HI There! I love orzo salad with fresh tomatoes, cucumbers and basil. Can anyone think of good subsitute for orzo? I'm thinking maybe a brown rice. Has anyone tried anything like this?

Thanks!

I'd try arborio rice.

I think the brown rice would work nicely. Just last weekend I used brown rice in a cold salad that I brought to a barbeque. I roasted a few chicken breasts, then diced the meat, and added it to the cooked rice with some shredded carrots and finely diced fennel. I dressed it with a citrus vinaigrette. I made the dish a day ahead and was very worried about how it might go over since most of the guests were not on a gluten-free diet. Everybody loved it. I think the flavor profiles that you mentioned (tomatoes, cucumbers, & basil) would taste even better than what I put together. Go for it, the brown rice will hold up perfectly even if made a day in advance.

I made a cold salad with cukes, tomatoes, basil & vinaigrette. I used the Lundberg rice mix. It has several different rice in it & has a mice nutty flavor. Tasty tomatoes really made it good!

I'll have to try that Karen....if I can ever catch one. :P

Have tried everything and never found a good substitute for orzo or philo for that matter. the Would like to see how its made in greece so we could try to duplicate the orzo shape with other gluten-free flours.

I asked my cardiologist about stopping vitamins.  He said his tests account for all detectable vitamins from sources other than food.  I only need to stop them for a couple of days.  He has me keep records of meds and vitamins I've ingested over the past 10 days and prior and he does his calculations.

Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.

Many years ago yes, after eating and going to bed, apparently my esophagus filled with food that my body rejected, the esophagus would lay against the Heart sack (pericardium?) and the heart would respond by becoming arrhythmic. That went away with the strict diet.
