ARCHIVED Pu Pu Pu Punkin Bread
burdee replied to sickchick's topic in Gluten-Free Recipes & Cooking Tips
Also called 'agave nectar' this alternative (but NOT artificial) sweetner comes from agave plants (similar to cactus) in Mexico. Agave is sweeter than sugar, less viscous (sticky) than honey, but best of all low glycemic. I use agave instead of honey for cooking, because agave pours more easily and has a 'neutral' sweet flavor. See Open Original Shared... -
I've never tried ghee, but my lab test results included a guide for which foods contained my allergens. Ghee was listed under dairy. I get so sick from tiny amounts of dairy that I didn't want to risk it. Don't decide your soy sensitivity on my experience. I'm super sensitive to ANY form of soy contamination. My soy reaction symptoms are stronger...

Pardon me for interrupting this pumpkin thread, but I didn't have any pumpkin in the house when I wanted to make Collette's recipe today. So I used what I had (canned pureed sweet potato), made other substitutions to accomodate our multiple allergy family and added some of my own creative ideas. The bread turned out delicious even with all those substitutions... -
Hmmm .... Phyllis has been with Elab a long time and certainly knows her stuff. I wonder if 6 months (I asked my question in August but you asked yours back in February) made any difference in Elab's policy or recommendations about soy. Maybe my question was different enough that I got a different response. Phyllis did say "Even if you are able to bring...

Sorry ... no offense intended. Those questions came from the very sick part of me which is still reacting to a miniscule amount of soy in a cereal processed in a factory which also processes soy. Of course I also took a chance when I ate 1/2 cup of that cereal, but that's a pretty reliable company ... obviously they don't check for soy cross-contamination...

Why would you want to 'get away with' or 'probably tolerate' something which causes symptoms in larger amounts and probably damages your intestines? BURDEE

Here's the response from Enterolab which I received on August 8 (including my inquiry to them): Your Question: I took the Enterolab egg, soy and yeast test a year ago. My test results indicated I have soy sensitivity. Does that include soy lecithin as well as all the soy protein food source? I obviously react to soy, but I'm uncertain whether I react...

I suspect soy sensitivity varies from individual to individual. I first noticed soy sensitivity when I tried to substitute soy for dairy products, after Enterolab tests showed casein sensitivity. I react to ALL forms of soy (flour, tofu, sauce, lecithin, etc.) with cramping pains, bloating, gas, fatigue and nausea for 5-7 days after even minute amounts....

Me, too! LOL At long last, here's my pumpkin 'vice' cream (vegan ice cream) recipe, adapted from the Pumpkin recipe from 'Vice Cream' by Jeff Rogers: PUMPKIN VICE CREAM (Makes one quart) Combine in blender and blend on high until silky and smooth for at least one minute: 1 cup organic cashews (whole or pieces) 1-1/2 cups purified (filtered) water... -

Since I have diagnosed allergies (intolerances?) to dairy, soy, eggs, cane sugar, nutmeg and vanilla, I can't eat most commercially made ice creams. My favorite vegan ice cream recipe is pumpkin. It's easy to prepare with an ice cream maker. I'll post it here if anyone is interested ... BURDEE -
ARCHIVED Anyone Else With Surgar Allergy And Celiac?
burdee replied to GFDahlia's topic in Food Intolerance & Leaky Gut
WOW! Thanks for the info. I have been absolutely gluten free for almost 3 years but keep discovering new IgG 'intolerances' both in symptoms and different forms of ELISA tests. I also had 3 tests for bacterial dysbiosis. The first time I had really low good bacteria (no bifidobacteria) and high Klebsiella (bad bacteria). We treated that with caprylic... -
ARCHIVED Anyone Else With Surgar Allergy And Celiac?
burdee replied to GFDahlia's topic in Food Intolerance & Leaky Gut
I think you misunderstood my question. I know how IgG, IgA and lactose intolerances are tested. I wanted to know how to differentiate VERBALLY or SEMANTICALLY between IgG reactions to foods (for example, casein protein) and lactase enzyme deficiency reactions (often called 'lactose intolerance'). Yeah, I also know celiac disease is a gluten 'intolerance... -
ARCHIVED Anyone Else With Surgar Allergy And Celiac?
burdee replied to GFDahlia's topic in Food Intolerance & Leaky Gut
If IgG antibody reactions are 'intolerances', rather than allergies, how do you distinguish IgG reactions to dairy (milk 'casein' protein) from problems with digesting lactose (milk sugar) or lactose 'intolerance'? I've read lots of disagreement about what to call an 'allergy'. I don't consider lactose intolerance (caused by deficiency of lactase) a true... -
ARCHIVED Anyone Else With Surgar Allergy And Celiac?
burdee replied to GFDahlia's topic in Food Intolerance & Leaky Gut
The basic ELISA (blood allergy) test looks for IgG antibody reactions to 96 commonly eaten foods including honey, cane sugar and cocoa bean (chocolate). However overeating sweets is not necessarily a symptom of 'allergy'. Some people want to blame their tendency to overeat sweets on 'addiction' influenced by allergy. However, they may restrict sweets... -
ARCHIVED Elisa Test - Where Was Yours Done?
burdee replied to newlyfree's topic in Food Intolerance & Leaky Gut
I'll just tell you my experience and what I like about my naturopath: After getting the 'IBS' misdiagnosis from my HMO's PCs for over 10 years, I didn't want to see ANY doctors. So I used Enterolab to diagnosed gluten intolerance, the celiac gene, milk and soy allergies. However I later met my current naturopath at a local support group meeting. He... -
ARCHIVED Anyone Else With Surgar Allergy And Celiac?
burdee replied to GFDahlia's topic in Food Intolerance & Leaky Gut
Were you diagnosed (by allergy blood test) with antibody reactions to cane sugar or honey? Or do you just overeat sweets? Unless you know whether certain foods cause antibody reactions, you could suspect allergies to ANYTHING. It's difficult to determine allergies by 'elimination' unless you only eat one food each day during your elimination diet test.... -
ARCHIVED Elisa Test - Where Was Yours Done?
burdee replied to newlyfree's topic in Food Intolerance & Leaky Gut
The ELISA test can be processed by many different labs. My ND uses USBioTek in Seattle (where I live). US BioTek, the lab used by the IBS Treatment Center (my doc's clinic) to test for food allergies, received a national Excellence Award for Quality Laboratory Services. The award was granted by COLA, a national health care accreditation organization. The... -
ARCHIVED Which One Of These Foods Could Be Making Me Bloat?
burdee replied to Sarah8793's topic in Related Issues & Disorders
I vote for soy. However, unless you're willing to pay for the Enterolab soy, egg and yeast test to determine a soy allergy, you might have to eliminate all sources of soy (tamari, lecithin, etc.) for a few weeks to see if you get better. If you don't think soy is a problem, I'd also consider eliminating all sources of peanut (nuts, oils, butter) for a week... -
ARCHIVED gluten-free Df Sf Margarine Wanted
burdee replied to F.deSales's topic in Gluten-Free Foods, Products, Shopping & Medications
My reactions to dairy and soy are too severe (feel like really bad menstrual cramps plus bloating) to risk any soy based margarines or even ghee, which is supposed to be casein free, but still comes from a dairy source. So I use coconut oil, which stays congealed like margarine at temperatures under 75 degrees fahrenheit. I use it for baking, cooking and... -
I have the same problem. Even after abstaining from gluten and my other 4 allergens for a few years, I still bruised easily. However after taking several courses of high dose probiotics, my frequent bruising disappeared. Then I learned that our 'good' bacteria, which probiotics supply, produce at least half of the Vitamin K which we need for blood clotting...

ARCHIVED Gluten Free Oats
burdee replied to IsAMom's topic in Gluten-Free Foods, Products, Shopping & Medications
Gluten Free Oats are certified gluten free. I talked to the president of the company several times before I offered those at our local gluten free food fair event last May. I eat that brand of oats regularly as cooked cereal and have absolutely no reaction. I'm VERY sensitive to gluten, dairy, soy, eggs and cane sugar and react with intense cramping pain... -
Jonathon Wright, MD in "Why Stomach Acid is Good for You" suggests that people with gas, bloating and indigestion after eating should try a few tablespoons of apple cider in water after a meal. If that improves digestion, he says they might need more stomach acid. Few people have too much stomach acid, but many have too little stomach acid. Anyone who every...

I received this from GIG today about where to send condolences to Bette Hagman's family: Here is more information about sending condolences to Karol, Bette Hagman's daughter. Karol is planning on keeping all the notes sent in honor of her mother. We have a collection started for her. Send your condolences to GIG@gluten.net and we will forward to Karol...

2 years ago I bought the bulk packages of both Alfredo and Cheddar 'chreese'. I still have at least 3/4 of each package. I've tried them on soups, pizza and even as pasta sauce. I agree that they have very strong mustard and garlic flavors. I consider the 'alfredo' chreese a sauce mix, but not a cheese substitute. The cheddar chreese flavor is a little...

ARCHIVED Celiac And Food Cravings
burdee replied to chelseas-mom07's topic in Coping with Celiac Disease
I'm also 60, but was misdiagnosed until age 56. When I was first diagnosed I focussed on substituting gluten free versions of all the foods I formerly loved. Later I was diagnosed with dairy, soy, egg and cane sugar allergies. With each new allergy I had to find new substitutions. If I just gave up eating a formerly favorite food, like ice cream, I craved...
