  8. You probably will need to be on it for a couple weeks to find out if it affects you. Some things don't happen right away but build up over time. But you may be just fine too. We are all individuals and react as individuals. Personally I can't do caffeine of any kind but I never had the GI symptoms from it that you described. So we is different.

  22. That sounds good Anette. Seems like the gluten-free diet has made a big improvement then. That's what I was wondering about, the parathyroid glands. So they are ok. How about the magnesium? That's another possible gotcha. My understanding (which is vague) is you need to have magnesium and potassium as well as calcium in your diet. They all work together...

  24. Cooking once a week is probably a better fit for you. You could get a kitchen timer to set while you are cooking so you don't forget things. Cooking in a pressure cooker or crock pot is easy and there is little chance of it burning. Try searching for snacks on the forum, there are plenty of easy things to make and eat.
  25. I met an African American celiac at one of our local groups meetings a while back. Your doc has bad information. The doctor's diagnosis is helpful for some people to encourage them to stick with the diet. Others don't need that. Right now there is no treatment for celiac disease except the gluten-free diet, so a diagnosis doesn't get you much in the way...
