Food Intolerances - Sometimes Makes No Sense!

I have not eaten gluten products for about a month now and have been keeping a food diary to know which foods I am sensitive to. But when I get an attack, it is not gluten that gets to me - it is the food intolerances that sneak up and do you in!

I had been eating gluten free chocolate cake (without soy or fructose) and I did great with it.

I had been eating cereal with Silk almond milk and did great with it.

But then, I bought a half gallon of Silk chocolate almond milk - made sure there was no soy in it and alias I had been having attacks of diarrhea for the past two days. I just don't get it - Why did it seem okay to have the chocolate cake and to have the almond milk - but the combination really was a disaster??

Perhaps your intolerant to something else in the milk. Also you haven't been gluten free for very long. You may have had some gluten sneak in somewhere. Intolerances can have delayed reactions so look at what you may have eaten two or three days ago also. It is often a good idea to go with less processed stuff and more whole foods until we are fully healed.

Possibly there is another intolerance I am not aware of in the milk - although the milk is made by the same manufacturer, Silk - the ingredients in the milk differ somewhat.

But I have been extremely careful in what I have been eating - and I eat a very, very limited diet right now - with no deviations except for the almond chocolate milk. The milk didn't bother me the first day - and I had only a cup of it - but I did notice I was going to the bathroom a bit more since I had been constipated somewhat from my limited diet - but the second day, after having another cup - within a couple of hours I had issues. Stupid me - I should have realized after the first day - I was going to have a problem but did not catch it in time. The only other deviation I had during this time frame was to have Udi's bread instead of gluten free crackers - so I am wondering if this could be the culprit or a combination of the two together :(

My cartons of Silk Almond Milk say they "may" contain coconut products which can be a pretty potent laxative in some. Have you ever eaten coconut regularly?

Yea coconut seems to be an issue for me also. OP which UDI's bread did you try? Was it the whole grain or the white. For me the whole grain is out because of the flax in it. Neither may be the case for you.

I use the Udi's white and I have no problems with the Silk Almond Vanilla. I also bought some Coconut Chocolate Ice Cream (gluten free) and no problems there as well :(

I don't know if that's your issue but it's happened to me enough times to suspect that it's not necessarily gluten just backed up bowels. Then again I've always wondered about it

I think that could be it, too. I had been constipated for about 4 days - and then something set it off - how weird that one can alternate like this - from one extreme to the other.

Yes it is wierd! I definitely do better overall when I include more vegetables for fiber but you know how it goes, sometimes you just can't get yourself to eat them but without them you can get backed up.

What you are describing is part of a typical food intolerance reaction for me. C first and then D as the body rids itself of the offending "food". I figure the C part is basically a temporary freeze-up of the intestines as they are freaking out over the nasty stuff they are loaded with. Just my opinion, but when they get past the shock they purge the crap. Literally.

So if you are having this reaction regularly I'd suggest checking everything you eat and try eliminating some items that could be causing it. It is not normal digestion.

      So I've been dealing with chasing the name celiac because of my body actively dealing with health issues related to celiac though not eating. Diagnosed in 1994 before foods eliminated from diet. After 25 years with former pcp I googled celiac specialist and she wasn't because of what ive been through. I wanted my results to be sent to my pcp but nothing was sent.I have email copies.I did one zoom call with np with team member from celiac specialist in Nov 2025 and she asked me why I wanted to know why I wanted the celiac diagnosis so bad, I sad I don't, its my life and I need revalidaion because its affecting me.KB stated well it shows you are.I asked then why am I going through all this.I was labeled unruly. Its been a celiac circus and medical has caused anxiety and depression no fault to my own other than being born with bad genetics. How is it legal for medical professionals to gaslight patients that are with an ailment coming for help to be downplayed? KB put in my records that she personally spent 120min with me and I think the zoom call was discussing celiac 80 min ONE ZOOM call.SHE is responsible for not explaining to my pcp about celiac disease am I right?

      I've noticed with my age and menopause my smell for bread gives me severe migraines and I know this.Its alarming that there are all these fabulous bakeries, sandwich places pizza places popping up in confined areas.Just the other day I suffered a migraine after I got done with my mri when a guy with a brown paper bag walk in front of me and I smelled that fresh dough bread with tuna, I got a migraine when we got home.I hate im that sensitive. Its alarming these places are popping up in airports as well.I just saw on the news that the airport ( can't remember which  one)was going to have a fabulous smelling bakery. Not for sensitive celiacs, this can alter their health during their travel which isn't safe. More awareness really NEEDS to be promoted, so much more than just a food consumption!FYI I did write to Stanislaus to let them know my thoughts on the medical field not knowing much about celiac and how it affects one.I also did message my gi the 3 specialist names that was given on previous post on questions on celiac. I pray its not on deaf door.

      I used to be able to get the Rivera yougut i havent been able to get it lately. I like getting it did say it did say gluten free. I just looking for a good yogurt that gluten free that i can add some fruit and nuts to any suggestion would be helpful  thanks
