ARCHIVED 2 Questions
Darn210 replied to Kelleybean's topic in Parents, Friends and Loved Ones of Celiacs
I like the Betty Crocker cake mixes . . . but only for cupcakes. When I bake them as a cake, the outside half gets really dry and crumbly before the inside is all the way cooked . . . at least that's what has been my experience. The Betty Crocker mixes are pretty easily found. I like Karen's idea of choc chips . . . could be milk choc or white choc.... -
See this website for local events in the Indy Area: Open Original Shared Link I think that meetings tend to be geared to those new to gluten free. They do have some other events though, also. You can get on their distribution/email list to be notified for upcoming events. There are a couple of us on here that are in the area.

ARCHIVED Ore Ida
Darn210 replied to Emilushka's topic in Gluten-Free Foods, Products, Shopping & Medications
No prolems with Ore Ida here . . . but we probably only have had the hash browns, crinkle cuts and shoestring. What about the pan that you are baking them on? Was it a former gluten pan? I ditched my (previous gluten) baking sheets because I couldn't get those baked on grease/oil marks off of them and I used those same pans for cookies and such. -

Lurved It!!! The guy who took our order (manager I think as he was significantly older than the rest of the crew and also had the ability to give us a free drink) could totally tell it was our first time (was I wearing some kind of sign)? Totally stuffed!!! They have bacon hot dogs there!!!! Both kids have decided that's what they are having... -
ARCHIVED How To Help A Child Cope
Darn210 replied to divamomma's topic in Coping with Celiac Disease
I think I initially had a harder time than my daughter. I think as adults, we have a better understanding of what "for the rest of your life" means. I may be kidding myself, but I think young kids have an easier time "forgetting" gluten than teens and adults. Most kids have a somewhat (self)limited diet anyway. Now, this doesn't mean that my daughter... -
ARCHIVED How To Help A Child Cope
Darn210 replied to divamomma's topic in Coping with Celiac Disease
My daughter was 6 when she was diagnosed. I told her that she could still have all the things she liked, it was just some of them were going to have to be home-made (eg, chicken nuggets). I hope you are not afraid to cook/bake. It makes all the difference in the world. Premade is so-so at best. Some mixes are OK . . . some not . . . and in general it... -
ARCHIVED Experience With Newborns With High Risk Of celiac disease?
Darn210 replied to Kimmik95's topic in Parents, Friends and Loved Ones of Celiacs
Hi Kimmik, First, congratulations on your upcoming arrival. Now, a little info on breastfeeding and DS. Many DS babies can't breastfeed because of low muscle tone and an inability to latch on. Some will even use special nipples on bottles that basically provide a slow drip with no real suction from the baby. It's been a while, so I'm not sure... -

Had to get gas petrol yesterday . . . today, it's 14 cents per gallon cheaper . . . grrrrr . . . Going to Five Guys tonight . . . first time we're trying this place . . . hope we like it. We need a few more places where the kids will actually eat and I feel safe enough to take Skeeter. -
ARCHIVED How Do I Start This Process?
Darn210 replied to anna34's topic in Parents, Friends and Loved Ones of Celiacs
Well said!! Throwing stuff out is hard when you paid big bucks for it but if you can't find a use for it (I used some terrible flavorless cardboard crackers in a meatloaf) then it's just taking up space and making you feel guilty everytime you look at it and don't eat it. -
ARCHIVED How Do I Start This Process?
Darn210 replied to anna34's topic in Parents, Friends and Loved Ones of Celiacs
You need to decide if the whole house is going gluten free. We did not take the whole family gluten free. However, I threaten the rest of the house that if we did not follow the rules to prevent cross contamination and my daughter continued to have issues, then the whole house would go gluten free. It's been almost four years and we seem to be doing just... -

It still smells . . . trying to decide if it smells as strong. Maybe Skeeter or Smackl hid some of their broccoli out in the garage somewhere . . . that always stinks when it goes bad. -

It's a possibility that the smell is coming from the drain. I've noticed that we haven't tracked in any ice or snow for a while and the garage floor (and drain) is dry . . . which hasn't happened too often this winter so that may be why the smell is coming and going. I poured a couple of glasses of water down the drain to flush it and I'll see if I notice... -

Yes, I do believe it is that "something's dead" smell . . . but why does it come and go . . . and why is the dog not even remotely interested??!!! I'm afeared that we need to actually haul everything out of the garage to find it and that's just not possible at the moment . . . hence, hoping that the dog would point us in the right direction . . .... -

Something is stinking in our garage. It's happened a couple of times this winter and we can't pin down the source. It gets really bad and then disappears all together only to resurface a month later. When the doors to the garage are closed, the whole place stinks, when you open them up, it completely airs out. There's no area of the garage that is worse... -

ARCHIVED Converting Cookie Recipes
Darn210 replied to finlayson's topic in Gluten-Free Recipes & Cooking Tips
I add extra flour . . . somewhere between a 1/4 to 1/2 cup on the original tollhouse cookie recipe (which normally calls for 2 1/4. You can achieve the same effect by cutting back on the butter. When I first started with the gluten-free baking, I started off by baking a test cookie or two to see how much it spreads and to see if more flour is needed. Now... -

IrishHeart . . . some Celiacs can't tolerate oats either (sounds like you may be aware of this) . . . however, to give oats their best chance, you might want to take a break from them for a little while. My daughter's doc recommended the first 6 months gluten free to also not do the oats . . . just to give the gut a chance to heal. . . kind of like the folks... -
ARCHIVED Flour/thickener For Dinner And Sides
Darn210 replied to zus888's topic in Gluten-Free Recipes & Cooking Tips
I have no problems using a gluten-free flour blend as a thickener. I only use the rice/tapioca/potato starch blends. It shouldn't add any odd flavor to your dish. I would watch out for the flour blends that have a bean blend . . . IMO they have a funny aftertaste. Your apple dish should be OK if you are OK with oats . . . some people aren't . . . make... -

Here is a link to a recipe that uses corn starch, water, and glue (elmer's): Open Original Shared Link We did a paper mache school project, and all we used was one part water to one part elmer's and it worked fine . . . so well...
