Coconut milk in a carton by So Delicious comes in different flavors....original, unsweetened, vanilla flavored, etc. so you get different "tastes". I have a Zojirushi bread machine Model BCC-X20 and a Cuisinart stand mixer Model SM-55. I can honestly say my stand mixer gets the most use. I'm also able to purchase both Udi's and Rudi's bread locally. I have never been able to find a recipe that I'm really crazy about that comes close to Rudi's or Udi's bread. I've used expired things before....and would use it if it looked ok and smelled ok. If the can is not swollen or bulged at the top. Wouldn't serve it to anyone else, tho. -
I know 85 cents isn't much, but www.bettycrocker.com has a coupon available this month for Bisquick Gluten Free Baking mix. I use this mix all winter long for pancakes and waffles because of the convenience.The coupon expires 12/5/2011.

Daiya cheese is a wonderful substitute for cheese....I'm lactose intolerant and soy intolerant and found this cheese substitute about a year ago in my local natural food store. It comes in mozzarella, pepperjack, and cheddar...and it melts. and can be frozen.Pizza is on the menu tonight.Oddly enough, I did NOT find it being sold at Whole Foods...at least... -

Thanks for the info.....I love King Arthur mixes and as I travel during the summer, I check every supermarket in every town and have enough KA mix to last me 6-9 months. I have a rewards card with the big A and since I order fairly often from them, I use my rewards credits to order my special diet supplies....it kind of takes the sting out of the cost of... -

I use Earth Balance soy,dairy free butter substitute in the red and yellow container for all my baking....especially good when used with Betty Crocker and King Arthur mixes...has never failed me. I purchased the King Arthur Gluten free multigrain bread mix directly from the company,and hope to try it within the next few weeks. It's still too hot where I live to bake (yes, I could turn the A/C on) but the main reason is I have little room left in the freezer. All my KA food items have turned out fantastic. -

I make cupcakes (instead of cakes)at 7500 ft. with excellent results...both Betty Crocker, and a few days ago Pamela's Chocolate Cake Mix.I usually have to add only about 2 minutes to the cooking time. I like a cake- like cupcake, and used 3 eggs as recommended by Pamela's. -

Earth Balance dairy,soy free spread works out fine. Your grocery store may be able to special order it for you.I also use coconut oil as a butter substitute...great on veggies and corn-on-the-cob. -

I use my blender to make my brown rice flour mixture finer....I run the flour thru a few times and make sure it is well mixed, and is not staying at the bottom of the blender.
