Hi SWW, It should be ok to start the gluten-free diet after the endoscopy. We did have a poster once who said the lab lost her test results and she had to go back on gluten for a new test. Carob is possible substitute if it turns out chocolate is a problem. I think you could test using Hershey's cocoa powder. If you react to that, it is probably a chocolate reaction. A good way to detect food issues is to eat the questionable food in isolation. Don't eat a sausage and decide that soy in it of the many other ingredients is the problem. Instead wait until you have been feeling well 4 or 5 days running. Then eat soy beans by themselves for several days running. Of course you would not want to eat anything else at all...

Sounds great SWW! That's wonderful that the new GI can get you in so quick. The test results may take awhile to get back, like 10 days or so. Hi Bekkaz, Gall bladder issues are somewhat common in people with celiac disease. You can search the forum and find threads from people about them. Hi Bekkaz, The IgE skin prick testing is not going to show an intolerance to foods. Food intolerances are IgG or IgA type reactions instead of IgE reactions. That doesn't mean you can't have all those reactions going on at the same time though, just that you can have one and not have another. So if you have an IgE reaction to a food you shouldn't eat...

If you look at most processed foods you will see many ingredients listed on the nutrition facts panel, many of them not food at all but preservatives, colorings, texture enhancers, etc. So, you get a grocery cart full of those processed foods... -
