How are you guys making your own popcorn with olive oil? That sounds really good! I have an air popper, but the popcorn has absolutely no flavor, so I don't eat it very often.

ARCHIVED Gfcfsf Multivitamin With Folic Acid?
Offthegrid posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Doctor chided me for not taking a multivitamin at my annual checkup, and I said it's just too hard to find one that's gluten-free, dairy-free and soy-free. He encouraged me to look again. I've spent about 60 minutes trying to find one online and I'm just not getting there. Can anyone recommend something? That's preferably not $20 for 30 days' worth... -
I'm so very sorry. For your information, my brother's blood work and endoscopy came back normal. But if he eats gluten, he gets quite sick. I'd trust your body's response far more than I would a test. And you can't just go gluten light -- you have to be completely gluten-free at *LEAST* 3 weeks before you may notice a change. It took me 2 weeks initially...

ARCHIVED Restaurant Frustration
Offthegrid replied to horsegirl's topic in Coping with Celiac Disease
Tough one. The manager may understand food intolerances, but does the rushed waiter earning $2 an hour? I have been contaminated at many restaurants. It is hit or miss. If you feel adventurous, I would try ordering plain, white rice, steam veggies and steamed chicken. Make it very clear that you need clean pots and pans each time, and speak with... -

ARCHIVED Can Not Stop Gaining Weight!
Offthegrid replied to b91hd7fjk's topic in Related Issues & Disorders
My personal advice is to cut way, way, way down on processed foods. Right now I'm eating meats cooked from scratch, veggies, fruits, rice cakes for snacks, nuts, peanut butter and honey and I'm losing weight very nicely -- without being hungry. In fact, I don't even limit the quantities I can eat. If I'm hungry, I just have a healthy snack. I have lost... -
ARCHIVED What Sweets Do You Eat When You Can't Eat Any Of The Things You Love?
Offthegrid replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
Cookies can be made GFCFSF. Natural peanut butter (no soy), 1 cup sugar, 1 egg, some vanilla. Mix and form into small balls. 375 degrees for 12-18 minutes. Super quick, super easy, yummy. Dip in powdered sugar is desired. Make pie. Here's the crust recipe: Open Original Shared Link. You can use any filling you desire. I haven't made a chocolate pie, but... -
ARCHIVED Anyone Thought Of Making A Packet For Doctors And Patients?
Offthegrid posted a topic in Coping with Celiac Disease
I remember I spoke to the doc, he said I can't eat gluten, I said, "but what will I eat?" and he basically gave me no advice and referred me to a dietitian, whom I got to see over a month later. Has anyone thought of creating a gluten-free information packet for doctors to hand out to patients? It could include info on local support groups, this forum... -
ARCHIVED Need Some Food Suggestions
Offthegrid replied to jasonD2's topic in Gluten-Free Recipes & Cooking Tips
I'd make some tacos, even if you don't want to eat corn shells/tortillas. What about some homemade soup? Think Crock Pot. Turkey meatballs made with brown rice crumbs (can be purchased). -
Use Bette Hagmann's recipe (spelling might not be right) from her cookbook. It's delicious! (I don't do it because of the cheese. You'll need a heavy duty mixer, however. I generally use a sweet white rice flour and tapioca starch. I generally do 1 cup of one, and 1/2 cup of the other. Pamela's cake mix is delicious. If you can't do dairy and a recipe...

ARCHIVED Do You Have To Refrigerate The Flours? I Bought Some Airtight
Offthegrid replied to Kara'sMom's topic in Parents, Friends and Loved Ones of Celiacs
I don't refrigerate my flours, but I do keep my dough enhancer and xanthan gum in the fridge. -
It is really frustrating. I've been gluten-free for a year now, too, and have had many symptoms over the months. I *assumed* I was just getting glutened, but in reality, it is that I have a ton of other food intolerances. I have not been tested for candida, but I believe it may be causing my problems. In any case, I eliminated, in this order: gluten...

ARCHIVED Omg...i Might Be On To Something
Offthegrid replied to Rachel--24's topic in Food Intolerance & Leaky Gut
Hi everyone. I've been away for a bit -- very busy with the new house ! I'm very, very sad to say that I saw a significant improvement in my digestion one the three-day period where I didn't have cooked white rice (because we were out of it, not for any health reason). So I've decided to also try to limit that. My question is, is it healthy to have... -
ARCHIVED What Do You Do When You Realize You Are Eating Something Bad?
Offthegrid replied to colorado's topic in Coping with Celiac Disease
In the beginning, when I got accidentally glutened, I tended to say, "Oh, well, what does it matter now that I already ate some gluten" and then go on a little gluten binge. That would leave me feeling sick for days. Stupid! These days I stop eating it and get something else. (One time I realized it after I ate something and tried to throw up but wasn... -
ARCHIVED Blood Testing While Gluten Free
Offthegrid replied to Tranquillity's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My family doctor ordered a blood test that came back positive. The gastro I was referred to ordered a different blood test over a month later that came back negative. The gastro said my family doc's test wasn't used any more. But, bottom line, I get sick when I eat gluten. I did a gluten test, and it's painfully obvious that I am gluten intolerant. And... -
ARCHIVED My Dr Thinks Im Crazy?
Offthegrid replied to horsefarmer4's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My brother's blood test and endoscopy came back "normal." He gets quite sick if he eats gluten or dairy. Tests are not the end-all in this. If you feel better, then stay away from gluten. Who cares about the label? Unless you need it for some other reason, I'd stay gluten-free and see how the neuro symptoms are in 3 to 6 months. Make sure to eliminate... -
ARCHIVED Question About Birth Control
Offthegrid replied to Ashley's topic in Gluten-Free Foods, Products, Shopping & Medications
NO birth control pill that I know of is lactose free. I am casein intolerant, and these pills do not bother me, however. You *could* try the Nuvaring. I don't think there'd be lactose in there. I personally didn't like it, and it is 98% effective as opposed to the pill which is 99% effective when taken properly. I don't know about DeproProvera shots and... -

Nice to meet you. I'm semi-new here but was dx'd in Dec. 2006. Happy New Year! -
I thought I'd *never* be able to give up dairy, but it's actually a lot easier than I thought. I use rice milk for baking or on the rare occassion that I have cereal. I also use coconut milk for baking. I personally like rice milk better than soy milk. Almond milk is good, too, but if you are soy intolerant then some brands use soy lechitin in them. I...

ARCHIVED Elimination Diet Gone Wrong?
Offthegrid replied to misdiagnosed6yrs's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I bake fruit for a yummy dessert. I cut up the fruit into bite-sized pieces and then cover with aluminum foil. Then bake for 10 minutes or so at 325. I add honey and cinnamon. And for your reference, I get symptoms from brown rice and possibly sweet potatoes. -
We want to visit NYC for a weekend soon. How are the prices? I know in New York you pay more than elsewhere, but we also don't want to break the bank.

ARCHIVED New Years Resolutions
Offthegrid replied to blueeyedmanda's topic in Introduce Yourself / Share Stuff
Happy New Year everyone! 1. I want to continue the path to health. Starting the Specific Carbohydrate Diet might be part of that plan. I am having mild symptoms to virtually every starch. 2. Get under 190 pounds. As some may know, my highest weight was 270. I have never been under 190 -- well, at least not since junior high. 3. Start exercising... -

I used this program when I was really overweight and out of shape. I started walking (at 19 minutes/mile ), ended up placing 2nd female and 3rd overall in a competitive walk 5K in just a few months. I then progressed to jogging. But I've been taking some time off over the holidays and since we moved. Open Original Shared Link It sounds like...
