  13. When I started several years ago mine was around 350 and considered 'normal' by the lab standards but I certainly felt off. Two of my doctors like to see it about 500.   15. You might consider keeping a food journal. It really helps a lot when you are having sporadic issues.
  16. Kathy is correct. Most Xanthan Gum is derived from corn. It can also be derived from soy, etc. Namaste products use Xanthan Gum that is carbohydrate free and is not made with soy or corn (although I'm not sure where it comes from).

  21. Well that certainly sounds like a gluten reaction to me! I know it stinks (no pun intended) but you really need to sufficiently load yourself up daily with gluten for 6-8 week for the tests to be accurate. I hope you find your answer although I think you've already figured it out!
  22. Me either. McCormick is on my rather small list of absolutely trustworthy companies. I trust McCormick over most grocery store brands.
  23. Oats are a tricky beast. They are OK if they are certified gluten-free but even then a certain percentage of celiacs can't tolerate them. It's generally recommended that you aviod oats until you are healed and introduce them slowly. Open Original Shared Link Open Original Shared Link
  24. There was a discussion about this recently but I can't put my hands on it. Peter had a really good post about what can/can't cross the border. Hopefully he will chime in later. As a general rule of thumb for any customs it's organic matter like fresh meat, vegetables, dairy products, etc.

Gluten is not required to be listed and can hide in things (barley is especially troublesome and hides in natural flavors, etc.) so I'd recommend you purchase products that are on gluten-free lists or come from reputable companies that clearly label all forms of gluten.
