  1. Spinach, raspberries, almonds, and broccoli are good sources of fiber. I recommend this site if you are interested in the fiber content of certain foods: Open Original Shared Link

  5. Yes! My boyfriend and I got engaged on Christmas Eve. We are planning a summer wedding!
  6. I am also planning a wedding! What I decided to do was have a turkey dinner since there isn't much gluten in a turkey dinner. The chefs will cater to special diets and they are going to let me come in and look at the kitchen and explain to them what has to be done in order to prevent cross contamination.
  7. Someone just posted here a few days ago that the blue diamond products are produced in a facility with wheat. I've eaten them before with no problem, but I am staying away from them now. I don't want to take the chance of getting contaminated.
  8. Casein can cause symptoms very similar to gluten. I've read somewhere that the structure of casein is very similar to gluten, therefore some celiacs have problems with casein becasue their antibodies may mistake it for gluten. Also, I am on a dairy and gluten free diet and I don't mind it at all. I actually just posted some dairy and gluten free recipes...
  9. I saw in your signature that you were diagnosed in November 2005? You may just need more time to feel better on the diet. I didn't start to feel better until 6 months on the diet and most of my symptoms were gone after 1 year.
  10. That's a great idea! You could invite them over to your house for dinner and you can do the cooking. This way your son will still get to see his grandparents and he will be safe.
  11. I'd be interested to know how your trip went I really want to go to Italy within the next few years.
  12. Are you sure that you are 100% gluten free? Gluten can make me feel very tired. Also, maybe you are intolerant to another food. Have you tried eliminating dairy products?
  13. How long have they been gluten free? Most people take about 4-5 months to start feeling better on a strict gluten free diet. I didn't start to noticing improvements until around 6 months on the diet and the rest of my symptoms starting disapearing after 1 year! If you suspect casein intolerance, I would suggest eliminating it 100% from their diets. This...
  14. What are you eating for protein? Turkey, fish, and shrimp are very high sources of protein. I've been eating a lot of fish and shrimp lately and I've been noticing improvements. For example, I don't get as hungrey as mush as I used to and I don't feel wiped out like I used to after soccer games. I also find that fruit smoothies give me lots of energy.
  15. I've read somewhere on this site that drugstores sell gluten free food in Italy.
  16. Vegetable Casserole 1 cup uncooked rice (basmati is my favorite) 1 bag of baby carrots 4 stalks of celery, diced 5 green onions, diced 1 onion, diced 2-3 cloves garlic, diced 1 can Kidney beans 1 cup Planters cashews 3 cups broth (use more if needed) optional (about ½ cup of mushrooms, 1/4 cup parsley) Put the rice on the bottom of a casserole ...
  17. There was a great website posted on this thread for traveling all around the world, including Europe: Open Original Shared Link Some of the Inns/hotels/Bed and Breakfasts have celiac owners, celiac in their family, they are gluten free aware, and I even read about one in Italy that is purely gluten free. Here is the site: Open Original Shared Link
  18. You could still have an intolerance to dairy or wheat.
  19. I substitute regular milk with soy milk with no problems.
  20. We have to wash our hands everywhere we go, so esentially we could be washing our hands with gluten! That can't be safe! Why does soap need gluten anyway? I have an idea! Replace the gluten with carrots
  21. That's irritating. Yeah, I would just call them. I call my doctors office when I am expecting results and can't wait any longer.
  22. I have had two tests for wheat allergy, a blood test and a skin prick test. The skin prick test was a 3/4 rating, meaning that I am quite allergic to wheat. And, I had a blood test for wheat allergy and my GI doc said that is was postive.
  23. How cute! Is that your dog or just a picture?
  24. Do many soaps contain gluten?
  25. I eat the almonds with no problem. I don't think that the ones I buy have that warning on them. However, I think that I will stay away from them now since you mentioned that they are processed in a facility with wheat. I am also very sensitive and I don't want to risk a gluten contamination. Also, they are too salty.
