ARCHIVED Chocolate Ginger Cake
celiac-mommy replied to kochac's topic in Gluten-Free Recipes & Cooking Tips
I would add 2.5 tsp xanthan gum in with the dry ingredients. Use the Bob's mix-if you like it...-cup for cup for the flour. Don't over mix it either. -
ARCHIVED Found A New(?) Holiday Drink
celiac-mommy posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I found this at Fred Meyer and Safeway (better price at Freddy's), bought it, love it!! Vitasoy df/gluten-free peppermint chocolate soy "beverage" For those of you who love their peppermint hot chocolate, this stuff is AMAZING and my dd hasn't asked to go to Starbucks since I bought it I also heated it, frothed it and added 2 shots of espresso to it at... -
ARCHIVED What To Do With The Holiday Leftovers
celiac-mommy replied to celiac-mommy's topic in Gluten-Free Recipes & Cooking Tips
I found a gravy pkt at Fred Meyer (health food section) and at New Seasons (local grocery store)-not sure if it's new, but boy is it yummy!!! 99 cents and you add it to your turkey drippings (or water, or whatever)-it says 1 pkt per cup of liquid, but with all the flavor of the turkey drippings, I probably used 3 cups of stock and another cup or so of water... -
ARCHIVED gluten-free Stuffing & Mac & Cheese
celiac-mommy replied to sammers1's topic in Gluten-Free Recipes & Cooking Tips
Here's my recipe for mac and cheese, my dd actually asked for it this morning for dinner tonight-whenever I ask her what she'd like for dinner, she asks me to make my "famous homemade macaroni and cheese" To preface, I'm not much of a measurer, I also try different cheeses-I usually just dump stuff in until it's the consistancy and flavor I want..... -
ARCHIVED How Many Gluten Free Stores Have Failed?
celiac-mommy replied to MrJibbs's topic in Gluten-Free Foods, Products, Shopping & Medications
We live in the Portland OR/Vancouver WA area and we have a gluten-free store: lingonberriesmarket.com They try to keep their costs below Whole Foods, I love it-you don't have to think about anything (as long as it's just a gluten allergy) -
ARCHIVED Should I Postpone Kindergarten For My Small celiac disease Child?
celiac-mommy replied to jesslynn555's topic in Parents, Friends and Loved Ones of Celiacs
I have one of each. My dd was able (thank God) to test into kindergarten at age 4-she also missed the cutoff by a bit, but was so ready to start school that there was no question for us (she tested into 2nd grade!!). Our ds is only 3 right now and has an August birthday. Since going gluten-free, he's had an enormous growth spurt and went from an almost... -
ARCHIVED Ice Cream Cakes?
celiac-mommy replied to amybeth's topic in Gluten-Free Foods, Products, Shopping & Medications
I made one last year-did all the layers in a big bowl, so the cake was dome shaped, it looked cool-it didn't have any cake in it, just ice cream and toppings--it was a replica of Red Robin's mile high mud pie. I now have one of those Betty Crocker dome cake/ice cream cake molds, but I haven't used it yet. -
ARCHIVED What To Do With The Holiday Leftovers
celiac-mommy replied to celiac-mommy's topic in Gluten-Free Recipes & Cooking Tips
I use the Libby's pumpkin pie recipe with my gluten-free crust. Other's have used gingersnaps as the crust for a pumpkin pie, which I might try this year. For the most part, my family has been very supportive. I understand that it's hard for anyone who doesn't have it or doesn't live with it (with their kids) on a daily basis really can't get it. The... -
ARCHIVED Family That Wont Say No..
celiac-mommy replied to gfgang's topic in Parents, Friends and Loved Ones of Celiacs
It's your responsibility as a parent to make sure your kids are safe--especially young kids who don't fully understand. My 4yo dd might have gotten it then, but my son won't--then if it's 24hrs later, they don't correlate why they feel sick now if they ate something yesterday.... -
ARCHIVED What To Do With The Holiday Leftovers
celiac-mommy posted a topic in Gluten-Free Recipes & Cooking Tips
I thought this might be fun-instead of wondering the day after, what to do with all the leftovers, I wanted to get some ideas of creative ways to use all that food, besides the turkey sandwiches for days We had our 1st "Thanksgiving" last weekend and I ended up with 4c extra sweetened, spiced sweet potatoes. I knew no one would eat them, so I made... -
ARCHIVED Getting Ready For Thanksgiving!
celiac-mommy replied to blondebombshell's topic in Gluten-Free Recipes & Cooking Tips
Open Original Shared Link It's very forgiving with using different flours. I use my own gluten-free blend to replace all the listed flours except for the cornstarch and flax. I don't like the bean flours. I've never had a batch turn out badly. -
ARCHIVED Family That Wont Say No..
celiac-mommy replied to gfgang's topic in Parents, Friends and Loved Ones of Celiacs
I would take over some information on the perils of untreated Celiac disease (and if they keep poisoning him-it's untreated) and calmly tell them that you can't take any more chances when it comes to your children's health, and what they are doing is harming him. You tell them that if they have any questions at all, you'd be happy to sit with them and help... -

ARCHIVED Whey Protein Help
celiac-mommy replied to blondebombshell's topic in Gluten-Free Foods, Products, Shopping & Medications
I use BioChem 100% Raw Foods and Whey vanilla protein powder. It tastes really good, I use it as my recovery drink. I also mix it into my ds's yogurt since we have a hard time getting protein in him. -
ARCHIVED Sweet Potato Casserole
celiac-mommy replied to purple's topic in Gluten-Free Recipes & Cooking Tips

ARCHIVED Gluten Free Thanksgiving
celiac-mommy replied to SAHM2one's topic in Gluten-Free Recipes & Cooking Tips
I am doing Thanksgiving this year, my 1st totally gluten-free holiday. I have been pouring over cookbooks and this is what I've come up with so far: roasted turkey-stuffed with celery, carrots, garlic(for flavor), turkey gravy made with cornstarch stuffing-cooked outside the bird, made the day before (gluten-free bread and cornbread) Open Original Shared... -
ARCHIVED Halloween-how'd It Go?
celiac-mommy posted a topic in Parents, Friends and Loved Ones of Celiacs
We came home from work, had a Halloween themed dinner (full of protein and fiber to fill them up ) and left to trick-or-treat at about 645. They lasted about an hour and a half. We came home and dumped all the candy out on the table to separate. They ended up getting to "keep" about 3/4ths of it, which surprised me. The candy of the year in our neighborhood... -
ARCHIVED In Need Of A Pie Crust Recipe
celiac-mommy replied to WardGirl's topic in Gluten-Free Recipes & Cooking Tips
I made individual beef and bean pot pies last night for dinner (w/jack-o-lantern faces cut out ) and I like to do only a top crust to save some calories. The filling is already cooked, so basically you're just heating through and browning the crust, so it ends up baking at 350-375 for 25-30 minutes. If I do bottom crusts too, I bake a little longer and... -
ARCHIVED Hay Ride
celiac-mommy replied to SAHM2one's topic in Parents, Friends and Loved Ones of Celiacs
not all hay is wheat. I use the term "hay" but it can be straw, which I've heard is usually wheat. It depends on the farm. I just call and ask what kind of hay or straw they use in their bales, if it's wheat, we don't go. Most of them here (Portland OR) use wheat. The dust gets into your nasal passages and mouth when you breath, you swallow and it gets...
