Breakfast - Leftover curried beef & potato stew w/tortillas, coffee

Snack - Banana, handful of walnuts, coffee

Lunch - Large salad w/hard-boiled egg and pumpkin seeds

Snack - Blackberries

Dinner - Leftover gluten free ravioli and gluten free pizza bread, glass red wine

Snack/desert - Large bowl of popcorn, 1/2 pack M&Ms

Mid Morning Snack: Fuji Apple with Justin's almond butter and protein shake

Lunch: Pork tenderloin medallions (cold) on a salad

Mid Afternoon Snack: Non Fat Greek yogurt with blackberries and a few squares of dark chocolate. Protein shake

Dinner: Sashimi + sushi + edamame with gluten-free soy sauce

Dessert: WOW gluten free cookie

Before Bed Snack: Low fat cottage cheese

Green tea and 100+ ounces of water throughout the day.

Hmm...my celiac who is not trying to gain weight had:

Breakfast: Rice chex and milk

Lunch: Leftover porcupine meatballs, banana, blueberry coffeecake

Dinner: cheese pizza and water

I am not a celiac, but I eat a lot like one ;) I had:

Breakfast: banana and soy milk

Lunch: turkey and cucumber (the two ingredients, chopped up together)

Dinner: 4 Little Caesar's cheesy breads (an indulgence since tomorrow is my bday. Last night they had scalloped potatoes, cheesy broccoli and porcupine meatballs and I had greek yogurt with a T of walnuts and some blueberries)

Snack: cantelope

Our [celiac] son is 17, and trying to gain some weight. He ate everything that wasn't tied down, as always. Snacks on avocados, ice cream,Hershey bars,cookies ; ice cream shakes and scrambled eggs with cheese for breakfast, M&Ms, cheese sticks, yogurt, power bars, nutella sandwiches, peanut butter and bagels, leftovers for lunch.

I struggle with overeating issues, but have found the Inside Out Weight loss podcasts really helpful. Not an endorsement or spam, just another place to look for support.

Lunch: PHO bowl with plenty of veggies and extra filet

Dinner: 95% lean lamb burger, sliced tomatoes, grilled asparagus and wild rice.

Before bed snack: 3 boiled eggs (no yolk)

Snack: 1 mini gluten free chocolate cupcake from Whole foods

Lunch: Curried beef & potato stew w/corn chips, pear

Lunch: All natural 95% lean beef patty with lettuce, tomato, onion and steamed veggies. Served open faced with a slice of gluten free bread

Mid Afternoon snack: Fuji apple with almond butter

Dinner: Ono Grilled fish tacos with avocado, salsa, feta cheese on a corn tortilla. Served with black beans and grill asparagus.

Before dinner: Low fat cottage cheese with black berries.

100+ ounces of water throughout the day.

The foods look fantastic, very healthy gladi8tor!

I will be getting serious with these threads soon after I recover form gallbladder surgery. It's coming out on Friday! Can't wait. I've been very under the weather lately.

100+ ounces of water throughout the day (Yikes!... I gotta urinate now! But isn't that the point? Constantly flushing your system)

I'm going to sound like one of my Nuns from Catholic Grade School, but where are those fresh/steamed/frozen vegetables? To start incorporating, drop one of your carbs (pancake, butterfinger,or bagel) and switch to a veggie. Or try a piece of fresh fruit.

I'm finally getting better after having my gallbladder out last Friday. However, I'm still puttering around the house and getting tired easy.

B- coffee, splenda and cream

B- one slice of Rudi's toast with Peanut butter and sliced strawberries

Lunch- one cup Thai kitchens gluten free peanut rice noodle stirfry using shrimp This is excellent! Not all of there box dry meals are gluten free!! This one is though.

Snack-one square of chocolate, 12 almonds, 1/2 cup of sliced raw strawberries.

D-same as lunch (one cup)

Later tonight-protein shake with almond milk

Calories- 950

water-yes

vitamins-ran out, need to get to the store

excercise-none, recovering from surgery

Thank you! I love getting good meal advice. I've been meaning to have more veggies and fruits but have not been able to go to the store (recently glutened). but today my hubby went and bought some apples, potatoes, broccoli and carrots. so today's meal was:

Breakfast - strawberry smoothie

lunch - carrots and rice

Snack - mini snickers bar

Dinner - Steak, broccoli, and mashed potatoes

This is alot better than yesterday! I hope i can keep it up :D

Eating 2 pamela ginger/almond cookies with a glass of vanilla hemp milk as I am typing this before bed =D

Today was a terrible day for me..very busy!

No breakfast--slept in---only day I get to.

coffee and my bottle of water

Lunch/breakfast I guess I could say- baked chicken with herbs and roasted cabbage

snack--leftover chicken, some grapes

out the door again!

Not home until after 9:30 my daughter is in a play at church!

Thinking of a glass of Chardonnay and what's good for a late dinner!

last night i grilled a 4 lbs. pork loin on the grill. Marinated in apple juice and garlic plus salt/pepper.

Took 2.5 hours but was well worth it.

Now I have left overs for the next 4 days!

Preheat oven to 400

Grate 3 medium zucchini and squeeze out excess moisture. Add to this 2 eggs and 2 cups of any shredded cheese you like, (I tend to use mozzarella, but a mix is also good).

When blended, spread evenly into a 13x9 baking dish. (either greased or lined with non stick foil)

Bake for 15 minutes.

Remove from oven and carefully top with sauce and anything else you like on pizza.

Return to oven and bake for another 30 minutes or so till browned and bubbly.

Let it sit a few minutes before cutting.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.
