Brett, I understand what you are going through. When my daughter went gluten free, I over-compensated with extras treats . . . ice cream, candy, whatever. I did not want her to feel deprived. If she was someplace where all the other kids got a cookie, then she got something later that was twice as good/bigger/unhealthier. Once she got use to the diet...

Maybe they are planning a coop coup? -
We'll be having a traditional Easter dinner of . . . lasagne . . . I'm lousy at baking ham (I always overcook it . . . I'm afraid of underdone pork) and I don't want to buy a Honey Baked ham for just the four (possibly five) of us. Plus I'm gonna try my hand at that flourless chocolate cake that Sylvia posted on another thread.

ARCHIVED How Long For Diet
Darn210 replied to October3's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It really does depend on the person and the type of issues they have. Many people with digestive issues see improvement pretty quickly. People with nerve damage/neurological symptoms take longer to recover. But it isn't as easy as that . . . my daughter's symptoms looked like digestive issues (regurgitation of food) however, it took about 10 months for... -
ARCHIVED How Long For Diet
Darn210 replied to October3's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
We did a trial run for my son with input/supervision from a pediatric GI. He wanted 6 months. I think 6 months is fair. Some people show immediate results. Some people don't. Unless you actually show positive results in just a few days, how can you tell which category you fit in? Lack of results in two weeks does not necessarily mean that gluten... -
ARCHIVED Just Diagnosed. Confused And Curious!
Darn210 replied to wook's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Welcome wook!! Positive is positive. My daughter's GI thinks that it is just a matter of time before the diagnosis will be made based on a positive blood test only and that the Medical community is slow to change from the old standard of requiring an endoscopy (which was required with an older less accurate blood test). That being said, if the... -
ARCHIVED Very Emotional
Darn210 replied to Katrala's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It's a grieving process . . . it's very normal to be emotional. My daughter was diagnosed 4 years ago. She didn't understand but I did and like a good mother, I did her grieving for her. I was the one that started crying because she couldn't have McDonald's chicken nuggets anymore. It does get easier. -
ARCHIVED 4 Day Hiking / Camping Trip
Darn210 replied to Katrala's topic in Coping with Celiac Disease
Items like salads and cut fruit, I would ask the kitchen to set aside a small bowl for you so that it doesn't even hit the buffet line. If you like Ranch dressing, Hidden Valley makes individual sealed servings so that you don't have to refrigerate them (We use them when we travel). If you take a loaf of gluten-free bread (for four days, I don't... -

ARCHIVED Recommend An Online Store For gluten-free Products?
Darn210 replied to DesertDogs's topic in Gluten-Free Foods, Products, Shopping & Medications
You can get the Pamela's from amazon, don't know about the other items. If you use their subscribe and save program, you save an additional 15% and it's always free shipping even if you don't meet the $25 minimum. It's like placing a standing order but they always notify you (by email) when they are about to ship so you can cancel or delay it. You can... -

. . . Smackl loved it . . . . . . now he may be asking for a chinchilla soon ... I don't see why not . . . as long as he holds out one of his little fingers toes whilst he is sipping his tea. -
ARCHIVED Arrowroot/potato Starch
Darn210 replied to WinterSong's topic in Gluten-Free Recipes & Cooking Tips
Let us know how it goes. I've always heard that you need to use at least two and preferably three or more flours to replace wheat . . . and that one should be a starch or a light flour so it doesn't get too heavy. I think you are on the right track. I inherited a bunch of different flours from someone that was on a gluten free diet with just about any... -

ARCHIVED Cold Lunches - What To Pack For My Son?
Darn210 replied to SandraD1971's topic in Parents, Friends and Loved Ones of Celiacs
I send a small container of peanut butter in the small size glad ware (I don't fill it up, it's just a nice size to stick in a lunch box) and Glutino pretzels for dipping. She used to take corn thins (thinner than a rice cake) and spread her pb on it but she got tired of that. Tuna/chicken/ham/etc salad scooped up with the tostitos scoops. A special... -
ARCHIVED Short Stature Only Symptom
Darn210 replied to Debra Baum's topic in Coping with Celiac Disease
You've still got lots of time for growing. Like Ravenwoodglass said, after you've given the gluten free diet a good try and IF you haven't seen some decent results, there is still plenty of time to pursue growth hormones if you want. In the meantime, ask his grandmother what his dad's growth curve looked like. My husband's family all ran a little small... -
ARCHIVED Best Stand Mixer?
Darn210 replied to MichaelJacksons#1Fan's topic in Gluten-Free Recipes & Cooking Tips
I have to agree with Sylvia. I finally broke down and bought a KitchenAid when my daughter went gluten free. I bought a bread maker at that time also. I would totaly give up my bread maker. No way will I give up my KitchenAid. I got mine at Bed Bath & Beyond with one of their '20% off one item' coupons. -

Wow . . . I guess everyone was busy yesterday!!! Well, I can tell you that I went birding and then came home and finished Sarah's Key. I did realy like the beginning of it . . . the ending was fair . . . I wanted to hear more about Sarah and less about Julia. It is better than the last few books we've had at book club. Today is all about mulch... -
ARCHIVED Can't Believe I Glutened My Son :(
Darn210 replied to hockeymomofceliacchild's topic in Parents, Friends and Loved Ones of Celiacs
It happens . . . we've been at it for four years and it just happened on Spring Break. Hubby let my daughter eat Rice Krispies at the hotel breakfast spread. He even read the ingredients as well as my daughter. They were concentrating on finding "Wheat, Rye, Barley, or Oats" that they missed "Malt". It didn't help that I had told my daughter a while back... -
ARCHIVED What To Do With Frozen Pre-Cooked Shrimp
Darn210 replied to zoogirl's topic in Gluten-Free Recipes & Cooking Tips
I saute some mushrooms in olive oil or butter with onion and garlic (and whatever spice looks good), throw in some shrimp and leftover pasta and heat through. One of my favorite meals and I only cook it when I'm on my own . . . I'm the only one in the family that will eat shrimp or mushrooms. -
ARCHIVED Do You Eat Foods Produced On Shared Lines?
Darn210 replied to zus888's topic in Coping with Celiac Disease
My daughter eats products off of shared lines. She has not had any problems that I couldn't trace back to something I did wrong Yearly follow-up blood tests have always been good. It depends on the sensitivity level of the individual. -

HiYa Sooze . . . good to see you . . . hope you come back!!!! Somebody asked what the book was for book club . . . twas "One Day" . . . it was all right. I seem to have pretty nuetral feelings about it. Now . . . on spring break I read the Hunger Games trilogy and that was fan-f&@#ing-tabulous. Next book up is Sarah's Key. I'll let you know...
