  4. Ok, SOMEHOW the whole extended family ended up invited to our house for Thanksgiving this year. Now it's ok... I like to cook, and I like to cook for large numbers... But the biggest thing I'm worried about is the gluten-free stuffing. Two concerns: 1) Is it more likely to turn mushy than regular stuffing? 2) I want to dry the breadcrumbs...
  5. I'd sub potato starch. I know the recipe calls for 1/4 potato starch already, I'd just add in additional 1/4, and cut out the cornstarch.
  6. I think the ratio for xanthan gum is 1 teaspoon per 1 1/2 cups flour. I always mix my own all-purpose flour, and I use Betty Hangman's blend- 2 parts rice flour, 2/3 cornstarch/potato starch, 1/3 tapioca starch. I go to that effort because it's less expensive. But I've also had excellent results using Gluten Free Pantry's Beth's All Purpose Flour Blend...

  8. I agree. When I cut an onion at room temp, I also have tears just streaming down my face, and snot too (sorry). But I noticed when I grab a leftover half an onion out of the fridge and cut that up, I rarely have any problem at all. I think they need to be really cold.

  14. A couple days before Halloween, I did a little experiment. I am self-diagnosed. Enough of my 1st degree family members are dr. dx'd Celiac or home diagnosed, that I thought I'd give it a try. And I am feeling much better on a gluten-free diet! many annoying symptoms have resolved or decreased. But I keep having doubts, and thinking it's all in my head...
  15. I'm not sure... the first two thinks I think of when I hear "Gatorade" are sugar and salt. Gatorade is high in both. The corn chips were probably high in sodium, too. I don't really know much about how sodium can affect you. I'm just thinking of what was in what you ate. You might want to think about calling your dr. office today to see if they have any...
  16. I'm sorry you're having such a hard time. When my mom had her blood tests, I think it took about a week to get results, but they mailed them instead of calling- so that took longer than it should have. So hopefully you'll have your results soon! I'm betting your doctors are really going to want to do an endoscopy, especially since ulcerative colitis...

I had to go pick Luke up from school early today, he is sick AGAIN! He's gotten sick several times recently, and I just can't track down what it is!   19. I think the BK fries have a coating on them, which is suspect. But even if not, they fry them with the onion rings, and then dump them in a bin with the onion rings. I don't see how they would NOT be cc'd.

  21. I used to eat bourbon chicken in restaurants, but lately I skip it since most soy sauces have wheat. This is the recipe I'm trying out tonight.   22. Betty, are you making bourbon chicken??? I am making this tonight! But I'm substituting apple juice for the bourbon. I've never made it before, but I read that the bourbon can give it a really "strong" taste, and that apple juice is a perfect sub- it's just milder. I thought I'd give that a try because I'm hoping the kids will give it a try.
