I use the sorghum/potato starch/tapioca starch mix, too. I love it!!! I rarely ever use rice flour, I found the texture to be unpleasant from day one. I made a devil's food cake a couple of weeks ago that my husband (the gluten eater) swore no one would know was different. (And it makes fabtastic pancakes, too!! I am IgA deficient. For the lab my doctor used, the normal range was somewhere around 88-200 or something like that. My number was 19. So, it was pretty safe to say that my low number obviously had a negative effect on my test results. My GI did a gene test on me to determine what my risk was, and we went from there. For me, the genetic test was very helpful... -

I have to be just as careful with soy as I do gluten. I'm pretty sensitive to small amounts of gluten, and the same with soy. Thankfully, the reaction soy gives me doesn't last nearly as long as a gluten one, but it makes me feel pretty gross for a couple of hours. Although, I am one of those people that can handle soy lecithin, so, go figure So much... -
Have you been gluten-free for a long time? If not, maybe they just don't fully understand. My mom, who is one of my biggest supporters, suggested that I eat the meat off a sandwich early on. YES! You'll find many recipes, but the most important in any of the fried rice ones is to use cold rice. I tried it with just cooked rice the first time I made it because I didn't understand what difference it could make. It was gross, gross, gross!!! I found that most chinese food is not nearly as hard to make as I thought. -

Sorry to hijack, but I just have to ask: Is vaso-vagal syncope a symptom? My mom has this, and has been tested for celiac. Negative so far, but her vitamin D level just came back low (19), despite the fact the she LOVES the sun! Just curious. Thanks -

I'm no genetic expert, and though I've tried to understand it, it's a completely foreign language to me. I am double DQ2 (0201), which puts me in the highest risk group for developing celiac. I can't stand when people put sounds into words that don't belong. My MIL ends the word safe with a t. It drives me nuts!!! I understand that geographic pronunciation varies, but adding a completely new sound to an existing word is a bit of a stretch... I believe this is called an epenthesis. (There, you learned a new word for today!) -

Yeah, remove the center 'vein'. The easiest way to do it is either to pull them off with your hands, or my personal favorite and fastest, is to use one hand to hold the leaf, and wrap the other hand around the bottom of the vein, then run your hand up, removing the leafy part from the tough center stalk. How many biopsies did the doc take? There are 22 ft of small intestine, so it's more likely that he missed it than that you were completely healed (in one month's time). Women are at a higher risk for autoimmune diseases in general. I'm not sure if I read this or not, but my belief is that it's because women tend to have more of the stressors to trigger AI diseases than men. For me personally, childbirth did it.

mmmmm, bacon We use Hormel all natural most of the time. I have not seen butterball brand either, but I can say that as of yet, I have never seen bacon with gluten. -

Z Pizza has gluten free pizza, as well as Uno's. I, personally, am not a big fan of the Uno's pizza, but to each their own. It's worth a try. I do, however, LOVE Z Pizza's, if you happen to have one nearby. -

stickymommy, Were you gluten-free at the time of your testing? If so how long? That can affect the results of your test, as you have to be consuming gluten to have a shot at having accurate test results. And then of course, there are just people who will test negative. If you felt wonderful on the diet, then it seems as though you have found what's ailing...
