarded and my new word that was given that fits perfectly medically gaslight for over 30 years.I was not informed by anyone about the condition other than its a food allergy. Long story short if it wasn't for this website.I would be so much worse. I have been glutenfree since 1994 and was diagnosed with many other foods in 2007. I have stayed away from those items, except dairy sometimes I'll cheat when I know I'll be home a few days.My work history is horrible thanks to my digestive issues. I had my past primary for 25 years and everything im going through, he danced around celiac disease. My last day of employment was March 08, 2023 I was a bus driver and took pride in that.I get sick easily and when covid hit me and I stopped taking tramadel to push to give my bloated body a break, I haven't " bounced " back.Though not that well before but worse now.I applied for disability because yet again I was fired solely on health, which by the way seems to be legal because no lawyer wants to help.I was denied and my primary stated let me fluff it up a bit.FLUFF IT UP A BIT?He has been my doctor for 25 years! All that Im going through was basically ignored and not put together. I switched primary doctor and seeing new gi and its EXTREMELY EXHAUSTING because they are staying all my test came back clean, good, its normal. Except THANKYOU LORD JESUS HLA DQ2 is positive that Itty bitty tiny little test of positive FINALLY VALIDATION RIGHT.No, Im still struggling and fighting its not fair

      Since medical insurance is not affected directly by celiac disease on an ongoing basis (i.e. medication, medical devices, daily monitoring, home care nursing, etc), I rather doubt anyone would be denied a policy for having it as a pre-existing condition. I’ve certainly never been and I have two pre-existing conditions that are managed with diet alone and both are long-well-known by my doctors and via medical testing and procedures. Insurance is all about risk management, not health.

      I got beaten so bad playing dominoes that made me realize that I was probably eating something with gluten, the culprit (Simms premium cracked pepper STEAKSTRIP). Now I can look back and see all other symptoms: irregular stools, bad sleep, desire to eat uncontrollably, bad mood, etc. Gluten really does a job on my short-term memory.
