  1. My staples: -Spices galore -Gluten-free soy sauce -Almond milk or other milk replacement -Margarine (non-trans-fat) and butter -Brown rice pasta (Tinkyada) in lots of different shapes -Brown rice -Lentils -Chickpeas and black beans (save money by buying them dry, or if convenience is more important, buy them canned) -Canned chipotle peppers (I...
  2. Here is my stuffing recipe: Gluten-Free Stuffing With Dried Fruit Open Original Shared Link It's amazing. I would NOT eat a turkey that had been stuffed with regular bread stuffing. The way we dealt with this is we made the turkey without any stuffing in it, and made both gluten and non-gluten stuffings which we cooked separately in casserole dishes...
  3. I use brown basmati rice, and if I make 1 cup of rice I use 1 cup of water and 1 cup of gluten-free vegetable stock (the kind you can buy in an aseptic container)
  4. Yay for tasty gluten-free recipes!
  5. One of the best cakes I've ever had (and this includes gluten-containing ones) is the one I made for my ex's birthday. It's an extremely moist, buttery yellowcake with raspberry filling and a raspberry cream topping. 6. Someone here recommended Freeda Vitamins and I've got to say I'm very happy with them. I take their cal-mag supplement and a multivitamin and they're casein, soy and gluten-free... and also kosher.
  7. I really need to buy a pump, too - Since it doesnt require any chemical propellant and I can just use whatever oil is healthiest (usually EVOO). But right now I use Trader Joe's canola oil spray (since the only time I need spray is when I bake, and EVOO is a little too... olivey). However, be careful! Some baking sprays have flour in them. They will state...
  8. This is a hard one. I tried to go on a gluten-challenge for my blood test because I'd already been gluten-free for 4 months... And I was really excited at the thought of eating all my fave foods again... And BAM, I got so sick I only made it 36 hrs on the challenge! I've been strictly gluten-free since, and have had to accept that this will preclude me from...
  9. I started having a regular period for the first time in years when I went gluten-free! I also noticed that I do seem to be ovulating (at least all the signs point to that, I'm not trying to conceive so I'm not testing or anything). This happened almost immediately. It's not like I'm suddenly have a cycle that's like clockwork - I do still have polycystic...
  10. I take Enterolab with a grain of salt, honestly, but I was positive on that and negative on my blood test and the only thing I know for sure is how sick I get immediately after eating gluten. (Too sick to even go on a gluten challenge in order to get a biopsy). My symptoms are mostly physical, however, I get MAJOR ANXIETY when I eat gluten. Usually right...
  11. Hi there, I just want you to know you're not alone. Food intolerances are not always (or even usually) the culprit for muscle and joint pain. I know there are people here who found dietary changes decreased or eliminated their pain and that's just great and I respect that. And I really do NOT want to get into debates about that stuff. But there's also...
  12. Jillian - Be sure to let me know how it goes and what you think
  13. I just posted in my blog about the persimmons I bought at the market yesterday. I've never cooked with them before but my plan is to follow a recipe I found for Persimmon Pudding Cake and just adapt it to be gluten-free. Persimmon bread sounds great - If you find a good non-gluten-free recipe let us know and maybe one of us can try to adapt it.
  14. When I worked in a restaurant we would sometimes forget to refrigerate the maple syrup and it would grow a film on it and then blue/green mold. So it does go bad, and fairly quickly. However, a night or two out of the fridge is not going to hurt anyone.
  15. I did it! Open Original Shared Link I posted a separate thread about this but figured I should follow up on this old thread in case anyone's following it... If you try it please let me know how it turns out.
  16. Hey everyone (especially fellow Jews and other knish-missing people!), Guess what? I finally made gluten-free knishes. Here's the recipe: Open Original Shared Link I will post a follow-up that includes an alternative knish dough that is made from scratch (from a combination of gluten-free flours)... That's my project for tomorrow, or next weekend...
  17. For those who are interested I just posted a pumpkin muffin recipe using coconut flour in addition to a usual gluten-free mix on my blog today, and I have a previously posted recipe for coconut flour blueberry muffins (with no other flour, just coconut) [link below]
  18. Oh wow - can't wait to try those!
  19. From everything I've read... yes, you can use the same cookie sheets, plates and silverware - Especially if they're not non-stick. There is concern that non-stick surfaces get scratched which can harbor some gluten even after washing. Cast iron may also pose this problem. Not everyone who is gluten sensitive has any problems using pots and pans taht are well...
  20. Wow, this was perhaps the one thing I didn't think a gluten-free version of was possible. I will give it a shot when I get some sticky rice flour. I'm feeling a little skeptical but it's worth trying!
  21. Thanks for the recipe and the suggestions, folks. I'm definitely going to buy a dough press, which I will use for making the pierogies and also other dumplings in the future. I'll give it a shot with brown rice flour instead of soy flour, and let you know how it goes
  22. Does anyone have any suggestions for a replacement for soy flour? I try to stay away from soy products, and the gluten-free recipe for pierogi dough that I found calls for 1/4 cup of soy flour in addition to larger amounts of potato starch and tapioca flour. I imagine this is to help it be more elastic. Does anyone know of another flour that has similar...
  23. I just bought some granulated date sugar, I can't wait to bake with it!
  24. I love turkey burgers Here's my recipe: Open Original Shared Link I don't even bother putting them on a bun, I eat them as if they were a steak or a chicken breast, with a vegetable and a grain on the side. I do like them with ketchup, though. The great thing about ground turkey is it's so cheap.
  25. Here's my recipe for strawberry cobbler, could probably easily be adapted for blueberries: Open Original Shared Link
