We LOVE Five Guys . . . the first time we ordered and I said that my daughter needed a bunless burger, he asked if it was an allergy. I would come prepared with food to supplement whatever you can find that is safe in the cafateria. This is what we do . . . all baking and cooking is gluten free. However, we are not a gluten free household. I buy regular gluten bread and cereal and snack crackers, etc for the gluten eaters. For what it's worth . . . we drive 2 hours to see a pediatric GI because the local one is an a$$ who tells me things couldn't happen that I saw with my own eyes (a gluten reaction within an hour of eating). You see, Celiacs don't react that quickly . . . it couldn't have been gluten. He's not the doc that initially diagnosed her so he's not actually convinced... -

My daughter takes them when her stomach feels a little iffy. They seem to help her. She takes American Health Chewable Super Papaya Enzyme Plus. We get them at Whole Foods. If you are going to get the biopsy, he MUST stay on gluten to have the best chance for an accurate result. I will also say that I had to have a diagnosis/note from the doctor for her school. I think I could have still gotten "some" arrangements made if I made enough noise about it . . . every time I needed to make a request. However, with the diagnosis... -
yep . . . too early . . . lots of ups and downs in the beginning while you are both healing and learning the ropes. My daughter was mostly better within a few weeks or so but she still had bad days every now and then for about 10 months. Every time she had a bad day, I would investigate what she had been eating, looking for a source of gluten/contamination...

The fact that his lab numbers were off the charts and at least now are measureable is good. It can take a while for (and I mean a long while) for numbers and symptoms to resolve. My daughter took about 10 months to become symptom free and she did not have the extreme symptoms/loss of school time that your son had. You've got a lot of good advice on places... -

The Kinnikinnick crusts were a bit blah . . . couldn't seem to get them crispy. Just a tidbit . . . if you like crispy crust, use a pizza pan that has the holes throughout. It makes a huge difference. -

This goes over well everywhere I take it. Super easy to make, it's just a matter of buying the ingredients. Cook on the stove then keep warm in a crock pot if you need it to stay warm for a while. I'm happy that you've found yourself a great pizza. When you first go gluten free, you think that you will have to give up all your favorite things. You just need to go out and experiment and you will have new favorites in no time. -
I use both egg and milk in my meatloaf and I have noticed that I use more milk now that I use gluten free crumbs. Crumb-quantity-wise, I'm probably also using a little less. I also use a higher fat ground beef for meatloaf than I would for something like spaghetti sauce.

Cup4Cup is a flour blend . . . and if I'm not mistaken, it already has the xanthan gum added so subbing in the guar gum wouldn't work unless the OP switches to a different flour mix. Mine is due to rosacea . . . worse in winter . . . and flushes when I'm drinking alcohol. When it flushes it's soooo red and leaves the skin around my lips white. You know, just to make the red look redder.
