Have you recently upped your fiber intake? That's pretty much what happened to me when I went gluten-free. Started eating more brown rice (it became the base for most of my meals) and had stomach cramping and gas. Switched over to white rice and the problem resolved. -

That sounds like a wonderful filling for a crumble! Might add some walnuts to it. We're eating at home this year (first year gluten-free and don't want to put the in-laws out) and want to take a dessert when we go visit. This would definitely work! Such fabulous ideas on this thread! Thanks! -

Would you mind posting your thyroid results? There's a huge difference between normal and optimal levels. Problem is, most docs don't know their butt from a hole in the ground when it comes to thyroid, let alone what optimal levels are. Have you had TPO and Tg antibodies tests run? We feed our cats and dog EVO dry foods made by Innova. No grains - just veggies and meat. They seem to do pretty well on it too. EVO also makes dog treats, but the dog doesn't like them. Still searching for a gluten-free doggie goodie that he'll like. -
So, here I am 2 weeks past the self dx and 5 weeks gluten-free altogether. Still not feeling fabulous, but better. Have more energy and I attribute that to the B12 supplements. I've been actually getting up off my butt and doing stuff around the house the past few days. Its nice to be able to do that without having to stop and rest every 5-10 minutes...

Something to keep in mind is that hypoT affects how well we convert vit D and convert beta carotene into vit A. A lot of hypoT folks are also deficient in the Bvits, particularly B12 and folate. It just seems to be the nature of the beast, per se. Its not all related to malasorbtion, although I'm sure that's a factor here. What kind of eye issues... -

I've been dx'd with both. Subclinical hypoT and thyroid nodules, along with iron, vitD, and B5, B12 and folate deficiencies. According to the latest round of blood tests done last month, I'm deficient in all these in spite of taking substantial doses of supplements since June. Probably haven't been absorbing them. Yeah, I think you're right. To be honest, I'd rather be wheat-intolerant than gluten-intolerant. At least that way I wouldn't be quite so limited. I'm also hoping once the deficiencies and dysbiosis are cleared up, my reaction won't be quite as severe either. I really don't want to have to carry around an epi pen the rest of my life.
