  4. The ADA says that about 1 in 20 people with Type 1 have celiac. I think your drs need a refresher because they seem to be willing to let your entire small intestine flatten before they'll recognize something is wrong.   6. I agree with Rachelle. Your really making a savory cream puff, so you should be able to sub in any gluten-free flour mix. If you don't have a mix, I use a light starch mix like white rice flour/cornstarch. Let us know how they turn out!

  11. Sure, all those are things you can see with celiac-or not. The only way to know is get the blood test or commit to a strict gluten-free diet for a few MONTHS.   14. Thanks for posting that link, Jestgar. I had a mini-meltdown recently because my kids sat down and ate an entire bag of Glutino pretzels while I was gone for about an 1.5 hours. This was right after I had fed them a full breakfast. I really wanted pretzels and a Dr Pepper that evening.
  15. Being anemic can cause this as well. This is very common in people with celiac. You need a ferritin test as well as a CBC. Other signs of iron anemia- chewing ice, shortness of breath, dizziness when you change positions, and unrelenting fatigue. Some folks do have low bp, but if this is a change for you, it isn't normal.

I had many of symptoms of celiac that aren't commonly recognized--unrelenting anemia, neurological problems and such. I was diagnosed with pernicious anemia (b12) in my early thirties.   17. I think it helps to think what would you tell a friend who came to you with the same complaint. Would you tell her to suck it up loser?   18. It can improve, although it goes very slowly--think years. I was diagnosed with pernicious anemia first and started b12 injections. Those helped, but it wasn't until last year that I could say I don't have the pain/tingling sensations very often. I do get those on the couple of times I've gotten gluten.   19. Also, to add to all the good info Roda gave you, it's best to avoid even gluten-free oats if you are recently diagnosed. They're something to be added cautiously after you've had a chance to heal.
