ARCHIVED Swapping Pamela's Baking Mix For Flour In Favorite Recipes
Darn210 replied to Cara in Boston's topic in Gluten-Free Recipes & Cooking Tips
Definitely can be used in choc chip cookies. I think there is some help on the Pamela's website . . . or maybe it was on the back of the bag . . . anyway, to convert your old recipe, you will most likely want to reduce your fat ingredient (ie butter or shortening) and use 1/2 of what your recipe calls for or perhaps a little more. This is because of the... -

Peter and Jacquie, So sorry to hear about Tuppence. What big hearts you have to take a wee kitteh that came to you in such a manner. I think animals know when they have been rescued such as this. Here's to fond memories of Tuppence and all of our pets who have passed. -
ARCHIVED It's Wednesday And I Still Can't Shake A Mean Case Of The Mondays!
Darn210 replied to kaki-clam's topic in Coping with Celiac Disease
The thing about sugar is that it makes you want more sugar . . . what works best for me is that when I give into the craving, to also eat something else . . . something in the protein family. If I'm eating cookies then I drink a bunch of milk . . . they go nicely together and I will stop with the cookies much quicker. Eat a handful of almonds or a spoon... -

Darn210 replied to Meg123's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I would still ask to be put on the cancellation list and since he's only available in a fortnight, I would even be prepared to go in at the last minute . . . that is, not eat or drink after midnight or whatever it is and tell the secretary/nurse that you are doing that so if there is a cancellation that morning you are prepped! It's not something I would... -
Just also wanted to add that you shouldn't worry about offending your doc by wanting a second opinion. In a conversation with my former OB/GYN (she left her practice to go to law school ) she gave me some great advice . . . If a doctor is upset that you are going for a second opinion, then you don't want them for your doctor in the first place.

ARCHIVED I Can't Stop Blathering On
Darn210 replied to catsmeow's topic in Coping with Celiac Disease
This was me . . . anytime anybody talked about their health, it seemed that some if not all the symptoms could be attributed to gluten intolerance/celiac. A lot of times but not always, I managed to bite my tongue and keep my mouth shut. The person that got to hear it the most, though, was my husband. It got bad enough that at one point when I was talking... -
ARCHIVED Pizza / Baking Stone Vs Pizza Pan?
Darn210 replied to sreese68's topic in Gluten-Free Recipes & Cooking Tips
Holes, Holes, Holes!!! We like thin and crispy here. The holes in the pizza pan really prevent the moisture build up . . . but all crusts are prebaked . . . Udi's frozen crust when we need pizza quick or prebake from gooey dough in a regular pan than transferred to the pan with holes. Likewise when we do crust from scratch, we do several and freeze the... -
ARCHIVED I Can't Take It Anymore
Darn210 replied to shadowicewolf's topic in Coping with Celiac Disease
Speaking from experience, my heartburn took a couple of months to resolve itself even on prescription meds (of course, I let it get really bad before I sought medical help). Propping the head of my bed up a couple of inches helped quite a bit. -
ARCHIVED Meatloaf Recipes? Anyone?
Darn210 replied to momtok&m's topic in Gluten-Free Recipes & Cooking Tips
Prior to gluten free, I used saltine crackers in my meatloaf as my bread/grain/carb component. After taking my daughter gluten free, I experimented with several different options and settled on chex . . . although I wasn't completely satisfied with the chex (texture was OK, but the taste was off). I now use 1/2 crushed glutino pretzels and 1/2 crushed glutino... -
Poppi, just wanted to let you know that you are not alone as I have seen this on the board before (I'm not actually a coffee drinker, I prefer tea). I have seen that some people have successfully reintroduced coffee after giving their guts a chance to heal. Also, some have successfully switched to decaf instead as caffiene was the problem. You might want...

ARCHIVED How To Handle Playdough In The Classroom?
Darn210 replied to concernedmamma's topic in Parents, Friends and Loved Ones of Celiacs
I work in a preschool as well (2 and 3 year olds) . . . can't tell you how many times a day I say "don't put that in your mouth". So, I will only tell you this once . . . Don't put the playdoh in your mouth!! As an adult, you have the advantage of knowing AND remembering to wash your hands before you eat. With gluten foods (in addition to... -
ARCHIVED My Son's Sad Look Upon His Face
Darn210 replied to Karl Otto's topic in Coping with Celiac Disease
My child is not going through hell because she has Celiac disease. She's happy and healthy because she follows the diet. ARCHIVED Chocolate Chip Cookies
Darn210 replied to anna34's topic in Gluten-Free Recipes & Cooking Tips
Anna, That doesn't look like enough butter to me . . . your recipe is very similar to tollhouse but half the butter. I use a slightly modified tollhouse recipe . . . Everything is the same on the back of the package except . . . twice as much vanilla about 1/4 cup more flour 1 1/2 tsp baking soda 3/4 tsp baking powder 1 tsp xantham gum... -

Darn210 replied to Mizzo's topic in Parents, Friends and Loved Ones of Celiacs

ARCHIVED Need Some Advice About Having Children Tested
Darn210 replied to CarolinaKip's topic in Coping with Celiac Disease
We were all tested (per doc's recommendation) within a few months of my daughter's diagnosis. Son even did a gluten free trial ("just in case") because test was negative and he is on the small side. Doctor just recommended retesting if any symptoms showed up. -
ARCHIVED Gluten-Free Hamburger Helper Concern
Darn210 replied to sa1937's topic in Gluten-Free Foods, Products, Shopping & Medications
I make my own Hashbrown version myself inspired by the Betty Crocker box . . . I had the Betty Crocker one in hand and was looking at the photo . . . looks good I thought, but there is no stinkin' way that rehydrated dehydrated cheese (sauce?) is going to look melty like that. -
