    Roxie, welcome to the board. I have learned to bake gluten-free - it takes a little extra effort. There are some good mixes that people here use for cakes (gluten-free Pantry, Namaste are two) that work. Or you can make them from scratch like I do. My kids BEG for my gluten free brownies and gluten-free carrot cake. Don't jump right into the replacement...
