HI, If you have a reaction to eating hard cheese like cheddar it is probably a casein issue. Most of the lactose is gone in hard cheeses. You can always take a couple lactaid pills when you eat the cheese just to be sure it is not lactose sugar. That's great that Canada is doing something about revealing the agents used for "fining" the wine. It's about time someone did. There was a story about some French vineyards using cow blood derived proteins to fine their wines a couple years ago. The concern then was possible mad cow disease contamination.

Hi, I think you would be ok with the tin foil on the tray. Scrub the oven inside good first (after unplugging). You might want to take it ouside and open the bottom if it has a removeable one. You may not have had celiac for a long time. It could be your antibodies just started to react. If you don't follow the diet though you will almost certainly develop symptoms of some kind, or other autoimmune diseases. Hi Andy, You can ask the doctor to run the celiac panel on you. They just take a little blood and send it to a lab for the antibody tests. There is a possibility of false negatives so it's a good idea to trial the gluten-free diet for 3 to 6 months regardless of the test results. The next test after the blood antibodies is an endoscopy. Hi Vegas, You got some good advice already. Something else though. Many of us (celiacs) have problems with dairy at first. Sometimes it gets better as the gut heals the villi.
