  1. Udi's apparently has new packaging.....4 rolls in a very sturdy package with frosting in envelopes, a cardboard wrapper protecting the product. I think perhaps the "icing on" idea is not working out because the heat would make the frosting run. I have e-mailed Udi's for instructions, but common sense tells me to put the package of frosting in hot water to...
  2. I've heard so many good things about their Cinnamon Rolls, and just purchased some. There are no directions at all on the package, any idea of what to do with them? A separate package of topping is included with the rolls.
  3. This sounds yummy...I may try to put the mix into an individual 4 inch springform pan to see how it cooks up for individual sponge cakes.

  5. Tonight I made Carol's Quinoa Zucchini Mini Quick Bread using Expandex, and it baked up beautifully, rose high, and did not fall when I took it out of the oven. I'm baking at 4400 ft. in altitude. I used Quinoa flakes instead of flour, and used 2 pans, 7 1/2 x 3 3/4" and 5" x 3". This baked up very, very moist....a keeper. My husband usually doesn't eat...
  6. Each recipe using Expandex calls for different amounts. I only substituted about 3 Tablespoons for the snack bars. Carol Fenster suggests 2 Tablespoons of Expandex in a recipe that uses 3 cups of flour to bake French Bread. She has a French Bread recipe in her latest book, and it does not use Expandex. I tend to agree with you about using Expandex...
  7. I finally took the plunge and purchased a Zojirushi BBCCX20.I have been thinking about it for about a year....it's expensive $200. Have not had a chance to try it out yet....it arrived late in the day yesterday, and we had a 3 hour electrical outage!! I have an assortment of bread makers...about 4 at last count, and will donate them all to the Goodwill...

Haven't had a chance to try the Zucchini recipe yet, but I did make some Living Without Snack Bars using Quinoa Flakes in place of oatmeal, and substituted about 3 Tablespoons of Expandex for the flours and these bars were very, very moist. They freeze well. I had previously used this recipe using oatmeal, and the bars were a bit dry. I hope to try Expandex...

  10. I have a package of the mix you are asking about.....it's at my motorhome, and tomorrow will check to see if the recipe is on it.
  11. I freeze them all the time, with frosting...I use a buttercream frosting recipe, and put sprinkles on them, and then put them in a plastic container, single layer,and freeze. Most of the time I can't wait for them to thaw out, and will pop one in the microwave for 12 seconds or so.
  12. For some reason I never made a cake from BC cake mix....always made the cupcakes, which came out super. After reading the cake reviews, I'll stay with the cupcakes. The yellow mix is more readily available than the chocolate, which also came out super delicious.

They worked fine, but I have Annalise Robert's Bread Machine cookbook, and did not realize that each rise cycle has a different temperature, and the one rise cycle that is used for gluten...
  14. I had planned on buying a Kitchen Aid mixer, and when I went to purchase it, ended up buying a Cuisinart Model SM-55BC. The price on both mixers was the same, and the Cuisinart had more watts (800) than the Kitchen Aid, and a larger capacity. Plan to spend approximately $300 for a heavy-duty mixer.
  15. I also have Carol's book, and although I have a supply of Expandex, have not had a chance to use it. You will notice that many bakeries that deal with gluten free goodies use modified tapioca starch. I hope to be able to try her Quinoa Zucchini Mini Quick Breads this weekend. It costs approx. $5.99 for 20 ounces.

  17. I've never had a problem with Namaste products. Is it possible you may have an issue with the ingredients that were on the pizza......dairy, soy, products? I love pizza, but am lactose/milk/casein/soy intolerant, in addition to the gluten issue, so my pizzas are made with a cheese substitute that contains casein, but does not bother me too much.   18. Good idea Purple. Another way to experiment is to just make one muffin, and put the rest of the batter in a smaller pan as you suggested, then compare the two for texture. Of course, the muffin would bake in a shorter period of time than the bread.
  19. Perhaps you could locate several gluten-free banana bread recipes and compare the ingredients to the recipe you are using. Mushy sounds like too much liquid, or perhaps the bread was not completely cooked. I'd try another recipe, using the flours that are recommended for this type of bread.
  20. I also freeze bread slices after the loaf has cooled. I put a piece of parchment paper between every 2 slices, then put them in a lock n lock container. Simply take out the number of slices you need, and return the rest to the freezer.
  21. I've always had excellent results with the Bette Hagman pie crust recipe...just made an apple pie and my neighbor did not know the difference. I had mixed in some brown rice flour (by mistake)and the dough was a bit on the dry side, so I added a bit more water and it still came out really good.   22. Many people on this forum who prefer to use bread machines highly recommend "Zo" machines. I have several brands, including a Zo. A ZO is expensive, but is heavy duty and lasts. I don't use my bread machines often, as I now have access to Udi's bread, and now prefer to bake a loaf from scratch. I just purchased a Cuisinart heavy duty stand mixer, and am anxious...
  23. I'm originally from New England and grew up on Dunkin Donuts coffee, and still prefer it to other brands. I have no problem with their unflavored coffee, and drink their Vanilla flavored coffee with no ill effects. It can be purchased in supermarkets.
  24. I'm gluten/dairy/soy intolerant and the only reasonably priced supermarket soup that I can eat is my own made from scratch recipe, or Progresso Vegetable Classics Garden Vegetable. Once you find a product that doesn't make you sick, stock up on it when on sale.I'm sure there are other brands out there, but I hate going to 6 stores to shop!

Funny that you should mention fibromyalgia....I suddenly became very ill out of a clear blue sky...in additon to severe abdominal pain, nausea and diarrhea, I had sharp, shooting pains mostly in my abdomen, and on occassion in my arms and legs...these all disappeared when I went gluten, dairy, and soy free. Blood tests were negative, DNA tests were positive...
