  1. Beth, I had a lot of extra mushrooms left over from a recipe and I was trying to decide what to do with them and the first thing that I thought of was your dancing mushrooms recipe! So I tried a variation of your dancing mushrooms recipe tonight and I thought it was great!
  2. If you do not want her to go back to eating gluten, you could ask your doctor to have a celiac gene test done. If she has the celiac gene and is reacting to gluten, then I think you could safely say that she has celiac disease. If she doesn't have the gene, she could be gluten intolerant.
  3. Bad news for me I've tried the Butterball turkey bacon and the franks and I have reacted to both. The turkey bacon reaction was very subtle and I wasn't even 100% sure that I was reacting to the bacon at the time.   7. I would find giving up rice and potatoes very hard. I do eat a lot of vegetables, fruits, and meats, but I just don't think I could ever give up rice. Rice helps to fill me up when I am super hungrey. What do people on the SCD diet eat to fill themselves up if they can't have rice or potatoes?
  8. You could always use regular children's cookbooks and just modify them for the gluten free diet. I modify regular recipes and my food always turns out great. Try Kinnikinick's all purpose flour mix in recipes.
  9. I'm guessing that you may be having a gluten reaction. When I accidently eat gluten, I will also sleep for hours and still be tired.

  14. I can feel nauseous from gluten and I also can get fatigue, brain fog, GI symtoms, chicken pox like bumps on my skin, and stomach pain. Have you eaten anything unusual? What do you think was contaminated? And you are right, you could be sick from the water, if you were drinking it.

  17. So you never noticed them before going gluten free? I noticed them for the first time about 10 months after going gluten free. Mine can also itch and I usually get them on my legs.

  19. I can get flu like symptoms when I accidently eat gluten. At first, I will have a hard time distinguishing a gluten reaction from the flu. My other gluten symptoms soon rule out the flu though
  20. I almost wonder if the lays chips in Canada are produced differently than in the US. Does anyone know? I got quite ill from eating regular lays STAX. Also, a number of people on this site have said that they see "naturally free of gluten" on the containers. I have never seen a container of lays that says that and I've looked at quite a few stores.
  21. I started feeling better after 6 months on the diet, but most of my symptoms didn't start to disappear until after 1 year on the diet. I developed an intolerance to dairy around the same time I started getting sick from celiac disease. I still cannot tolerate dairy products.
  22. I eat Old El Paso corn tacos shells. I have a recipe for gluten-free soft taco shells if you are interested. They are made similar to pancakes.
  23. Lays chips have made me sick in the past. The ones that made me sick were on dedicated lines. I'm guessing that the reactions that I had from the chips were from dairy contamination, but I really have no idea. I just avoid them altogether.
  24. For salad dressing and mayo, I always get Kraft. Almost all margarine has whey in it, so I get Earth Balance, which is made from soy. For condiments, I usually go with Kraft or Heinz. If you're looking for peanut butter, Kraft and Skippy are ok. For Breakfast, I usually have 2 pieces of Kinnikinick toast with Smuckers blueberry jam and some fruit. I've...
  25. My reactions vary. They can last for a few days or they can last for about two weeks. When I am very sick, I find that the best thing for me is to fast until I start feeling better.
