  8. Great topic! I've found that the flours all have their own flavors and cannot be interchanged without affecting the taste of the baked good. Sorgum flour tastes nutty to me. Ruined my chocolate chip cookies I've also learned that most gluten-free recipes need to sit for a few minutes after mixing (don't over mix). Somehow sitting helps the lumps...
  9. Don't overlook the cool factor in your childs lunch box. My daughter informed me that the other kids were making fun of her lunches. (She has nut allergy. And eats home lunch everyday) At that point her only lunch option was rolled lunch meat in one baggie and bread in a separate baggie. I have no idea why, but that was her favorite.   10. Just because of your brother being a Celiac is enough of a reason for you to be tested. You should look into the gene test too. Keep in mind, do not stop eating gluten if you plan on getting a biopsy diagnosis. Continue eating normally until the bloodwork and the biopsy tests are completed.   17. Another option is to look into the Entero Labs diagnosis. It is less invasive than a biopsy and you do not need a dr to request the test. That might give you the "solid" proof you are looking for. Does your son have any symptoms of Celiacs? If yes, try the diet. If no, I would get the Entero Labs test and wait for those results to make my decision.

Always had shockingly low iron and gastro problems of all sorts.   25. My super picky "real Milk" loving child loves "English Bay Original" it a potato milk. My little chocoholic sillyhead loves "Manitoba Harvest" Hemp Bliss-choclate flavor! We also use WestSoy Rice milk for baking. None of them will brink a glass of it!
