I found that when I was trying gluten free recipes instead of converting, I was dissappointed because they didn't remotely taste like what I was familiar with . . . well that's because the overall recipe was so different. Jess, take a look at the "Kindle Daily Deal" on Amazon. Everyday, they discount one of the ebooks so that you can get it for a pretty cheap price. You can sign up to get a daily email or just check it daily. Love my kindle . . . but I still get books at the library and buy cheap paperbacks at yard sales. My daughter's favorite snack . . . apple slices dipped in peanut butter. I prefer apple slices with a small piece of smoked gouda cheese with each slice. (I need the protein to make me feel full.) Hardboiled eggs. We love love love homemade chex mix . . . but we go through it pretty fast.

If you are just giving this a trial run to see if you feel better and don't know yet if this will be a permanent lifestyle change, then I would minimize your investment as far as cookware goes. Use aluminum foil or parchment paper on baking sheets. If you can truly scrub a pan/pot clean (stainless steel pot) then just give it a good thorough scrub and then... -

Actually . . . I really like the looks of the one that Rachelle linked to . . . but here is another option that is a hit at our house. I use the Pamela's wheatfree/glutefree bread mix and mix it up as the sweet bread version (directions are on the package). Then I mix about 1/2 cup sugar with a Tbls or so of cinnamon (or whatever looks good to you)... -
