Guys, I added my first food today since I didn't itch last night and I woke up with milder cold symptoms this morning.

And of course I bought myself a small cute sweet potato.. I want to let you know I'M LOVING IT :-D

Thank you so much everyone who's been helping me. I owe you so much and you will forever be my friends! I don't know you I know, but you're the first people who actually listened to me and took me seriously.

I hope my post and happiness aren't premature haha :-) But whatever happens I'll be taking it one step at a time.

It's always good when you get to add a food. I hope you can add back more.

I read that probiotics help shorten the duration of a cold. I was surprised about that.

Sweet potatoes literally saved my life. At one point ( when I was at my sickest )they were among the only 4 or 5 foods that I could eat safely .

Hang in there it does get better :D

That's great that you were able to add them back in!

And you gave me some hope for my daughter, she loves sweet potatoes but they were bothering her belly so we took them out and I want to trial them soon for her.

Sweet potatoes are yuuuummmmmyyy (my palate changed drastically after going gluten-free!?)! So glad you were able to add them back

They first time it was cooked perfectly, but I sadly overcooked it the second time and didn't like it too mushy :-)

By the way it's been a month since I started the elimination diet. If all goes well this will be the second ok food I've added. In four days I'm trying oats!! :-O

For those of you who found that oats don't work, what type of symptoms did you experience?

I probably should have double checked before, but I just realized that sweet potatoes are high on salicylates.. not very high but still high. This means I would have to eat them in a very limited amount. Go figure!

You do mean certified gluten free oats, right?

Oats are one of those grains that are gluten-free 201 - most people wait about 6 months or more before trying them again. They just seem to be tough on the system.

That said, it may be just fine for you!

That's good that the sweet potatoes work for you. I would not add oats back so soon though. They cause some f us to react just like wheat, rye, and barley. So you don't need to be in any hurry to find out they are a problem. If you do react to them it could set you back several weeks.

I am heating up some sweet potato beef soup right now. I cook beef in a pressure cooker with the sweet potatoes and then mash them up together. You can add any spices like garlic, salt, pepper etc or lentils etc. Onions too. Makes a nice soup.

I'd think about something different too ad besides oats though. How about avocados? Do they work?

I wouldn't go with oats just yet. Some celiacs react to them as though they are a gluten grain.

How about quinoa or buckwheat for grains?

I'm afraid I can't add avocados (as squirming stated). I had them in my diet earlier but had to remove them because they're very high on sals. I need to limit the sweet potato intake as well since they are high as well (yet not as high as avocados).

I'm thinking about adding pears maybe. They are very low on sals.. While I do like them, they're still not one my favorites.

I was very excited about the oats I was counting the days for a long time. Someone told me earlier (don't recall who) that a month would be enough but I guess that's not gonna happen ;-( Too bad for me.

I'm gonna have to go through the low sals list of foods until I find something that works

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
