ARCHIVED Almost There
kenlove replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks for the kind words Joe, It's great you've gotten to the point where it was a normal day -- it can only get better from here. Sure there will be an occasional setback ( Like when I found they add wheat to buttermilk -- after I drank some) but its nothing you cant deal with. Funny, I could still out shoot my 30yr old son at basketball but he ran... -
ARCHIVED Soy Sauce
kenlove replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
You right that much of what we get here is from other countries but it usually has an English label although that label does not always carry the allergens. Wish we had an Indian store or restaurant on this island! I have to order my spices from Jodaphur! Soy sauce as a stand alone product even when it comes from Japan or China always has the English labels... -
ARCHIVED Is Barley Compost Ok?
kenlove replied to Alternative mama's topic in Gluten-Free Foods, Products, Shopping & Medications
Compost bin along with wood chips and coffee pulp might be the best choice. Hope it works out! -
ARCHIVED Is Barley Compost Ok?
kenlove replied to Alternative mama's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi Highly doubt that it would be a problem as the gluten protein that affects us would not be taken in by the plant like NPK or other fertilizers, natural or chemical. I would worry more that once it dries, some part of the barley would be in the air around the garden and if you breathed that, it might cause problems. Maybe he would get a bag of some organic... -
ARCHIVED Soy Sauce
kenlove replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thanks Peter I understand it's law and that allergens must be listed but I can't help thinking there are loopholes. If I can get to the grocery tomorrow I'll look for specific products. I know many here list soy sauce way down the list as an ingredient but wheat is not listed. I don't have the faith that it means the product is gluten-free when Soy sauce... -
ARCHIVED Soy Sauce
kenlove replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It could be that many of the products here in Hawaii are old but there are dozens on the shelves that list soy sauce as an ingredient but not what it's made from. The allergen list may only say soy from the soy sauce but I would bet that it's because they don't know better and there is no enforcement here. Are there specific rules or percentages that... -
I usually get back there once a year to visit my kids, grand kids and mother in Lincolnwood and only eat at Bonefish in Skokie. Never liked Outback for other reasons although went to one in Guam a month ago. There, they had no idea what gluten or gluten free menus were. Have fun

ARCHIVED Soy Sauce
kenlove replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Your lucky if you didn't have a reaction to something containing soy sauce. Almost all commercial soy sauce contains wheat and the wheat has to be listed on the labels for the soy sauce but when its used as an ingredient in another sauce, the labeling is questionable. You can get the San-J wheat free soy sauce and work with it to make your own teriyaki... -
ARCHIVED gluten-free/cf/sf/ef Tuna Salad?
kenlove replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
It may not sound good but I used to love to mix tuna with mild mango chutney and pile it on bread with romain lettuce. At times I would chop water chestnuts into it too. Not your classic tuna salad but not as bad as it sounds. ken -
A little north of there is a place called Bonefish. Actually there are a number of them around Woodfield, Skokie, Glenview etc. They have a a great gluten-free menu. Same owners as Outback. Ken

ARCHIVED Restaurant Planning In Hawaii
kenlove replied to kenlove's topic in Gluten-Free Restaurants
I think as this progresses, we should be able to develop a good sized list of choices made from a number of gluten-free ingredients that in many cases could exclude lactose, cassin and other allergens. I would like to see the state tourism industry eventually back this type of thing. Hawaii really needs to look at different approaches to tourism that revolves... -
ARCHIVED Restaurant Planning In Hawaii
kenlove replied to kenlove's topic in Gluten-Free Restaurants
Thanks all for some more great ideas to pass on to the chefs here. Kids menu's here are often overlooked and its a great idea considering the number of local children with problems. My wife teaches primary school special ed. I also miss the whole appetizer thing. in Chicago we would just have appetizers in 3 or 4 different ethnic places sometimes... -
ARCHIVED Does Anyone Farm?
kenlove replied to ginghamkim's topic in Introduce Yourself / Share Stuff
Hi Kim, I have a tropical fruit farm in Hawaii and wish I could send you all the darn wild chickens we have who often beat me to the figs. I have some trouble with the wild grasses here which seem to bring on my DH problems. If you produce value added products from the farm, check www.localharvest.org They have done a great job for us in selling... -
ARCHIVED Freezing Pasta And Pasta Dishes
kenlove replied to missy'smom's topic in Gluten-Free Recipes & Cooking Tips
One of the problems with freezing dishes like pasta is the air thats still in the pyrex or other freezer containers. At restaurants they either use special containers, vacuum sealers or zip-lock bags. After it cools, you have to make sure the air is gone completely from the bag. I use 2 zip-lock bags. Also, as tarnalberry said you need to freeze it ASAP... -
ARCHIVED I'm Getting Gluten In Somewhere! Please Help!
kenlove replied to LoriG's topic in Coping with Celiac Disease
The cross contamination can be a major issue when others are still using bread, flour and other gluten containing items in the house. Just a few bread crumbs dropped by accident into your salad or on your plate can cause trouble. My wife has had to give up baking anything thats not gluten-free here as i wind up sick for 3 days every time I breath something... -
Sometimes they will let you order a fruit plate but not always and it depends on the airlines. You can bring fruit to Hawaii but not from here. Only long international flights have gluten-free meals and Hawaii doesnt count in that respect. You can check to see what you can buy in the Portland airport when you leave to supplement what you can bring on board...

ARCHIVED Amoxicillin
kenlove replied to kenlove's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks much I'll have to drive an hour to pick them up but guess its worth it since I've been fighting this thing a week and sick of being sick. The flu/ cold part is gone but not being able to talk at all is strange although I think my wife is happy about it http://www.glutenfreeforum.com/style_image...icons/icon1.gif Since it's Kaiser, they get... -
Hi, I'm in the middle of my first flu / cold and bad Laryngitis since I was diagnosed in 06. Doc is giving me amoxicillin to try but said to check with the Pharmacist to see if there were any gluten containing binders. of course the pharmacist said to check with the doc until I told her that the doc said to check with her. Anyway, she read off the inert...

In 2006 was also first diagnosed with Parkinson's. Couldn't focus on my left leg it shook so much. That lasted two weeks with no change on the meds and another month before they figured out the celiac. The shakes stopped as soon as I was gluten-free for a few days. With everything I read on this forum, it seems to me that going gluten-free would be advantageous...

ARCHIVED Additives To Avoid
kenlove replied to Jimmy1964's topic in Gluten-Free Foods, Products, Shopping & Medications
Every time I see / read a thread of messages like this one I have to think about truth in labeling laws and damned inaccurate and confusing they are. Sure it's getting better but eventually we will have to put our collective feet down and say that, for example, citric acid should be only acid from citrus. In recent years, i've not only had to change my... -
This seems to happen to me every few months too. One of the first times it was from licking envelops, another time from going into a friends restaurant kitchen while someone happened to be breading something. It's not always from some eaten with hidden gluten for me. Also I gave up edamame as most come from China now -- even in high end Japanese places...

HI, For me its been 18 months, I think, since diagnoses. It just takes time not only to start feeling better but also to get used to it and establish new routines. IN my first month I got sick and couldnt figure it out either asI was being so good about things. It was the licking the envelop thing that was doing me in. Now I had a real excuse for not...
