ARCHIVED Celiacs False-positives For Other ThingsWW340 replied to Saoirse's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I think most people are reading your question incorrectly. How were you tested for hepatitis C? Was it through blood screening for blood donation? Those tests are screenings and are more prone to false positives. Since you already know it is a false positive, I assume you have had further testing. The test is very sensitive, but it is not very...

I make extra and freeze everything. It makes life so much easier. I use 2 things for freezing. The cheap ziplock storage containers - similar to what is shown on the container store link, but less expensive. You can buy them at walmart in different quanitities and sizes. I use those for immediate freezing of leftovers, but after I have frozen them...

ARCHIVED Help! Used Bread MakerWW340 replied to Erica94's topic in Gluten-Free Recipes & Cooking Tips I replaced my pan and paddles on my existing machine and had no problems with contamination. However, that is not a cost effective way to go, unless you really love your bread machine, because the replacement pan and paddles cost almost as much as a new machine.

ARCHIVED Catered Wedding Tomorrow.WW340 replied to num1habsfan's topic in Coping with Celiac Disease Buffets are the easiest to fake with no one noticing you are eating something different. I am too sensitive to cross constamination, so I don't trust catered affairs. I have a very small cooler bag that is no bigger than a camera case. I take food that does not need to be heated. I go to the buffet line and get a plate and maybe 1 or 2 safe looking...

ARCHIVED Need To Feed 11 Gluten Eaters I Don't Know Very WellWW340 replied to cruelshoes's topic in Coping with Celiac Disease Personally, I always make the gluten free lasagna. It is easy to make ahead and then bake right before serving. Add a salad and it makes a great meal that all my gluten eating friends have enjoyed and never could tell it was gluten free. I do not precook the noodles. I just cook some ground beef and layer with the cheese and sauce and add a little extra...

I definitely react to some corn chips. Mission tortilla chips are the only ones I have been able to eat consistantly without getting sick. I have had reactions to Fritos and others numerous times. For some reason I have been able to eat lays potato chips with no problems, but the fritios and tortilla chips have caused reactions more times than not. ...

If it is your house, I would simply make it totally gluten free, period. I am the only one with celiac disease, yet my house is gluten free except for one loaf of bread that my husband is very careful with and his cereal. My son and husband can eat gluten outside of our home, but at home all cooking is gluten free. My son is not careful enough with gluten...

I just saw my dentist 2 weeks ago. It was the first time I have seen him since my diagnosis almost 1 year ago. He was very interested in my diagnosis and asked a lot of questions about celiac disease. He made a couple of comments that I found interesting. One is that he suspects that my celiac disease may have caused the microcavities and fissures...

ARCHIVED Questions For Experienced Celiac VeteransWW340 replied to Joe Hoffman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I don't know about the sugar causing diarrhea, but I do know that I have to limit even the gluten free baked items, no matter which flour I use. I feel glutened even though I know the item is gluten free if I over indulge. My symptoms will last a few days or more, just like a cross contamination. My itching did not go away until I changed all my personal...

ARCHIVED Northwest Arkansas, Anyone?WW340 replied to Connie R-E's topic in Introduce Yourself / Share Stuff Hi Kellie, I am in NW Arkansas, Eureka Springs. I have not been to a support group in the area, but there is one in either Springdale or Fayetteville. Open Original Shared Link There is another new member here from NW Arkansas - Razorbackfan who posted in the Doctors section. There is a group trying to start a gluten free brewery in Springdale...

ARCHIVED For Those Who Bake Their Own BreadWW340 replied to MyMississippi's topic in Gluten-Free Recipes & Cooking Tips Franceen, thank you so much for a great idea. I have been searching for a good way to slice my bread, even searched under bread slicers and never found anything I wanted or could afford. I have a knife and the platic guide, but only have marginal success with that. I have no idea where I can put yet another kitchen appliance as I have the tiniest...

Our dollars will speak louder than anything else. As our numbers grow, so will the products available to us. This is already happening. My buying habits have changed a lot since going gluten free. I used to be a name brand shopper. I also avoided Walmart whenever possible, for a lot of reasons. However, Walmart is now my one of my first places to...

ARCHIVED Eating What Other People CookWW340 replied to woolwhippet's topic in Coping with Celiac Disease People mean well, but they really don't understand what all is involved in staying gluten free. I have had friends try really hard to cook for me, but inevitably I get sick. It took me months of dedicated study to learn all I needed to know to protect myself. There are very few people that can do that for a friend or loved one. Recently we had a group...

ARCHIVED Going Crackers... Help?WW340 replied to Lisa16's topic in Gluten-Free Foods, Products, Shopping & Medications My favorite serving crackers are the Brown Rice Snaps by Edward & Sons. They come is a few different flavors like Tamari Sesame (my favorite), plain, onion & garlic, vegetable, and tamari seaweed. These are nice and uniform in shape and I don't generally have broken ones in the package. I like the Mary's Gone Crackers too, but those are definitely...

Hi Lori, I also live in NW Arkansas. I go to Tulsa for my Celiac management. I have a great GI there that knows a lot about Celiac. His name is Markham L. Nightengale, MD. He runs all the additional bloodwork for liver, b12, vit. d, anemia, thyroid, etc. He also ran other tests to check for crohns and other GI diseases. He had me get a dexascan...

ARCHIVED Why Endoscopy If Blood Tests Show Celiacs?WW340 replied to gfny's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms My GI diagnosed me based on my sky high numbers, but he did the endoscopy and colonoscopy to make sure there was nothing else going on. I had been sick for a long time and he thinks my celiac disease has been active all my life, so he wanted to make sure there were no serious complications developing. If your GI is only doing it for confirmation of...

yes, I have definitely noticed this. I was almost white headed, now I have color again. My color does not have as much red as it used to, but at least it is color.

ARCHIVED Something Just Isn't RightWW340 replied to Rpm999's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I generally felt better within the first few days of going gluten free. My GI symptoms improved almost immediately. The only negatives I experienced were constant hunger for the first few weeks, and then a few months later some depression/moodiness. I think the mood problem was more from feeling deprived and thinking about that long term. I finally...

ARCHIVED Need gluten-free Breakfast Items For Work BrunchWW340 replied to lmvrbaby's topic in Gluten-Free Recipes & Cooking Tips Maybe a crustless quiche. I really like them and you could make it the night before. It is not too difficult to make the morning of the event. I have also seen a recipe using hashbrowns for a crust, but that would make it a little more time consuming to make.

Mine have definitely changed. Some good changes and some bad. I don't care for coke any more. I used to love it, but couldn't drink much because it hurt my stomach, now that I am gluten free it doesn't hurt my stomach, but I don't care so much for the taste. I have developed a salt craving since going gluten free. I cannot seem to get enough salt...

ARCHIVED I've Decided To Start A Gluten Elimination Diet TodayWW340 replied to Joyous's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I have to agree with Ravenwood on some points of your plan. Once I went gluten free, even the smallest contamination could cause me to have 2 weeks or more of symptoms. If I got cross contaminated on the 8th there would be no way I could go to a party on the 11th. I would hate to think about how I would feel having actually eating a gluten item. I...

ARCHIVED Help Before The EndoscopyWW340 replied to blondebombshell's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms My GI doc was convinced of a celiac diagnosis based on my "off the charts" blood result. However, he wanted to do both an endoscopy and colonoscopy to make sure there were no other problems since I had been ill for so long. Also, my mother had died of intestinal lymphoma at age 56 and I am 54. There are a lot of things they can find on endoscopy. The...

ARCHIVED Best Gluten Free All-purpose FlourWW340 replied to happyslob's topic in Gluten-Free Recipes & Cooking Tips My current favorite all purpose flour mix is Syvan Border Farms. It has performed wonderfully in everything I have tried. I add tapioca flour to it for some things like bread and pizza dough. I buy it in bulk at amazon .com. I don't care much for the Bob's redmill all purpose flour either, but I think it is more the grainy texture that I object to rather...
