  1. Yeah, the bloodwork. 14 is sooo hard. All they want is to be able to be like their friends and they don't realize what they're doing to their bodies. Everything is about 'right now' not 20 years later. I feel for you both. Do any of the long term effects scare him at all?
  2. I found this recipe that describes the dressing as an avacado-mayonaise style sauce, I guess the avacado acts as the cream/mayo 1 avocado 1/4 c. rice milk (or other acceptable milk) 2 dashes of paprika 1 T lemon juice 2 heaping teaspoons dijon mustard (would this be OK?) one grind of salt pepper I also looked up the ingredients that...
  3. I'm not sure what you could use as a 'threat' but our ped's GI routinely screens for parents of teenagers to see if they're cheating. He has a few patients who have such minor reactions that they cheat regularly. You might want to enlist the doc (if they're good and reliable) to help you... Good luck!
  4. Thank you all, I'm really stressing now on how they're actually going to get the blood from him, I had to hold him down on his 1st b-day with a temp of 105 after having a seizure while they inserted a urinary catheter to test for infections--that was horrible, and he's a lot stronger now... think good thoughts!!
  5. My son turns the magical '2' today and it's time for his celiac panel. What should I make sure we have marked on our lab slip--there are so many options....
  6. Thanks everyone! Now I can shop easier (and cheaper)!!
  7. I was in a huge time crunch and baked Pamela's chocolate cake mix for my son's birthday, all I can say is WOW--I'd like to try rich version with the added sour cream--or the mocha version with espresso(Now I want cake ). My son kept asking for 'more chocolate'!!
  8. Happy Birthday!! It's a great day to celebrate! (my son's b-day and our 9 year anniversary is today too) Aug. 1st is a lucky day!!!
  9. We just came back from our 1st gluten-free camping trip and it was a GREAT success!! I made cereal bars ahead of time with nuts, choco-chips, dried fruit and stored in in ziplock bags, a huge bag of trail mix filled with all of our favorite stuff, for dinners we had chicken, steak, tilapia fillets, hamburgers, roasted all natural hot dogs (is that an oxymoron...
  10. How much flour? I didn't see it in the recipe??
  11. Hi We are a ranch dressing home. We like Annie's, but I need something that is more readily available. Does anyone know about Kraft, Hidden Valley, Wishbone, Newman's Own, etc... Thanks!!
  12. We routinely go the Old Spaghetti Factory, they have gluten-free pasta which isn't too bad. My daughter loves the applesauce and vanilla ice cream she gets with her meal too!! Just don't have the bread on the table for the non-celiacs. It's really crusty and when you cut into it, crumbs fly EVERYWHERE--(I guess you could ask them to cut it for you in the...
  13. The gluten-free grahams are hard for me to find--I always use crushed gluten-free cookies-whichever I think sounds good with the filling---BUT if you use Pamela's cookies, watch the butter you add, the cookies are already pretty oil dense so I find I don't have to add much at all!!
  14. Pamela's-me too, I use it for EVERYTHING flour. No weird aftertastes. Free shipping and cheaper to buy on amazon...
  15. Stay away from all the pre-packaged stuff. Some of the gluten-free "stuff" has more sugar and sometimes a LOT of saturated fat to make up for the flavor that they haven't mastered. This is my household rule to make sure they're getting their fruits and veggies: always a fruit with breakfast; a fruit and protein for snacks; veggies, starch and protein...
  16. I feel for you. Although I'm not sure what advice to give you, I can tell you what happened to us. Our daughter was getting sick all the time and not gaining weight. Among all the other blood tests, our pediatrician decided to test for celiac sprue and told us NOT to change her diet yet. Within a week he had us into see a ped's GI who thought this was...
  17. Not sure, but it kinda sounds like you guys might not be eating enough. If you aren't taking in enough calories, you will gain or not lose weight. You might want to keep track of how many calories you're eating and go from there. If your stomach is hurting after a night of not eating, maybe try to eat a small meal in the evening-banana/peanut butter, cheese...
  18. This is soooo easy-no rolling involved. 1 cup gluten-free flour mix (whatever is your favorite-I always use Pamela's), 1/2 c (1 stick) butter or margerine, 2 tbs sugar. This makes 1 crust: -in pie plate, melt butter in microwave -sprinkle in dry ingredients, mix with fork, pat out into pie plate -put in refrigerator for 30 min. -fill and bake if...
  19. The customer service rep called me just now and said they only use corn as their "gluten" They use NO wheat products at all and said their products are safe for celiacs.... Hope this helps!
  20. Here are the ingredients. I guess I didn't read into it that there might be an issue with the brown rice flour other than the taste of 100% brown rice flour... INGREDIENTS: Brown Rice Flour, White Rice Flour, Cultured Buttermilk, Natural Almond Meal (may appear as brown flecks), Tapioca Starch, Sweet Rice Flour, Potato Starch, Grainless & Aluminum...
  21. I called the company and the customer service rep is in a meeting (and may not be back in the office today), so I left a message. I'll let you know what she says.
  22. This one is really good! My DD LOVES it. I also make my own from scratch, I use the Better Homes and Gardens cookbook recipe but sub in Bob's RedMill gluten-free flour mix in for the flour, Tinkyada shells, and I like to use a mix of cheddar cheeses-including xtra sharp. I also triple this recipe and freeze in small containers for quick individual lunches...
  23. I religiously use Pamela's baking mix. You just have to add an egg, water and a little oil for pancakes. I've tried a few recipes from scratch and nothing compares to Pamela's!
  24. where do you find those??
  25. It sounds like you need more protein for sure. Try pairing your fruit with some nuts, natural nut butter, cheese, etc.. I've been sauteing (sp?) green peppers and adding 1 whole egg + 2 egg whites, scramble and add a piece of cheese. Eat that with a piece of fruit and you have a great balanced breakfast that's really low cal and high in fiber and protein...
