Non Baker - Baked First gluten-free Chocolate Cake, Success

So my it was my grandma's 87th birthday, and to date I have not had a lot of success with baking, most things just do not taste very good. I found a chocolate cake recipe that sounded great. I made it the night before and frosted it and put it in the fridge, the next day 12 people had their slices and were already eating when I started to dig into mine, it was only then that everyone realized that the cake was gluten free. Everyone really liked it and a couple of them finished it off today.

So far I have two good cookie recipe's and this cake and bagles that are all very good, but I probably had a ton of attempts that were no good.

That's wonderful to hear! I was actually a pretty experienced baker before going gluten-free. Nothing fancy, but had been baking since about age 13 and was diagnosed at 49. I produced some real clunkers when trying to get used to gluten-free baking but got used to it finally. I remember my first gluten-free Thanksgiving and having to pry my pie crust dough off the counter top and piece it together in the pie plate. I was almost in tears.

Congrats from me also. Every successful gluten free baking venture is like a victory.

I am still working on perfecting my bread recipe.

My worst attempts are with popovers which don't want to come out right for me. And the worst tasting thing I ever made was chocolate cupcakes using a recipe which called for garbanzo bean flour...they were really terrible tasting. I will never use garbanzo flour again. I love garbanzo beans and making hummus with them but they should stay in a can or their dried bean form where they belong.

Thanks for all the kind words. I keep telling my family that I have to stop trying all these new recipes for baking or we are going to gain 100 lbs eating junk food that we normally wouldn't eat, lol!

My mom will not get tested for Celiac and my brother is about to have a piece of his intestines removed due to severe damage from ulcerative colitis so I keep hoping that if they see how good things can be and realize that when we have these family dinners they are eating gluten free that they take the steps they need to to get theirselves tested.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
