  1. Hi Ali, Its good to hear that you have improved such that you can have an apple a day etc. Without the fruit etc. I have improved quite a lot overall, candida/fungus wise. this ear thing has been persistent however. Am not sure if it was brought on by using a cell phone or two courses of heavy duty antibiotics to get rid of the effects of a tick bite...
  2. Am going to do another zucchini casserole--this time with chicken! I think fresh chopped basil is part of the secret. Last time I also added a bunch of chopped celery tops. I will look for that mandolin food processor here in San Jose, CA--and try ebay too! I'll let you know if I find one... Bea PS--I am starting to swab my ears with water that has...
  3. Not to appear ignorant, but I thought a mandolin was a stringed instrument...rather than a cooking device. Where might I get such a thing?
  4. Liz--I was inspired to do something with Zuchinni by you saying you use it to make noodles. How do you make them?? We have tons of zuchinni's. Meanwhile we have been making kale, cucumber and zuchinni smoothies by just putting them into the blender with a little water. Its a great pick me up. Very vitalizing. Very easy when you don't want to cook veggies...
  5. The Last two times I got glutened (one from breathing in wheat flour dust and the other time from a kiss) it took me five weeks both times to get over it. I could hardly believe it. It will pass, but I bet you won't make the same mistake twice, if you can help it! Meanwhile, eating more simply and detoxing with some liver and lymph cleansing herbs plus...
  6. Hi Rawvegan, Health can be such a complicated, frustrating thing. I suggest you look forward however and don't give up. No doubt you will unravel the puzzle with applied persistance. Have your doctors checked your vitamin levels? You could be low on B12 most especially if you are a vegan. You might also be low on vitamin D, commonly gotten from fish...
  7. Zuchinni cheddar cheese/shrimp casserole: I came up with a scd casserole recipe using zuchinni, cheese and shrimp(or chicken etc.) as a base. I sliced two foot long (plus) zuchinnis up--and chopped them fairly thin. I put one whole chopped and sliced zuchinni in an oiled deep roughly 10 inch square pan, then added a layer of fresh chopped basil, chives...
  8. I put it on cooked squash and greens just before I eat them. Also not bad as part of the oil for salad...
  9. Hear hear to that, Lisa! Beautifully said. I totally agree. Am just starting to write some memoirs with celiac as the underlying theme. Compassion out of suffering has got to be there... Bea
  10. I have read that in studies done at mental hospitals, if the patients were taken off common allergens, 80% went into remission. Why the mental health people in this country keep pushing pills instead is beyond me. Be glad you have an honest practitioner helping you! I too have noticed that one of the ways I have been affected by celiac is through personality...
  11. Just wanted to note that celiac often makes the personality irritable. I am recalling that the transition often isn't always easy. Make sure too you are not getting cross contaminated (CC) with gluten. I have learned to always wash my hands before putting anything to my mouth. In addition, squash, roots and leafy etc. vegetables and a little chicken is...
  12. My point is that if it really bothers you doing a bit of politicking is your best bet for eventually changing the university's awareness--and eventually altering their financial actions to benefit you and other university students with celiac and gluten intolerance.
  13. It does take some time. You can however buy gluten-free pizza crust mix and buy/make the filling. Many of us however are also sensitive to milk products, esp. at the beginning. So be careful! HOwever no matter what, eating gluten-free pizza won't be as bad as actually eating gluten.
  14. About the B-complex. I don't tolerate sorbitol at all either, so sublinguals have been out. However I also have had difficulty making adequate use of regular B vitamins. Fortunately I discovered that Country Life makes some good co-enzyme B vitamins. I take them on an empty stomach. They are great since they go directly into the blood stream instead of having...
  15. Hi Michelle, Thanks for the advice! Squash I think would make a good egg replacer too, though without the nuts either it gets a bit iffy... I might be able to use sunflower seeds instead of the nuts however. I did eat an egg the other day and it seemed like it was OK. At this point I am going to limit it to once a week to start since my reaction...
  16. Am finding I should go off fruit as well as the cheese--and for now the honey is out of the question. My old skin reactions are coming back plus I notice my urine is starting to get cloudy if I have these items. The good news is that I now know I can have these things if I really want to--but just once in a while at this point. Its nice to now have a yogurt...
  17. I understand your anger. It looks like the university has a big learning curve to make on this issue. If the university is unwilling or unable to accommodate you then you should get some kind of financial break I would think. Due to this being about what we eat the social implications and feelings of being left out can feel like a huge hurdle. However...
  18. I am curious at what tips people will give you. I don't have children. However my family has suffered from the effects of a mother who was restricted from gluten as a child and then turned around and did not protect her children (or herself) even though she should have known better. This same syndrome seems to be happening with my eldest sister. Her children...
  19. Just goes to show we are all different, eh? Even last night when I again had trouble sleeping it was the sunflower seeds that seemed to calm me. Why I don't know except that they do have both protein and lots of B-1. And face it, my nerves are still bound to be somewhat whacked after all those years of getting at least trace gluten. Meanwhile Pele I...
  20. It may be that most grains are fine for you, its just for me and some others here who are really sensitive who don't do well with grains. Some of us have found in addition however that by being on this diet its way easier to get rid of the candida or candida like symptoms. The scd doesn't mean no carbs however--just no carbs or sugars that form complex saccharides...
  21. I also want to add that some of us are so far gone that we have trouble if we eat any grains at all...though glutenous grains are by far the worst.
  22. I have often wondered the same thing. My take on it has been that celiac indicates an auto-immune reaction to gluten whereas gluten intolerance is an allergic reaction. I agree however that its often difficult to tell the difference. Where in my opinion there may be a difference is in cross contamination (CC). I may be wrong, however CC seems to be less...
  23. Ah--we are led to believe that gluten is the main problem maybe with also a milk allergy. But like you many of us are pretty restricted well beyond that as well. I am having some real success at improving my diet by going on the specific carbohydrate diet (scd). You might want to check it out. I actually have found that with it I can expand my diet a...
  24. Sounds like an interesting experiment Pele. I hope it works for you! I typically have trouble getting to sleep before 1 or 2 AM. I figure its habit due to years of having an uncomfortable body--as well as degraded nerves, old injuries and of course the celiac. The truth is that I improved after I went off all trace glutens a little over a year and...
  25. I just wanted to add that I have had problems with the cheese. Its very possible that could be the culprit. Alternatively (to the yogurt) you could try the fermented cabbage. Am glad to hear that about the egg. I just tried one--am hopeful it will be OK. So far at least so good. No brain fog... Bea
