  1. I never really introduced myself to the forum. I "lurked" for a few weeks and then joined but I'm not the kind of person to walk into an unfamiliar situation and just step up and announce "Hi, I'm...." I didn't know how a forum worked and had gotten used to figuring things out myself, which includes my problem with gluten. Plus I was having problems with...
  2. Since going gluten free I had also read about ADHD kids being put on gluten-free diets and that it helps some. We went through extensive educational testing last year because I wouldn't settle for just an opinion based on a check list. Now I want to explore some possible physical/medical causes. He hasn't yet been tested for celiac but I plan to do that...
  3. Thanks anyway. I haven't been up to doing all out research on it yet but have been keeping my eyes and ears open and throwing out questions now and then to see what comes up. I've been concentrating on getting me better first. He's basically a happy, healthy kid.
  4. I have some Namaste Choc. cake in the freezer and it's been calling my name. My son loved it and he's not a "gluten -free person" as he says. Yesterday made some waffles with Pamela's mix and spread it with raspberry jam and topped it with soy whipped cream in a spray can. It was pretty good! Definitely have to do that again.
  5. Ok, this is a long shot question but I'll put it out there. On your kidney board is there any info about ADHD meds and their effect on the kidneys? I have a son who is ADHD but was born with only one kidney(healthy as far as we know) but I won't put him on meds until I know that it will be safe for his kidney.
  6. Welcome. Good for you. Glad to hear that there is someone out there doing this. I agree. My mother was institutionalized by my father 2 decades ago(long painful story) and I believe that most of her problem came from undiagnosed Celiac(I've done some detective work recently).Unfortunately she didn't get any help and so much damage was done that she has...
  7. I used a glass bottle that had been filled with Perrier I think. It was just what I had on hand. I washed and refilled the same one everyday.
  8. Last year(before I was gluten free) I drank alot of bottled water at work, I got to the point where I couldn't drink it anymore without getting mild stomach discomfort. I started taking glass bottles full of my Brita filtered water from home and that worked well for my stomach. But glass is so much heavier than the plastic bottles! Some people thought...
  9. My Indian neighbor made Dosas for me. It is made from fermented rice and ghee. The batter is poured in a pan and cooked like a crepe and served fresh and hot. They taste like a very thin, cheesy cracker. Very good. Also the one restaurant that I can always get a safe meal at is a local Indian restaurant that serves very simple, homestyle curries. We...
  10. Sorry, double post.
  11. I have a family member living with me who has lung disease so I can't use bleach or any strong smelling chemical. I use 7th Generation products. Frankly, I can't tolerate the strong chemicals anymore myself.
  12. [quote name='jollydolly1212' date='Jan 13 2007, 01:48 PM' post='256396' Anyway, I guess my most pressing concern is the bloating...it doesn't sound like it goes away. How do you know if it's bloating or just fat?
  13. I also have found great success with the nasal rinses. I do it immediately after I wake up in the a.m. but I use 1/4 tsp. salt per 1 cup warm water. There is another thread here on the subject if you do a search.
  14. I had a problem at Outback but I don't know if it was from a grill that wasn't clean or cream in the mashed potatoes that I couldn't tolerate or something else. I have had good experiences at Carrabas everytime. I order off the gluten free-menue. Last time I had shrimp scampi for my main dish, garlic mashed potatoes and steamed vegetables. I've also had...
  15. Sweetfudge, Can't help with the croutons. Have you tried the cracker recipie from Gluten Free Gourmet cookbooks. Someone brought them to a support group meeting and they were alot like Cheese Its to me. I liked them. Here are some salad recipies if you like salads. I took the first two to work alot last year. I'll give the full recipie but they work...
  16. I tried baking the Chebe frozen roll dough tonight but they came out a little different. They were supposed to be separated but they were so frozen together I just put the whole thing on a baking sheet. The flavor was very good but the texture was odd, just like mochi in the center and fairly hard on the outside. I cut the loaf in half and put it back...
  17. You're not alone. I believe my Celiacs was triggered by pregnancy but at the time I didn't know it. I was in such bad shape after delivery. Really depressed and very weak, etc. I just barely survived everyday for a very long time. I didn't discover Celiacs until 8 years later. If gluten is your problem, then it's important to get on and stick to a gluten...
  18. Yesterday I didn't have 3 proper meals and I'm finding that if I don't I crash and burn. So here's what I'm having today. It's pretty representative of a usual day. Breakfast: Pamela's pancakes, a fresh orange, camommile tea and homemade sausage patties Lunch: Leftover homemade ham, cheese, potatoe soup snack:gelatin made with knox gelatin, white...
  19. The Republic of Tea has a list of their teas that are gluten-free. I'm dissapointed to read about Celestial Seasonings but I drink their cammomile tea and haven't had any problems.
  20. The recipie for sushi rice is as follows: 5 tablespoons rice vinegar, 2 tablespoons sugar and 1 teaspoon salt Combine them in a saucepan and heat just briefly until sugar and salt are dissolved. This is enough for 2 1/2 cups raw glutinous rice or 7 cups cooked. Scoop the rice out into a large shallow pan and sprinkle and cut/fold the seasoning liquid into...
  21. Someone at a support group meeting swore they put soy sauce on the seaweed they use to make sushi, and though I've asked, this has never been the case. ( and as someone who makes sushi at home, this wouldn't work very well, so never made sense to me anyway). Kanpai! Elonwy
  22. The honey sesame sounds really good! Has anyone tried Perky O's original flavor? Are they too sweet for the savory/original Chex style mix? I'm wondering about adding homemade gluten free croutons or bagle slices too but I don't recall seeing the bagels at the stores. I saw a post about the croutons somewhere else.
  23. Here are two variations on plain old PB. My local Kroger has a cinnamon raisin PB made by a company in NYC called Peanut Butter and Co., I think. It is Yummy! and says gluten free on the label. They also make white choco. and a milk choc. version I think. Great with apples or bananas. I occasionally mix ground sesame seeds and honey into plain unsweetened...
  24. I'm adding peeled, diced raw sweet potatoes, not yams, to white sticky rice for my son's lunch tomorrow. They come out perfectly cooked and retain their shape. Same thing applies to carrots. We also add frozen green peas, mixed mushrooms or bamboo shoots. It is safe to add cubed raw chicken as long as it's fresh and you eat it when it's ready( as opposed...
  25. I often send gluten free breakfast style lunches for my son(non-celiac but we often eat the same food). Pamelas' pancakes or french toast(in his case, regular bead, but easy enough to do gluten-free) and gluten-free hormel natural ham with fresh fruit and milk. Sometimes I add a hard boiled egg. I pack a very small plastic container of pure maple syrup...
