  1. That's my vote, too. And start eating gobs of gluten.
  2. Sarah--I don't know if Ezra can swallow pills, but we always gave Victoria the OTC Zantac when we thought what she had was reflux. Of course, it didn't help, but I never filled the RX the doctor gave us. Maybe that is an option. $50 is too much!
  3. totally unrelated, but... do you teach at CU? my celiac daughter is performing there with the colorado shakespeare festival this winter. i suppose your issue could be any number of things at this point. i suppose i'd listen to other more experienced folks here more than me and just keep an eye on your symptoms. can you take a picture of your rash...
  4. I wouldn't rule it out, espec. since your sister has it. Is there anything that has happened that might have triggered the onset?
  5. Do you have other dietary reactions besides after drinking beer? Have you tried avoiding gluten for a period to see if that improves things?
  6. You're probably too old for this to be a real option, but have you been checked for T1 diabetes? Do you have a good doctor to work with?
  7. everything gluten free is bass-ackwards. just when you think you know how it should be, you have to do it exactly the opposite to make it edible. one mistake along the way and you have hockey pucks or dog biscuits!
  8. Can you do dairy? Maybe cucumber sandwiches on Chebe with some cheese? I'm feelin' for ya man. You must be starving.
  9. Spatula. Check. I'll ask her how she feels about me being there. I don't know if I can stay away. Other people cooking for her freaks me out.
  10. It might be few enough students to do that. For some reason I remember last year was around 30 students or so? They only have honor roll for grades 4-8. With only 285 at the entire school and about 10% of 4-8 graders making the honor roll, 30 is on the high side. I'm just wondering how much Pamela's mix I'd need. I can get the big bag for $12.99, just...
  11. If she's still losing, there could be more of an underlying cause and it might be wise to meet with a GI. Other than that, while you wait to see the GI, keep up the gluten-free diet. You're right---you don't have to reintroduce gluten to try and get a positive test. If it's helping some of those symptoms then that is a GOOD thing. It also might take a few...
  12. Thanks ladies! I was hoping the dressing would mitigate some of sticking-to-itself that happens when it is in the fridge. I think I'll give it a try this weekend. My pasta salad has always been a hit and it might be one more thing I could add to the packed-lunch menu as well. Plus, I want to try adding some salmon pieces to it to up my daughter's intake of...
  13. You might see what "American" restaurants are there. I know there is a Margaritaville in Cancun and you can look up their menu online. If you can get in touch with "Chef Dan" who is kind of the main chef for all the M'ville places, you might have some luck as well, if you can pre-plan your visit.
  14. I didn't try Joni's recipe last night but should have! I tried to wing it. I had to bake it for about 45 minutes covered then another 30 uncovered before the noodles were done (I didn't boil them). Plus, I just kinda tossed everything together for the layers and should have taken more care. It tastes fine (especially as leftovers), but I'll be...
  15. We did Chebe for Thanksgiving. I rolled the balls just slightly smaller than the size of a golf ball, and they turned out great. Definitely pretty hard on the outside and a bit doughy (but cooked) on the inside. I used the cheese kind rather than the all-purpose as well, and added the recommended dose of baking powder also. Once they cooled a bit, I put...
  16. Have you been tested/considered for OAS? OAS is oral allergy syndrome and is an irritation that results from eating many raw fruits and vegetables. I don't know much more about it other than my daughter's teacher has it. Not quite the booger that Celiac is, but a pain, nonetheless.
  17. I'm considering that option as well. Right after the breakfast she is not going to school, but to a dress rehearsal/performance for a play she is in with a local theater company so I might just be there anyway.
  18. I make really good non-gluten-free pasta salad, but my experience with gluten-free pasta is it does NOT taste good cold, such as with leftovers that must be reheated. I saw the Tinkyada multi-colored spirals in the store last week and picked some up, feeling hopeful about converting my old pasta salad recipe to gluten-free, but I'm worried it would just...
  19. That was my first thought as well, but I think she really wants her principal to cook it for her. I think if she's the only Celiac there then I'll just premake everything (it's pancakes and sausage so super easy). But, there's 2 other Celiacs at school so if they made the honor roll, I might talk to those parents and see what they are going to do or have...
  20. So, my daughter made the principal's honor roll at school. It's quite a special achievement at her school, and for her personally. The principal rewards all the kids who make the honor roll with a pancake breakfast. Panic. Panic. Panic. Panic. I'm trying to figure out how to make this work without just making her breakfast and sending it in (to...
  21. Well, sometimes we let our daughter have a meal before we go somewhere to eat, like a family member or friend's house, so she's not as hungry and make sure there are a few items there (usually we bring them) that are gluten free and very yummy. The biggest disappointment is this year on Christmas Eve my husband's step mother is making gumbo and she...
  22. Thanks SO much everyone! I am still lovin' the Chebe. I made some more rolls and am going to get more experimental! I have a tortilla press so I'm really thinking tortillas are next on the list. And some sammich style formations. Oh the possibilities!!!! This is a MUST for every gluten-free eater!!! And it's not just gluten-free--it's free of most everything...
  23. My biggest fear is also the "gluteny spoon" when eating at our family member's houses. They get Celiac Disease and WANT to get it right, but unless you really live it every day it's easy to make those mistakes. Our biggest problem is with my husband's step mother and my husband's grandmother. They are very attached to a lot of their old recipes and just have...
  24. Thanksgiving went really well for us, and it wasn't even 100% gluten free. The turkey was fine and I made gluten-free stuffing and mashed potatoes and some Chebe rolls. That was what my daughter wanted. Christmas I expect to be a bit trickier. One, because of the disappointment of not being able to eat many of the goodies readily available. We are combating...
  25. My daughter's school friends are starting to catch on to the gluten free thing, and understanding why she is so protective of her space and food. She is 10. There is a boy in her class who seems to have taken a liking to her. His family is very "green." They even have a wind turbine in their front yard! They are very much into whole and natural foods, and...
