  1. Hi Nikki, I just wanted to add a couple of quick things...this disease is so strange and can really affect people quite differently. I'm sure it was quite a shock to you to be feeling fine, take out the gluten, and now are feeling rotten! I suspect your body is going through a type of withdrawl and and it will just take some time to get the gluten...
  2. There are a great number of people who have negative blood work and/or a negative biopsy, and for many reasons... Through a regular GI I tested negative with bloodwork and also had a negative biopsy. However, I tested positive through Enterolab, and also found out through them that I have double celiac genes. I also had a colonoscopy that showed lymphocytic...
  3. NoGluGirl, I have to thank you as well. I am relatively new to this and am still feeling my way around. Your posts are always a huge help--especially those lists! Thank you, thank you, thank you. CL
  4. I was just diagnosed celiac even with a negative biopsy and negative bloodwork. My other risk factors were enough that my doctor truly believes that I have active celiac, not just gluten sensitivity. I think that the mainstream medical community has been very slow to accept that celiac is really just the tip of the gluten issue. Celiac is like the stage...
  5. This is a very timely topic for me as I just saw a new GI this week. He diagnosed me with celiac without +bloodwork and without +biopsy. I have lymphocytic colitis and double celiac genes as well. I asked him if I could just treat the colitis with medication and not go gluten free. He said that my chance of developing lymphatic cancer is very good if...

    ARCHIVED Opinions Needed!

Sugarlust...sorry to hear that you're having such a rough time, but glad you found us! This is a great place to learn everything you could possibly need to know about these kind of issues. And no one cares if you talk about your poops! Your symptoms, and your doctor, seem eerily familiar to me. I, too, had a dr. who automatically labled me with...
  7. Paula: It took me about 3 weeks to get in to see him. I'm sure he sees kids as well, though I think the day I was there I was the only one under the age of about 65 in the office. The reason that I think he sees kids as well is that his wife is celiac and he is gluten intolerant, and he has 2 young children, both of whom are off gluten as well because...
  8. For all of the negative experiences we've all had with our doctors, I finally have a good one to share. This week I went to see Dr. Scott Lewey, who is a contributor to celiac.com and has his own website: Open Original Shared Link. I went to him even though he is 45 minutes away and even though they don't yet take my insurance--because I had had such a...
  9. Forgive my ignorance, but what's CHEBE? What am I missing? Something good? More good things: -you know how to take care of yourself -when you feel good, you really feel good and you appreciate feeling good! -steak, wine and chocolate mousse are naturally gluten free -having a place like this where you can vent, whine, complain...
  10. Hmmm...can I add to that list? How about: -the deer in the headlights look from your relatives who don't believe gluten makes you sick? -spending 4 hours and who knows how much money to make a loaf of bread that tastes like crap? -having your a$$ feel like someone rubbed sandpaper on it for an hour? I can think of more, but don't want...
  11. Thanks, Ruth, actually I do feel much better today. I'm just always curious what other people's reactions are and how long it takes to recover--it's a good guage to go by. I suppose it also depends on how bad the glutening is? I'm sorry you're not feeling well--hope you're better soon!
  12. So last week I ate a doughnut. I knew what I was doing--after a month of being gluten free I decided it was time for a challenge, plus I was at the tail end of having my parents and my in-laws for a week. You know when you just are so tired that you don't give a sh$% what you eat? That's where I was. The pig-headed part of me also still thinks that maybe...
  13. It's funny--my husband was saying the same thing..."they're corn muffins, why would they taste any different?" You really DON'T think about it until you start thinking about it! I have a french bread recipe that I'll post for you tomorrow, lm--you seem to be quite the baker. I'm on the wrong computer tonight, but again, my family loved it. Tasted just...
  14. These were better than the real thing! My family couldn't get enough of them. Sour Cream Corn Muffins 1 cup Pamela's gluten free baking mix 1 cup cornmeal 2/3 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1/2 cup sour cream 1/2 cup buttermilk ...
  15. I mentioned this to a friend of mine a couple of weeks ago. Her daughter was dx'd a long time ago (I'm still a relative newbie at this). I was very alarmed because I know they go there and that her daughter always gets the fries. She said that it was a huge deal last year, but in the end the GIG (gluten intolerance group) feels that McDonald's is still...
  16. Here's one from my friend--haven't tried to make them yet, but she's a great cook! Gluten Free Sugar Cookies 1
  17. Here's another delicious one... Zucchini Cheese Pie 4 cups zucchini -- thinly sliced 1 cup onion 1/2 cup margarine or butter 2 teaspoons dijon mustard 1/2 teaspoon dill 4 eggs -- well beaten 8 ounces mozzarella cheese 1/2 teaspoon...
  18. This was my favorite before I found out I can no longer have dairy. I used to make one early in the week and eat it all week long for breakfast. Crustless Mexican Quiche 6 eggs 1/2 cup skim milk 1/2 pound sausage -- (Jimmy Dean hot) 1 1/2 cups...
  19. Here are a couple of good ones.... Greek New Pototaoes 3 pounds new potatoes -- cubed 1/4-1/2 cup lemon juice 1/3 cup olive oil 2 tsp salt 1/2 tsp pepper 1 1/2 tsp oregano 2 cloves garlic 3 cups hot water Toss all ingredients...
  20. Kaycee, The waffles are quite sweet as there is (what I think) a lot of sugar in them. Also, the vanilla is quite strong. For my 4th-6th batches I decreased the sugar by 1/2 and omitted the vanilla. I liked them better, but my kids liked the sweet ones better. That's acutally the only recipe of the bunch that I've tried, but they all are from my friend...
  21. This would be a great hearty appetizer for him--people rave over it! Lemon Flank Steak Skewers 2/3 cup olive oil (I never use that much) 4 teaspoons fresh lemon zest 1/2 cup fresh lemon juice 2 teaspoons salt 4 pounds flank steak ...
  22. I, too, am a baker. Here are a couple of recipes that were given to me by a friend and work well. Waffles
  23. Well in the end I guess most of us have families who absolutely refuse to acknowledge that ANY of them may have issues like celiac or gluten intolerance. I have both genes--one from each parent, of course. When I casually mentioned to my mother my symptoms, she started to laugh--because she has every single one of them too! But, when I suggested she get...
  24. I did have to chuckle slightly when I heard that it was wheat gluten that was the problem...contaminated or not, I guess it's still bad for all of us!
